A bowl of eyeball cookies!

These delicious little cookies are the perfect creepy treat for October!

Ah…these were fun to make and really fun to share! They definitely gave kids a pause. I heard one little girl say, “Mom- I’m a little scared of those cookies because they are looking at me!”

Love it.

Ok- so these don’t involve baking. You could certainly bake cookies and decorate them this way- but if you are like me and you needed a recipe at 10pm the night before- Nilla Wafers and Ritz crackers will do just fine (and taste GREAT!)

Here is how we put them together (and there is no printable recipe- because there isn’t really a recipe for these- just a technique!)

INGREDIENTS:

  • Nilla Wafers (and some mini-Nilla wafers, if you’ve got them!)
  • Ritz crackers
  • Wilton Candy melts in green, blue, white and black
  • Candy eyes (although these aren’t technically necessary, since you have the white and black candy melts).

DIRECTIONS:

  • Melt candy melts, one color at a time, in the microwave in 30 second increments, stirring in between until melted and smooth.
  • Spoon into a zip-top bag and cut a corner off. (Or use a squeeze bottle fitted with a decorating tip if you have one)
  • Use green to outline the edges of the Ritz crackers and then fill in. Use white to outline and fill in the tops of the Nilla wafers.

  • Draw eyes of different sizes on the Ritz crackers, using a toothpick to make the tiny pupils in black (use candy eyes if you have them, for one size) I even added some little green blotches on these just to make them more weird.
  • Use blue and black candy melts to make eyes on the Nilla Wafers.

  • Let these harden and then serve them up in a fun bowl- or maybe put them in little cello bags and tie them with ribbon!
  • Enjoy!

My thoughts: Aren’t they fun? You don’t have to be fussy about making them perfect- the crazier the better! Those Ritz crackers are especially yummy with the sweet candy on top. Yum. Enjoy these quick and easy treats!!!  ~r

Confetti Sugar Cookies!

Confetti cookies!What better way to celebrate the New Year than with confetti? Especially the edible kind that pours out of the center of a delicious sugar cookie? So. Much. Fun!!!!

These sugar cookies are a fun and festive surprise that are sure to make your guests smile as you ring in 2015! These are easy to put together and a creative addition to any celebration!

Here’s how we made these fun treats: (printable recipe)

INGREDIENTS: (makes about 24 cookies)

  • 2 sticks (1 cup) unsalted butter (softened)
  • 1 1/2 cups of granulated sugar
  • 2 eggs
  • 1 teaspoon of vanilla
  • 1 teaspoon of butter flavoring
  • 3 cups of flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon cinnamon
  • 2 bags of Wilton Candy Melts in any colors you wish to use
  • 2-3 cups of small confetti sprinkles

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • In a large mixing bowl, cream together butter and sugar until smooth.
  • Add eggs, vanilla and butter flavoring and mix well.
  • Add all dry ingredients and mix until able to knead into a firm ball of dough (add additional flour if necessary).
  • Roll out on a floured counter with a flour coated rolling pin to desired thickness.
  • Cut about 72 circles using a cookie cutter (I used a 2″ cookie cutter)
  • Use a slightly smaller circle cutter to cut out a center circle from 24 of these cookies.
  • Place cookies on cookie sheets covered in parchment paper and bake at 350F degrees for 8 to 10 minutes.
  • Slide baked cookies and parchment paper together onto a counter to cool completely.

Confetti Cookies!

  • Melt about 1/4 of a cup of candy melts (I used white, but you can use whatever colors you’ve chosen) in the microwave for 30 second increments, stirring between until completely melted and smooth. Place the melted candy in a small zip top bag and cut one corner off.
  • Pipe around the bottom of the “ring” cookie and place it on a “solid” cookie. 
  • Fill the open center of the “ring” cookie with confetti sprinkles.
  • Pipe melted candy melts around the top of the “ring” cookie and set another “solid” cookie on top.
  • Allow these cookies to harden completely (I placed mine in the fridge for about 20 minutes).

  • Melt remaining candy melts in the microwave in 30 second increments until completely melted and smooth.
  • Dip cookie into melted candy and cover completely, using a spoon. Use a fork to lift out and tap against side of bowl until excess melted candy falls away. Slide bottom of cookie against side of bowl and gently slide onto parchment paper to harden.
  • Immediately sprinkle with confetti or other decorations before candy melts harden.

    • Package up in a tightly sealed container or in cello bags.
    • Wait until midnight and celebrate with the BEST  confetti ever– the edible kind!!!

My thoughts: these look complicated to make, but they really went together quickly and it was so fun to see people’s surprise at all that confetti inside. I did warn them to take that 1st bite over a plate- haha- I guess that just depends on how messy you want your floors during that NYE party!  Enjoy!!!

12/19/14: On a personal note: I blog my recipes ahead, and I prepared this post (and scheduled it to publish) several weeks ago. Since that time, my mom has been diagnosed with very, very aggressive cancer and admitted to Hospice. I just wanted to ask for all of you who have followed this little blog and enjoyed these recipes to keep our family in your prayers as we say good bye to her during this Christmas and New Year season. Because of this, and because I am in the process of starting a new job, I will be taking a few weeks off from publishing recipes here. Oreo Flower Pops!

Oreo Flower Pops!These cheery little Oreo Pops are sure to brighten anyone’s day, and they are SO easy to put together!

I know…another Oreo Pop!!!  I can’t stop sharing them with you– they are just so fun!  I have another one in the works for a few weeks from now too!  I’m in love with these fun little treats!

If you’ve been a fan of Easybaked for any time at all, you have seen (and maybe tried!) lots of these little bits of happiness on a stick, but if you are new here, let me share with you a pdf that will help you make the perfect Oreo Pop:  How to make an Oreo Pop.

Flower Oreo Pop

Here (once again!) is the recipe: (printable version)

INGREDIENTS:

  • One box of Double Stuff Oreos
  • Two bags of Wilton’s candy melts in any colors you choose
  • M&Ms (I used the pastel kind- but any will work!)
  • Mini chewy Sweet Tarts (or any other small candy for the center of the flower)
  • 24 lollipop sticks

DIRECTIONS: 

  • Carefully twist apart all of the Oreo cookies
  • Using one of the lollipop sticks, make an indentation in the white filling of each cookie.
  • Melt the Candy Melts in the microwave in 30 second increments, stirring until completely melted and smooth.
  • Dip the end of one stick into the melted Candy Melts, drizzle a little in the center of the white cookie filling and then gently press it into the indentation made.
  • Place the top of the cookie back on and allow Candy Melts to harden (10 minutes or so), cementing the cookie back together with a stick inside.
  • Holding the stick, lower the entire Oreo into the bowl of melted Candy Melts, spooning it over the top and sides to cover it completely.
  • Allow the excess  to drain off and gently place covered Oreo on a piece of parchment paper.
  • Before the Candy Melts harden, place M&Ms and Sweet Tarts on top in a flower pattern.
  • Allow Oreo Pop to harden completely
  • Cover in a treat bag and tie with a ribbon
  • Enjoy!!

Fudge Stripe Cookie Cups

Fudge Stripe Cookie cups

These dark chocolate cups have a surprise inside: a crunchy little fudge stripe cookie!

I just love those fudge stripe cookies.  Even when I am trying to watch my calorie intake, I get the little 100 calorie packs as a treat.  They are just soooo yummy!  Those little mini cookies were the inspiration for these cookie cups.  They fit perfectly inside, and make for a wonderful surprise when you bite into one!

So much fun!  Best use of diet food  EVER!

Here’s how we made them: (for a printable recipe click here)

INGREDIENTS: (makes 44-48 mini cookie cups)

  • 1 stick (1/2 cup) butter, softened
  • 3/4 cup of granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/3 cup of unsweetened cocoa powder
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • One box of Keebler Mini Fudge Stripe cookies
  • One tub of vanilla frosting.
  • A little bit of melted chocolate to drizzle on top, if desired

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • Make cookies by combining butter, sugar, egg, vanilla and cocoa powder and beating until completely combined.
  • Add other dry ingredients gradually, mixing with beaters until too heavy to beat. Use clean hands to knead dough into a soft ball.
  • Use a small cookie scoop (I used a scoop that holds 1/2 Tablespoon of batter) to portion out your dough into mini muffin tins that have been sprayed with non-stick spray.
  • Use a tart shaper or a wooden spoon to press the dough into a cup shape (really, the tart shaper works best for this and you will use it again- I use mine all the time!)

Making cookie cups

  • Bake at 350F degrees for 7 to 8 minutes and remove from oven.
  • Press centers in a second time with the tart shaper and allow them to cool for just a couple of minutes.
  • Use a small paring knife to pop each cup out and allow them to cool completely on the counter.
  • Place one mini Fudge Stripe Cookie to each cup
  • Spoon frosting into a small bowl and microwave for 20-30 seconds, until soft.  Stir until smooth.
  • Spoon frosting into a sturdy zip-top bag and clip a corner off.  Pipe frosting over cookie to the top of each cup

Fudge Stripe Cookie Cups!

  • Pipe chocolate stripes on top to decorate.
  • Allow frosting to firm up.
  • Enjoy!

Mini S’mores Pies

S'mores Pie!!!Rich dark chocolate pie in a graham crust, topped with marshmallow meringue.  S’mores with a new, fun look!

Everyone loves these flavors together.

It just occurred to me that someone might hate s’mores.

Ok, well I don’t personally know anyone who doesn’t just adore this flavor combination.  I LOVE them, and crave them, and sometimes cheat by making them in the microwave when it’s snowing and a campfire is out of the question!

These little pies capture the flavor of a s’more, but add a rich chocolate flavor that is incredibly delicious, and can’t be had with just 2 squares of Hershey’s chocolate.  Or four squares… sometimes I use four.  Don’t tell.

S'mores Pie!!!

Here’s how these simple little treats are made: (printable version)

INGREDIENTS: (makes 12 mini pies)

  • 12 pre-made mini graham cracker crusts.
  • 1 cup of Ghirardelli Bittersweet chocolate chips (melted)
  • 1 cup of Ghirardelli Semi-sweet chocolate chips (melted)
  • 8 eggs (divided)
  • 5 Tablespoons of heavy whipping cream
  • 2 Tablespoons of vanilla
  • 2 cups of granulated sugar
  • 1/4 teaspoon of cream of tartar

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • Divide eggs, keeping ALL of the 8 egg whites and only 5 of the yolks.
  • Place the melted chocolate, 5 egg YOLKS, whipping cream and vanilla in a large mixing bowl and stir until well combined.
  • Evenly divide among all twelve mini pie crusts.
  • Bake (I put them all on a baking sheet) for 14-16 minutes, until the middle of each pie is set.
  • Make meringue while these bake, by adding all of the 8 egg WHITES, sugar and cream of tartar together in a medium heat-proof bowl that will sit on the top of a sauce pan of boiling water without touching the water.  (I had to experiment a bit to find a good fit.)
  • Bring water to a boil in the saucepan and set the bowl on top.
  • Whisk ingredients together for about 3-4 minutes.  Sugar will be dissolved and egg whites should be heated to 145F degrees.
  • Remove bowl from top of sauce pan and beat on low until the mixture thickens a little, then beat on high for about 10 minutes.  The meringue will become the most beautiful, white, glossy mixture.  It should form stiff peaks before you stop beating it.
  • Spoon all that wonderful marshmallow yumminess into a bag fitted with a decorating tip.
  • Once mini pies are removed from the oven, let them cool completely.
  • Pipe marshmallow meringue on the top of each pie and toast it with a kitchen torch.
  • Add a few graham cracker crumbs if you want, and enjoy!!!!


S'mores Pies!!!!My thoughts:  These are delicious. You can see from my pictures that I didn’t beat my meringue as long as I should have.  The are not the tall swirls of happiness I wanted them to be….  it was only my second time making meringue though, so I guess I won’t beat myself up too much.  My 1st time was perfect.  If you want to see how fluffy it SHOULD be, click here.  I LOVE this meringue.  When you read the instructions you might think it is too hard to make- but once you do it, you will realize that it isn’t hard at all.  Just a lot of time with a mixer in your hands.  I hope you get a chance to try this recipe out!  Enjoy! ~r

Hamburger Cookies!

Hamburger Cookie!These cute little burgers are a fun April Fools treat.  They look like a little burger, but they taste like a yummy peppermint cookie!

I’ve been making these since I was a little girl.  They are so easy to put together and so fun to share with people!  Both kids and adults will smile when they see these on the table or tucked into a lunch box!

Hamburger Cookies!!Want to know how to make these cute little treats?  Here’s the recipe: (printable version)

INGREDIENTS:

  • 1 box of Nilla Wafers
  • 1 bag of York Peppermint Patties
  • 1/3 cup each of red, green and yellow Wilton’s candy melts.

DIRECTIONS:

  • Preheat the oven to 350F degrees
  • Unwrap all of your peppermint patties. (Usually there are 24-26 of them per bag)
  • Count out twice that many Nilla Wafers (choose the pretty and unbroken ones!)
  • Place half of the Nilla Wafers, flat side up, on a cookie sheet.
  • Set one peppermint patty on each Nilla wafer.
  • Carefully place the cookie sheet in the oven for 1 to 2 minutes, just long enough to melt the chocolate coating on the peppermint patty. (This will melt the bottom of the peppermint to the Nilla wafer).
  • In 3 small bowls, melt the Candy Melts in the microwave in 30 second increments, stirring between until completely melted and smooth.
  • Place each of the 3 melted colors in separate zip-top bags.
  • Clip one corner and drizzle one color across tops of each peppermint.  Repeat this with other two colors.

Hamburger Cookies!!!

  • Gently press a Nilla wafer, flat side down, on top of the drizzled candy melts. Press to gently squeeze the “ketchup, lettuce and cheese” colors out at the edge of the cookie “bun”.
  • Allow cookies to harden completely.

I like to serve them with those little mini potato sticks.  I wanted to take some pictures with some, but I couldn’t find any at the grocery store here.  Trust me, the salty and sweet is a yummy combination.

Hamburger Cookies!!!!My thoughts:  My mom was downright mischievous on April Fools Day.  I had green milk and no meat on my sandwich and holes poked in my apple.  This is a fun “eating hamburgers for dessert” prank that will make your family smile.  Plus they are SO yummy!  Enjoy!!! ~r

White Chocolate Strawberry Cookies

White Chocolate Strawberry Cookies!!Just in time for Valentines Day- these pretty pink strawberry cookies are made using a cake mix and full of creamy white chocolate chips.

These are such easy and pretty little cookies!  They are chewy and moist and flavorful- I really think you are going to love them!

Here’s the recipe: (printable version)

INGREDIENTS:

  • 1 box of Duncan Hines Strawberry cake mix
  • 1/3c. margarine (soft, at room temperature)
  • 1/2 box (4 ounces) of Philadelphia cream cheese (soft, at room temperature)
  • 1 bag of white chocolate chips
  • 1 egg

DIRECTIONS:

  • Preheat oven to 350 degrees.
  • Cover 2 cookies sheets with parchment paper.
  • Cream together margarine and cream cheese until smooth.
  • Add egg, stirring until smooth.
  • Melt 1/3 cup of white chocolate chips and stir in.
  • Add cake mix  and stir until combined.  Use clean hands to knead mixture into a heavy cookie dough.
  • Add remaining white chocolate chips and combine well.
  • Make evenly- sized small balls of dough using a spoon or a cookie scoop.

Strawberry Cookies!!!

  • Place on a parchment paper- covered cookie sheet, leaving room for cookies to spread as they bake.
  • Bake at 350 degrees for 12-14 minutes.
  • Remove from oven, slide parchment paper (cookies and all!) onto a clean counter, and cool.

My thoughts:  I really love these cookies.  The white chocolate chips are SO yummy.  I like them best warm out of the oven and all gooey!  These are an easy recipe to make with kids, and a perfect treat to give for Valentines Day!

Frog Prince Oreos

Frog Oreos!!

These adorable edible frogs are made with Oreo cookies and pretzels- cute and soooo yummy!

“You have to kiss a lot of frogs before you meet your prince…..!”

Someone posted a picture of frogs made with Oreos on Facebook last week and I came across it just after spending time on the phone with a friend who’s just been “dumped” by her boyfriend.  When I saw the picture I immediately thought of all the “frogs” I’ve dated and knew I had to make us some frogs for Valentine’s Day!

I’ve only occasionally been in love on Valentine’s Day, and usually I watch horror movies with my other single friends to celebrate the day. Can you relate?  If so, these frogs are for you!!

Frog Oreos!

I am 2 1/2 hours from a Hobby Lobby.  It is (as far as I know) the only place I can get candy melts and other fun decorative things for food blogging.  When I packed up my car to move here for 8 months I remember packing the candy eyes.  I can see myself thinking, “Well, I’m sure the Navajo will not have a store that sells candy eyes…I better bring those!”

I didn’t bring them.  Or I lost them….?

So today I found myself standing in the kitchen with every ingredient I needed for these…except eyes.

I melted white and black candy melts and piped little eyes.  Don’t do that.  Go and buy the Candy Eyes.  They are super cheap and really cute.  My eyes are a little crazy looking….but then again, they remind me a little of some guys I’ve dated, so I guess it all worked out in the long run for me.

Frog Oreos!!

Ready for this recipe?  Here you go! (Printable Recipe)

INGREDIENTS:

  • One package of Oreo cookies
  • One bag of small pretzels
  • Two bags of Wilton candy melts in green
  •  Candy Eyes
  • Mini M&Ms (you’ll only need the red, so you can eat the rest!!)
  • Green jimmies (for the warts!)
  • Candy hearts (I piped mine with red candy melts, but I’d have used candy hearts if I’d had them!)

DIRECTIONS:

  • Melt the green candy melts in a microwave safe bowl in 30 second increments, stirring in between until completely melted and smooth.
  • Spread a sheet of parchment paper over the counter you will be working on.
  • Dip Oreos, one at a time, in the green candy melts, spooning the candy over the top and sides and then lifting with a fork and tapping excess away.  
  • Gently slide the covered Oreo against the edge of the bowl to remove excess candy melt from the bottom, and then slide off fork on to parchment paper.
  • Place two eyes on the top, an M&M in the front for a tongue, sprinkle with jimmies and place a heart candy on top.
  • Allow Oreos to completely harden.
  • Reheat candy melts if needed (they might harden up while the Oreos cool).
  • Dip pretzels into candy melts, using the same technique as the Oreos.  
  • Place two pretzels bottom to bottom on a clean sheet of parchment paper and while they are still melted, set a decorated Oreo on top and allow this to harden together.

My thoughts:  If you’ve never dipped things in chocolate or candy melts before, it will take you a little while to get the technique down.  The biggest tip I have is to tap off as much as you can before you set it on the parchment paper.  If you leave too much of the candy melts on the Oreo or pretzel it will drain off into a big puddle around it when you set it on the parchment paper.  It is also nice to have a clean set of tweezers handy to place the eyes and M&M with.  I had so much fun decorating mine…I think they got more cross-eyed and dumb looking the longer I thought about some of the guys my friends and I have dated.  I actually laughed out loud a few times.  I’m easily entertained!! 🙂

Peanut Butter Cupcakes

Peanut Butter Cupcakes!!!!!!Moist cupcakes filled with a creamy peanut butter cup and topped with peanut butter cream icing and a mini peanut butter cookie.  This is a peanut butter lover’s dream come true!

I was determined to get mini peanut butter cups into the center of these cupcakes.  I did some of them plain, and tossed some in flour 1st and all of them sank to the bottom.  Sad me.  I think the only alternative is to either eat them on the bottom (still yummy!!) or invest in one of those fun little pans that hold candy in the middle.  Have you seen them?  Click here if you want to check them out.  Now that I’m in the middle of the Navajo Nation, I seriously doubt I will be coming across one- lol!  Maybe I will order one once I have an address to send it to!!

Peanut Butter Cupcakes!!!!

These happy little cupcakes use melted frosting on the tops—I’m addicted to melting frosting now!!!  Make me stop!!!

Here’s the recipe (printable version)

INGREDIENTS:

  • One boxed yellow cake mix (plus water, oil and eggs to make according to directions)
  • 24 Mini Reese peanut butter cups
  • 1 tub of chocolate frosting
  • 3 sticks (1 1/2 cups) butter (softened to room temperature)
  • 1 cup of creamy peanut butter
  • 3 cups powdered sugar
  • 1 Tablespoon vanilla
  • 24 mini Nutter Butter cookies for decoration

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • Make cake mix according to box directions and divide equally into 24 cupcake liners placed in tins.
  • Place a mini peanut butter cup on the top of each cup full of batter

  • Bake according to box directions, remove from oven and cool completely.
  • Spoon tub of chocolate frosting into a microwave-safe bowl and microwave for about 30 seconds.  Stir until well mixed.
  • Dip the top of each cupcake in the chocolate frosting and allow them to cool, and to harden a little.

  • Place remaining melted frosting in a small zip top bag and zip it closed.
  • To make peanut butter frosting, place butter, vanilla, and peanut butter into a large bowl and mix on high until smooth (about a minute)
  • Add powdered sugar and beat on low until combined and then on high until light and fluffy.
  • Place frosting in a zip-top bag fitted with a decorating tip and pipe on top of each cooled cupcake.
  • Clip a corner off of the bag filled with the melted chocolate frosting and drizzle over the top of each cupcake.
  • Top with a mini Nutter Butter cookie.

My thoughts:  YUM!  These are perfect if you love peanut butter.  I love the fudgy layer of melted frosting on the top– when I shared these with friends they all loved that part.  You could dip cupcakes into all sorts of melted frostings– so many flavor possibilities!!!! Raspberry Lemon Drop Cakes!!
Moist yellow cake bowls filled with lemon and topped with whipped raspberry cream.  These are such a unique and flavorful dessert- you are going to love them!

This is recipe #2 in my tribute to melted frosting.  Last week we used a chocolate frosting and this week- lemon frosting.  The plan for this recipe was chocolate cake bowls with chocolate filling and raspberry cream.  I caught myself half-way through making a yellow cake mix before I remembered I wanted to do chocolate though.

I have a lot on my mind these days!

SO, I sat down and thought about what flavors are good with yellow cake mix and I already had a tub of lemon frosting…and here we go! It was a fortunate mistake, because these are delicious.  One of my new favorites!  I even ate one for breakfast, and with a cup of coffee?  Perfection!

Here’s the recipe:  (printable version)

INGREDIENTS:

  • 1 box of yellow cake mix (plus oil, water and eggs to make according to package)
  • 1 tub of lemon frosting
  • 1 packet of Dream Whip
  • 1/3 cup cold milk
  • 1 tablespoon of powdered sugar
  • 1 teaspoon vanilla
  • 1/4 cup of raspberry preserves (more or less, to taste)

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • Make yellow cake mix according to package.
  • Grease 4 Wilton fillable mini cake pans, and fill each one about 2/3 full.  This will use about 1/2 of the batter- so you will fill these pans again once the 1st set is through baking.
  • Bake at 350F degrees for 20-30 minutes, until a toothpick inserted comes out clean.
  • Tip cakes onto a cake rack to cool.  Trim bottoms flat, if needed.
  • Spoon tub of frosting into a microwave safe bowl and heat in microwave for about 30 seconds.  Stir.
  • Spoon melted lemon frosting into each cake “cup”, filling each to the top.

  • Place remaining frosting into a small zip top bag.
  • Place Dream Whip, milk, powered sugar and vanilla into a large mixing bowl and beat on high for about 2 minutes, until a thick, whipped consistency.
  • Fold raspberry preserves in, and place into a zip top bag that has been fitted with a decorator tip.
  • Pipe whipped topping on top of each cake.
  • Clip a small corner off the bag of remaining frosting and drizzle liberally over the top of each cake. 
  • Top with a fresh raspberry if desired.
  • Keep these chilled until serving- and ENJOY!!!

My thoughts: I’m not kidding you– these are amazing!  If you don’t want to use the pans (they are a really fun addition to your kitchen though!) you could do a layer cake:  2 round cakes with lemon icing and whipped topping in the middle and lemon icing poured over the top- see my Chocolate Mousse Cake for how to assemble.  These are a must-try recipe!!!  SO easy with that melted frosting– love it!!!

Ruthanne news:  I don’t often post about my personal life here, because my goal is to just get yummy recipes to you without a ton of personal commentary.  When I really want to just see a recipe, I hate scrolling through 3 pages of of kids and dog stories first, so I promised myself that this site would be more about recipes than about me!!!

I have a few really exciting things going on that I wanted to share with you though~

First, Warner Press Publishing contacted me about making a boxed set of greeting cards from my recipes and photos.  These are available now in many Christian bookstores or on their site.  Click here to check them out!

Second, I have a cookbook for kids coming out this summer!  I’m so excited about this project- there’s nothing better than time in the kitchen with your kids!  Details to follow on this!

Third, I lost my job in genetics.  Our hospital can “no longer invest in expensive cutting edge technology due to the affordable care act”.  Thats a quote.  I struggled with what comes next and eventually (after much soul searching and prayer!) decided to move out to Arizona for the next 8 months to work alongside a church in the Navajo Nation.  I’m writing this blog from the comfort of a motel in Tucumcari, New Mexico.  I’ve driven about 1200 miles from home and I’m about 6 hours from my new home in Rough Rock Arizona.  My car is literally packed to the ceiling with things- about half of those things are supplies for baking, blogging and photography!  I’m hoping to continue creating and posting for all of you!
