Strawberry Lemonade Layer Cake!!

Moist strawberry cake layered with a rich lemonade cream filling.  Introducing summer——on a plate!

INGREDIENTS:

  • One box of strawberry cake mix (plus oil, water and eggs as directed on box)
  • 8oz. Philadelphia Cream Cheese (softened to room temp.)
  • 1 packet (0.23oz.) of Kool-Aid Lemonade
  • Yellow food coloring gel (as desired for color)
  • 2cups Jet-Puffed Marshmallow Creme
  • 8 oz. Cool Whip Topping
  • Fresh strawberries to garnish.

DIRECTIONS:

  • Make cake according to box and bake in 2- 9 inch round cake pans as directed.  Turn finished cakes over on cake racks and allow to cool completely.
  • Cream together cream cheese, lemonade and yellow food coloring until smooth.
  • Mix marshmallow creme in and then mix in Cool Whip until completely smooth.  Refrigerate until cake is cooled and cut.
  • Cut each cake layer in half.
  • Alternating layers of cake with layers of filling, assemble cake.  End with layer of filling.
  • Top with sliced strawberries.
  • Refrigerate and serve chilled.


My thoughts: YUM!!!!!  I’m a little obsessed with the filling I used in those confetti cups a few weeks back.  This lemonade filling is similar- but has more Cool Whip to make it light and fluffy.  I’ve never made a strawberry cake mix before– it is SO GOOD!  I love that this recipe uses a cake mix- it makes it a VERY easy and quick recipe that looks so fancy and fun!  I think you could drizzle some white chocolate over this and make it over-the-top fancy.  I really hope you enjoy this recipe— I’ve gotta have a piece –ready….set….GO!

        I have made this cake now at least 6 times and my family loves it! How can any one say “too many ingredients”. It’s a cake mix! The other ingredients are for the most delicious frosting you have ever tasted. Fix it as the recipe calls for, you will not regret it.

  11. This strawberry lemon cake is good, one word of caution though, resist eating it before it has been chilled if you want the total experience of flavor and texture. I tasted it after 15 minutes in the fridg and it tasted okay, but then again after chilling all night and it was a total different experience ! Enjoy!

    • Thats a great idea if you don’t like that tart lemonade flavor– I actually changed the recipe a little to make a birthday cake and in making the filling more like a frosting I added powdered sugar- which sweetened it up some too- you can find that recipe here. Enjoy!

  23. I would just make one small suggestion for this cake. I found the frosting to be “puckering” tart! I added about 1 cup of powdered sugar and it was perfect! Thanks for sharingand I know my kids are going to go gaga shortly!

  25. This recipe looked absolutely delicious! I wanted to make it, but lack round cake pans, so I made cupcakes! They are super yummy, and I’m anxious to see how they taste chilled. I think the cupcakes worked allright, but the cake would be much better. Very yummy and creative combination. 🙂

  33. OMG!!…If you LOVE lemon, you’ll LOVE the frosting!!
    I made this cake for my Strawberry Fields Forever Bunco and EVERYBODY raved about it….I think I gave out 11 recipes that night (I already had mine)…Since I only had 1 round cake pan, mine was smaller, but still very tasty! Made cupcakes with the rest of the batter and everyone got to take dessert home too!!
    Thanks for sharing such an awesome frosting recipe….I guess I have a sweet tooth for lemon!!

  34. I’m really excited to make this cake. However, I live abroad and couldn’t find “sugar-free” lemonade mix, only pre-mixed dry lemonade, liquid lemon flavoring, and lemon juice.
    Which would be best to use?

    • Hi! I would try the dry lemonade that is already sweetened I think. You might need to experiment with a little less marshmallow fluff and/or powdered sugar just so that the frosting isn’t overpoweringly sweet. Or ask a friend from the states to throw a packet of Kool-Aid in their next letter to you 😉 Good luck! I’d love to know how it works for you!

  36. HAVE MERCY!! My mother-in-law made this for my birthday last night, and actually brought it WITH her to the Cheesecake Factory where we ate dinner! The waiters were bidding on the leftovers b/c they were so jealous! haha This cake is AMAZING! I actually brought the left overs to work, and within 15 minutes, the cake was GONE! Sooooooooooo good!

  38. This is the BEST cake I have ever ate… A Great Big “Thank You” to whom ever created this… It is a huge hit and I have gotten so many “OGM This is soooo good.. Makes me look look like a rock star!…lol I made this cake for a Ladies Day gathering at my chuch and it was served to 150 ladies and they went crazy.. coming back for seconds…..a couple of ladies came into the kitchen and asked if they could get the recipe. after they left I walked out into the auditorium and every ;lady had a pen and paper waiting to write it down..lol
    I have even been asked to make this cake for charity aucitons… what a hit…….

    • I use a large serrated knife. There are layer cutters available- they are like a large wire stretched between two pieces of metal. I have one- but I’m clumsy too and I usually do better with a knife.

  52. I think I am going to try this frosting recipe with my cake recipe for strawberry cake, the cake takes a white cake mix with crushed strawberries and a box of strawberry jello added to the mix and it is very moist! I found this on Pinterest and can’t wait to try it!

  53. So I just made this as cupcakes and the frosting is AMAZING!! I followed the instructions and even let the icing sit in the fridge for several hours, but it never firmed up enough to frost the cupcakes (well, I still frosted them but they don’t look very pretty, lol). I was wondering if I’m doing something wrong or if there’s something I can do to make sure it gets thicker? I used fat free cool whip and 1/3 fat cream cheese, but I wouldn’t think that would matter. Advice would be appreciated because these are delicious!

    • I’m so glad you like frosting. You could try adding a bit of powdered sugar. I’m guessing it is the reduced fat items that are giving it the different consistency. Have you looked at the link I gave to the second time I made this recipe? I needed a thicker frosting to do a birthday cake and I added powdered sugar to the frosting to thicken it up. Check out that link, or try it using the FULL fat (lol) variety of each ingredient. Good luck!!!!

  57. So I used 9 in pans an my cake was maybe 1 inch or so high. I sliced the cake in half but the top layers are thinner.. On both cakes. Should I put the top layers in the middle? Is this dessert better the day after or wld it get soggy if made 2 days ahead?

    • If your layers didn’t come out even I would put the smaller ones in the middle– just to add stability on the top and bottom. My layers are hardly ever even- so no worries!! I think this cake is best fresh. If you are keeping it a couple of days put it in the fridge for sure and don’t top it with fresh strawberries until you are ready to serve it. Good luck and enjoy!!!

    YUMMY!!!! We used Strawberry Soda instead of water which we have always done with strawberry cakes it gives it some more strawberry flavor and we used apple sauce instead of oil.. It was such a YUMMY MOIST cake especially on a hot day!!! We LOVED the icing for it!!! Thank you for this new favorite in our home!!!

    • Hi! I will try to help- Kool Aid is a powdered drink mix. Its a powder that you add to water with sugar and it makes a pitcher of lemonade (or fruit punch, or grape…whatever flavor) I googled Kool-Aid in Australia and found these comparable items (click here).     • Sure! You can add the lemonade packet to my buttercream frosting (click here for recipe) Just add the lemonade a little at a time and taste it until you get the desired flavor. A whole packet is really tart, so you’ll probably want less. If you want to frost this as a layer cake you will want to double the frosting recipe. Hope this works out for you!

  84. What is the best way to turn this into a sheet cake? Also can I substitute something else for the Marshmallow Cream

    • Hi– I’d guess you could just bake the mix in a sheet cake pan– watch your times in the oven as it will take less time to bake. You can make a buttercream frosting and add a touch of the lemonade mix to it. Don’t add the entire packet or it will be too sour without all that sweet marshmallow in it.     • Hi Kali- I have a friend who can’t have cream cheese as well- I just use my buttercream frosting recipe (click here to get it) and added lemonade mix to it- less than a packet because otherwise its too tart. Just add it it a little at a time and taste as you go. Hope this helps!!!

    Really would love to make this but in UK we dont have cool whip, jet puff marshmallow creme or the cool aid ingredient. Not sure what they are to suggest an alternative lol. May just have to hop on a plane and buy tons to bring back

    • Do you have any type of powdered lemon drink mix? You could modify this to a lemonade buttercream (I’ve done this for times that I needed to make lots of batches.)

      Take 2 cups of butter (about 450grams) and add 3 cups of powdered sugar and 2 teaspoons of vanilla. Beat together on high until smooth and creamy- then add either lemon drink mix or even lemon flavoring- add until it has a good flavor but it’s not too tart. You might need to experiment. You might need a little yellow food coloring as well. It’s not quite as good as the original frosting for this cake, but it’s still very yummy!!!!

    Another thing I’d like to mention is that I hate whip cream & whn I ate it, it didn’t taste like whip cream so that that was a major plus for me!

    • I’m so glad you enjoy this recipe! I honestly don’t have any ideas for you other than keeping it chilled up until you serve it. I think it will be fine at room temp and out of the sun. I just recently had a buttercream melt-down at a church picnic…it was a cool day but they placed them directly in the sun and by the time I realized it…liquid frosting 😦 Hope things go well for you!

    • I’m so sorry you didn’t like the tartness of the icing. It’s not nearly as tart as warheads (I can’t stand warheads!) but it is lemon and has a tart lemonade flavor. Adding less lemonade mix and/or a little powdered sugar, you can customize the level of tart to your own liking. Most people love this frosting just as the recipe is written, but if you’re sensitive to tart foods you can certainly alter it.

  117. I just wanted to drop you a quick note and tell you how much my daughter loves this cake. I made it for her birthday last year. She went nuts for it. No nuts in fact, that when she got married last November, this is what she wanted. Since the Bride always gets what she wants, my sister made it for her. Since it was November, it was cool enough out that it worked great. Tomorrow is her birthday again, and of course, she wants this cake. Thanks so much for coming up with this cake.

  125. This was an awesome cake 🙂 I usually don’t use artificial anything anymore, but this looked too good to not try. Of course, it took me half an hour to find Kool-Aid at the grocery! The only things I did differently were to use 8″ cake pans and no food coloring. It still came out looking beautiful, and the filling is like a lemon cheesecake. This is a keeper!
