Creepy Earthworm Cupcakes

Well, it’s October, and that means it is time for creatively creepy edibles!  Last year I had SO much fun with my Broken Glass Cupcakes and my Toxic Slime Cupcakes!  Oh my goodness, I love both of those recipes so much that it was hard to think of anything that fun and creepy for this year!!!

I loved the idea of worm-filled cupcakes and decided that gummy worms are way too cheery, with all their fun bright colors.  I wanted WORMS- big fat earthworms- in my cupcakes.

I’m not sure why these are not readily available for purchase in the candy aisle of my grocery store, but fortunately I found a TON of recipes for make-your-own gummy earthworms online.  I read about 10 recipes (they were all very similar) and gave it a shot.

Edible gummy earthwormlove them!!!!  I had a hard time biting into one to try out the flavor because they were so realistic!  These are really not very hard to make, and I can think of a TON of desserts these would be fun to serve with.  These are even Father’s Day friendly (I realized this when the men who were eating the cupcakes started talking about fishing with earthworms…) or maybe you could “dress up” my apple cupcakes from last week with a few worms! 🙂

Here’s how to make these fun little desserts: (printable recipe)

INGREDIENTS:

  • 1 boxed chocolate cake mix (plus water, oil and eggs to make according to package)
  • 2 sticks (1 cup) of butter (softened)
  • 1 1/2 cups of powdered sugar
  • 2 tablespoons of vanilla
  • Green sugar crystals
  • About 15 Oreo cookies crushed into crumbs
  • brown and green food color gels
  • 1 (6 oz) packet of raspberry jello
  • 4 (1/2 oz) packets of unflavored gelatin
  • 1/2 cup heavy cream
  • 3 cups boiling water

DIRECTIONS:

WORMS: (make the day before)

  • Take about 40-60 bendable plastic straws and pull them out to full length.
  • Place them each in a tall glass with the bendable part down.
  • Put a rubber band around the top to hold them together and upright.
  • Mix jello and unflavored gelatin together in a mixing bowl and add boiling water.
  • Stir until dissolved and refrigerate for about 20 minutes until cooled.
  • Place cream and a little bit of green food coloring in a separate bowl and mix well.
  • Mix cream with gelatin mixture until well combined.
  • Gently pour the mixture over the tops of the straws until they, and the glass are full.
  • Refrigerate overnight.
  • Place a sheet of parchment paper on a cookie sheet, and lightly spray it with cooking spray.
  • Run warm water over the glass until you can pull the entire jello mold out (straws and all!)
  • Gently pull apart straws and use a rolling pin to roll each little worm out.
  • Place each worm on the parchment paper until all of them have been removed from the straws.
  • Keep covered and refrigerated until use.

CUPCAKES:

  • Make cake mix according to box and divide evenly among 24 cupcake liners placed in tins.
  • Bake according to package, and allow them to cool.
  • Make frosting by placing butter, powdered sugar and vanilla in a large mixing bowl and beating it on high for about 3 minutes, until light and fluffy.
  • Color frosting using a combination of green and brown to make a clay-like color for inside the cupcakes
  • Use a cupcake corer or a small knife to cut a core out of each cupcake.
  • Pour green sugar into a small bowl.
  • Use a knife to spread a thin layer of frosting on the top of each cupcake, around the hole cut out by the corer.
  • Turn the cupcake top down into the green sugar, coating the frosting entirely.
  • Spoon or pipe a small amount of frosting into each cored cupcake.
  • Set a worm into the frosting, letting it “stick” and be held in place.
  • Spoon Oreo crumbs over the worm and frosting, filling up the rest of the hole in the cupcake.
  • Keep refrigerated until serving.
  • Enjoy!!

My thoughts:  These crack me up. Everyone loves them, but kids are SO suspicious that you might have used real worms!  One of my friends gave some to her grandkids and the oldest just sat and stared at hers and finally declared, “I saw one move!”  They are disturbingly life-like.  These are great covered in the fridge for a day, but at room temperature the worms start to dry out after a few hours. Chocolate Fudge Cut-Out Cookies!!

Chocolate cut out cookies!

The rich dark cocoa flavor of these cut-out cookies sets them apart as one of the yummiest cookies I’ve ever had!!

This weekend was a special treat — my good friend (and fellow baker/blogger) Megan came to visit me from Pennsylvania.  We met in 2010 on a mission trip to Russia and we have been best of friends ever since.  Russia with Megan

Megan and her mom and sisters create the most beautiful and unique cakes I’ve ever seen, and they blog about life and caking on their blog Happily Ever Cakes.  Megan has such great decorating ideas and she promised to share some of her recipes and techniques with me this weekend.

We spent hours in the kitchen (often accompanied with friends who wanted to help and learn too!)  It was so much fun, and I’m so excited to share with you all the things I learned!!

I wasn’t sure which project to tell you about first, so I decided to begin by dedicating this post to some truly yummy chocolate cut-out cookies.

Megan wanted to prove to me that royal icing isn’t always a tedious mess…. but honestly, royal icing is a tedious mess no matter what your technique or recipe (in my humble opinion!)

They are cute.  Super super cute cookies.  But  24 cookies took three of us about 3 hours….which means if I’d done them alone they would have taken me 9 hours….yeah.

So there are a lot of pictures because this will likely never happen again.

We even put some of them on lollipop sticks which was a really fun way to display them.

When Megan suggested a royal icing project I immediately thought of this great family recipe.  I’d never made them as a cut-out cookie or attempted to bake them with sticks inserted, but I thought it would be worth experimenting with since they taste SO good.  The verdict??  These dense chocolate cookies are easy to cut into shapes and worked great with or without lollipop sticks.  The dark cookie really made all the fun colors in our frosting stand out too!

Ready for the recipe?   (printer friendly recipe)

INGREDIENTS: (makes 24 large cookies)

  • 2 sticks (1 cup) butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2/3 cup unsweetened cocoa powder
  • 3 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • Add butter, sugar, eggs, vanilla and cocoa together in  large mixing bowl.
  • Blend on medium speed with a mixer until smooth.
  • Gradually add dry ingredients and mix until smooth (use clean hands at the end, to knead into a soft ball of dough)
  • Wrap in plastic and chill for at least one hour.
  • Allow cookie dough to soften a little at room temperature
  • Roll out cookie dough on floured counter.  If you are adding sticks, you will want to roll the cookies out thick (about 1/3″)
  • Cut into desired shapes and place on a parchment-lined baking sheet.  Insert lollipop sticks, if desired, by gently pushing stick into cookie about 1- 1 1/2 inches. You will need to arrange cookies to fit with sticks on top of cookie sheet.
  • Bake for 8 to 11 minutes until the edges are firm.
  • Gently slide parchment paper off of cookie sheet and onto a flat surface.  Cool completely before moving- this allows the cookie to “set” around the stick.  Even when it is cooled, handle it with care.  It takes a little time for the cookie to harden around the stick.
  • Frost as desired.  A simple powdered sugar glaze will be delicious on these, or if you want to get fancy (and have a nice hard surface on your cookie) click here for Megan’s royal icing recipe and instructions for use.

Fun chocolate cookie cut-outsMy thoughts:  These cookies are SO yummy.  I’m not usually a huge fan of cut-out cookies, but these are truly worth the effort of rolling out and cutting!  I like them thick- even if you don’t add sticks to make them into pops.  They are so much fun all set up in a vase~ what a perfect way to serve cookies at a party!  You could wrap these in cello bags and tie them with cute ribbons too- a perfect favor for a wedding or shower!  Hope you have fun with these treats!!!   Enjoy!! ~r

Tie-Dye Cake with Blue Raspberry Frosting

Swirls of colors plus a blue raspberry frosting make everyone smile when they see this cake!

This recipe is dedicated to my nephew Marshal, who informed me a few weeks ago that today, October 10, 2012 is an important day:  it marks the 2 year anniversary of the release of  “My Little Pony: Friendship is Magic” TV show.

Confused?  I was!  Apparently this show, targeted toward young girls, has gained a cult following among teenage boys– they call themselves “Bronies”…I guess Bro+ponies= Bronies.  Um…yeah. Learned all of that on Wikipedia… SO Marshal was telling me that he and his friends wanted to make a rainbow cake (for the pony “Rainbow Dash”, of course) to celebrate the day.  The thought of making 6 layers of cake in different colors sounded exhausting, so instead I made 6 colors and just dumped them on top of each other in the same pan.  I love how it turned out!

Here’s how it was made:

INGREDIENTS: (printer friendly recipe)

  • One boxed white cake mix, plus eggs, water and oil to make it according to the box.
  • Icing colors in Purple, Blue, Green, Red, Orange and Yellow.
  • One stick (4 oz.) salted butter at room temp.
  • One stick (4 oz.) unsalted butter at room temp.
  • 1 1/2 cups powdered sugar
  • 2 teaspoons raspberry flavoring

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • Make cake mix according to box (or make your own favorite white cake recipe!)
  • Grease 2- 9 inch cake pans and place a circle of parchment paper in the bottom of each.
  • Evenly divide batter into 6 bowls (about 1 cup of batter in each)
  • Add icing color gels to color each bowl of batter.
  • Pour 1/2 of the purple batter in the center of one pan.
  • Pour 1/2 of the blue batter into the center of the purple batter (adding the blue will push the purple toward the edges).
  • Continue to pour 1/2 of each color batter into the center using green, yellow, orange and red in that order.
  • In second pan do the same but in the reverse order, starting with the red 1st.
  • Bake at 350 according to package (mine took about 25 minutes)
  • Remove from oven and cool.  Tip over onto a wire cake rack to finish cooling.
  • Make frosting by adding butters, powdered sugar, raspberry flavor and a little blue icing gel color together and beating on high until light and fluffy.
  • Level off the tops of each cake layer and place one layer, cut side up on a serving plate.  Frost the top of this layer.
  • Place the second layer, cut side down on top and frost entire cake.
  • Sprinkle with rainbow sugar or decorate as desired.

ENJOY!!!

My thoughts:  Although this cake was created with Marshal’s celebration in mind, it would be such a fun and colorful addition to any party!!!  Lets hear it for tie-dye rainbow cake!!!!!  Thanks for the idea Marshal!!!

Coconut Lemon Drop Cookies


These crunchy little cookies are full of sweet coconut and tart lemon drop flavor- yum!!!

INGREDIENTS:

  • 12 T. (1 and 1/2 sticks) butter -room temp.
  • 1/2 c. sugar
  • 1 t. vanilla extract
  • 6 t. lemon juice
  • 1 1/2 c. flour
  • 1 c. finely crushed cornflakes
  • yellow food coloring (to desired shade)
  • 1 c. shredded coconut
  • 1/2 c. Wilton’s candy melt in white chocolate
  • 15 lemon drops (or other lemon-flavored hard candy)

DIRECTIONS:

  • Heat oven to 250 degrees.
  • Place 1 c. shredded coconut on a small cookie sheet and place in oven for 10-15 minutes until it is dried and crunchy— not browned– just dry and crunchy.  Remove from oven and cool.
  • When coconut is cool, use your hands to crush it up  into smaller pieces, set aside.
  • Heat oven to 350 degrees.
  • Line two cookie sheets with parchment paper.
  • Cream sugar and butter together, add vanilla.
  • Add lemon juice, food coloring, flour and coconut, beating until well combined.
  • Add crushed cornflakes and mix (use clean hands if you want!) until well combined.
  • Use a small cookie scoop to spoon batter onto parchment paper. Press tops down a little to make the cookie flat on top.
  • Bake at 350 degrees for 12-16 minutes.
  • Allow cookies to cool.
  • Crush candies in a small zip-top bag using a hammer.
  • Melt Wilton’s candy melts in a small bowl in the microwave in 30 second increments until smooth and completely melted.
  • Spoon melted white chocolate into a zip top bag, clip a corner off and drizzle over each cookie.
  • Before chocolate hardens, sprinkle generously with crushed candy.  Allow chocolate to harden and ENJOY!!

My thoughts:  These cookies were really a stretch as far as inventing goes– I was really unsure if they would be any good at all.  They are SO yummy- I’ve had 4 now…(shhh….) I took them to a Labor Day picnic and everyone loved them– especially the “crunchiness”.  Well, everyone but my Uncle Keith who hates coconut….who hates coconut?  Just seems wrong.  Anyway– if you like lemon and candy and coconut and cookies—you are gonna love these little treats!!!!  Enjoy!  -r
