Graham Crust topped with soft chocolate, mini marshmallows and creamy whipped pudding- all frozen in a cute individual cup! YUM!
I’m back with a recipe using my Chicago Metallic Mini Cheesecake Pan that I just love. My Chocolate Chip Cookie Cheesecakes were my first experiment using this pan and these are my second experiment. I’m just so impressed by how easy it is to make these using this pan- love it! These frozen treats are rich and creamy and oh-so-yummy! I hope you love them as much as I do!
INGREDIENTS:
- 18 graham cracker squares (9 sheets or about 1 1/2 cups)
- 1/3 c. butter
- 1/2 c. milk chocolate chips
- 1/4 c. whipping cream
- 2 c. mini marshmallows
- 1 1/2 c. cold milk
- 1 box (4 servings, 3.9 oz)instant chocolate pudding
- 1 (8 oz) container of Cool Whip (thawed in fridge)
- 1/4 c. mini chocolate chips (as topping)
DIRECTIONS
- Crush graham crackers into fine crumbs.
- Melt butter and add to graham crackers, mixing until well combined to make crust.
- Prepare pan by placing disks into the bottom of each cup.
- Evenly divide crust mixture into all 12 cups, saving about 1/4 cup to use as topping later. (I used a Mini Tart Shaper
to press crumbs firmly into the bottom of each cup).
- Place milk chocolate chips and whipping cream into a small bowl and microwave in 30 second increments, stirring in between, until melted and smooth.
- Spoon chocolate into a zip top bag, cut a tip off and evenly pipe chocolate into the center of each cup, on top of the crust.
- Divide Marshmallows among cups.
- Mix cold milk with pudding on medium speed for 2 minutes. Fold in 1/2 of the Cool Whip container (the rest will be used as topping).
- Spoon filling into a large zip top bag (and ZIP it or you might have a mess!) Clip a corner off and pipe pudding into each cup evenly. Try to pipe it in between the marshmallows so that the whole cup is filled. I did have a little left over (which was really tasty straight out of the bag!)
- Use a knife to smooth the tops level with the top of the pan.
- Freeze for at least a couple of hours.
- Allow the pan to warm just a bit before popping each dessert cup out. Poke a finger up through the hole in the bottom of the pan and grab that s’mores cup by its crust. Remove the disk from the bottom and you are ready to add topping.
- For topping, I just piped a little bit of the left over Cool Whip on each dessert using a decorating tip. Then I sprinkled the remaining crust and mini chocolate chips on top.
- Serve cold right away– or put them in a sealed container and freeze until you are ready to serve.
My thoughts: I love these so much. They are ok at room temperature, but serve them frozen and they are amazing! The pudding stays so creamy and that chocolate layer in the middle…. it is a miracle I didn’t just sit down and eat them all. Seriously. Enjoy!!! -r

S’mores are always so perfect on a summer night, by the campfire! The only problem with these would be KEEPING them cold from the freezer to the fireside — I guess that’s what coolers filled with ice are for. 😉

I made these for a Labor Day party and toasted the mini marshmallows with a torch before putting in the cups. They were a hit!

These look AMAZING. So does the mini cheesecake pan have a hole in the bottom of each cup? What kind of disks are you talking about? Are those to cover the holes while freezing and to make them easier to get out?
Thanks! Yes, each cup has a hole in the bottom that you cover with a disk before putting your crust in (like the bottom of a springform pan). Then you pop the dessert out by pushing up on the disk through the bottom of the hole. There isn’t anything that comes with the pan to cover it in the freezer- you just need some Saran or foil wrap.

Yes– if you look above at previous comments you can see how others used muffin tins to make this– I think it works just fine! 🙂
If I dont have one of those pans can I use maybe silicone cups?
You could try it…? My guess is that they would be hard to pop out?….but maybe not? Possibly tweaking the recipe to be made in a pan and cut into squares would work for you?
What about using cupcake liners?
Yes– you can use cupcake liners! I know there are a ton of comments to go through on this post, but there are some comments from people who did that and had it work just great! 🙂
I used a regular muffin tin and sprayed it with cooking spray and after freezing they popped out perfectly using a butter knife to go around the edges so really no need for the fancy pan.

If you click on those words it will take you to Amazon- to the exact item (that is where I got mine). I also saw them at a specialty baking store in my city- but they were more expensive. I was just curious how do you think it would turn out if you made a pie out of it instead of individual cups?
I think it would be super yummy! You could even buy a ready-made graham crust and save time! You might have to adjust amounts of everything else a little- or even make 2 pies. I’m not sure how far the fillings would go. If you try it please tell us!!!

Have you used this with marshmallow fluff? I think it would be the same texture as the rest of it instead of the marshmallows.
I havent tried fluff- I thought about it, but I was afraid it might be too sticky and make the cups difficult to pop out….? If you try it, let us know how it works!

Hi- and welcome 🙂 Glad you found us! The pan I used is a Chicago metallic mini-cheesecake pan (you can click on the link in the recipe for more specifics). It comes with small disks that fit into the bottom of each cup to make removal easier.
I made these and turned them into frozen s’mores cupcakes by just using muffin tins. It worked perfectly and they were fantastic.

I found this recipe on Pinterest and I made it using a store-bought graham cracker crust. I also used semi-sweet chocolate chips instead of milk chocolate. I think it will be a hit at our summer get-together. Thanks for the wonderful idea! It has so many possible variations!

Hi! I stumbled upon your site yesterday and made these for a dinner party last night and they were amazing! I *love* s’mores 🙂 I don’t have the Chicago Metallic Mini Cheesecake Pan (though it’s now on my wish list!), so I just used a standard muffin/cupcake pan. It worked great. I didn’t use any cupcake liners, but getting them out of the pan was fairly easy. I took the tray out of the freezer about 3-5 minutes before I wanted to serve them and just slid a butter knife between the side of the dessert & the pan and gently leaned the knife towards the pan. The dessert “popped” out super easy, then I plated it and topped with the leftover coolwhip. I ended up with some extra of each of the parts so I made one “big” s’more with the leftovers in a round ceramic dish. That might be my breakfast – don’t tell 🙂

These were a huge hit with the family on Father’s Day!! So easy and yummy. I used a chocolate covered peanut butter cookie for the bottom crust instead of the graham crackers, other than that I followed the recipe to the tee!! Thanks for the other recipe 😉

I made these yesterday for Father’s Day and they were a huge hit! I made a few changes and they still came out fantastic! Instead of regular graham crackers, I used chocolate ones…after freezing and slightly thawing it was almost brownie-like on the bottom! YUM! I also substituted marshmallow fluff for the mini marshmallows and loved the consistency along with the other textures. As many of the others, I too used a muffin pan with cupcake liners and had no problems at all with getting these little delights out of the pan. My 2 year old daughter was able to help with assembly and we had a blast making this! Thank you for sharing and thanks to everyone else that posted helpful tips after the original post! 🙂

these were fun to make and tasted delicious, but the marshmallows froze making them very awkward to eat, with a fork anyway. next time i’d make some kind of a marshmallow sauce to top them with just before eating.

These are fabulous!! Only had semi -sweet chocolate chips and only had a plain ole cupcake pan and I sprayed it with cooking spray and the were soo easy to pop out! Be sure to let them freeze for at least two hours before devouring 🙂 Thanks for the recipe

I made it in a massive pan (think 24″ x 36″) to serve at our family reunion. Even after soaking the base in hot water, we had a REALLY hard time cutting through the marshmallow and chocolate layers and I ended up covered in pudding! It was also difficult to eat because the layers separated. No one could eat it with a fork, but it was too messy for hands. What a mess!! You should have seen the kids! haha The individual cups would be much more doable….especially mini cups fot the smallest kids, but a heckuva lot more work for that many people. If I do it in a pan again, I’ll play with the consistency of the chocolate & mallow layers. Maybe reduce the thickness of the pudding layer and do marshmallow fluff with cream cheese layer. Just thinking… Anyway, everyone loved it and thought it was a GREAT idea especially since our area is under fire restrictions and the kids had been sad they couldn’t have S’mores. Thanks for the idea! With a little tweaking, I’ll try it to feed a crowd again and my own kids are looking forward to another attempt in cups! 🙂

What is the disk you put in the bottom of each cup ?
The disks come with the mini cheesecake pan. The pan is like a muffin tin, but there’s a hole in the bottom of each cup. You put the disk in to cover the hole, make your dessert and then to remove the dessert you push up through the hole and it pushes the dessert out. The disk slides off the bottom of the crust and you just wash it with the pan. It’s pretty cool actually- I love mine!

Just made these for Easter for the first time and they were wonderful! Very light and delicious. Did not take long to make and what a hit! I used a k-cup coffee pod to push the crusts down and worked fine. Will definitely be one of my go to desserts from now on. Would like more ideas to use the pans.

Hi, made these and they came out great. Only problem was that the center chocolate part was hard, is it supposed to be soft and creamy as well?
They are a little harder when frozen solid. Let them warm up just a little bit before eating them- the chocolate layer should be like fudge.

Thank you for sharing such a great recipe. I’ve been wanting to make this for a while now, seeing how tantalizing they look in the pictures. So I finally decided to make these for Thanksgiving and everyone loved them! They tasted even better than I expected, I don’t know how you came up with such a great concept but I can’t wait to try the other recipes now.
I used a muffin tin with cupcake liners and it was easy to work with. Still debating if getting the cheesecake tin would be worth it, considering how little I bake. But I’d want to get it just for the sake of working with a new gadget :).

i know this is an old post, but I’m hoping you can help, as I’m trying to make these right now! Lol
Do I mix the pudding mix with the milk or do I prepare the pudding first and then mix with the milk? Thanks!
Oh goodness. I was out of town all day yesterday in meetings. Sorry!!! The milk is added to the pudding and mixed. Just that one addition of milk. I hope they turned out for you- these are one of my favorites!
