Raspberry Lemon Drop Cakes

Raspberry Lemon Drop Cakes!!
Moist yellow cake bowls filled with lemon and topped with whipped raspberry cream.  These are such a unique and flavorful dessert- you are going to love them!

This is recipe #2 in my tribute to melted frosting.  Last week we used a chocolate frosting and this week- lemon frosting.  The plan for this recipe was chocolate cake bowls with chocolate filling and raspberry cream.  I caught myself half-way through making a yellow cake mix before I remembered I wanted to do chocolate though.

I have a lot on my mind these days!

SO, I sat down and thought about what flavors are good with yellow cake mix and I already had a tub of lemon frosting…and here we go! It was a fortunate mistake, because these are delicious.  One of my new favorites!  I even ate one for breakfast, and with a cup of coffee?  Perfection!

Here’s the recipe:  (printable version)

INGREDIENTS:

  • 1 box of yellow cake mix (plus oil, water and eggs to make according to package)
  • 1 tub of lemon frosting
  • 1 packet of Dream Whip
  • 1/3 cup cold milk
  • 1 tablespoon of powdered sugar
  • 1 teaspoon vanilla
  • 1/4 cup of raspberry preserves (more or less, to taste)

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • Make yellow cake mix according to package.
  • Grease 4 Wilton fillable mini cake pans, and fill each one about 2/3 full.  This will use about 1/2 of the batter- so you will fill these pans again once the 1st set is through baking.
  • Bake at 350F degrees for 20-30 minutes, until a toothpick inserted comes out clean.
  • Tip cakes onto a cake rack to cool.  Trim bottoms flat, if needed.
  • Spoon tub of frosting into a microwave safe bowl and heat in microwave for about 30 seconds.  Stir.
  • Spoon melted lemon frosting into each cake “cup”, filling each to the top.

  • Place remaining frosting into a small zip top bag.
  • Place Dream Whip, milk, powered sugar and vanilla into a large mixing bowl and beat on high for about 2 minutes, until a thick, whipped consistency.
  • Fold raspberry preserves in, and place into a zip top bag that has been fitted with a decorator tip.
  • Pipe whipped topping on top of each cake.
  • Clip a small corner off the bag of remaining frosting and drizzle liberally over the top of each cake.
  • Top with a fresh raspberry if desired.
  • Keep these chilled until serving- and ENJOY!!!

My thoughts: I’m not kidding you– these are amazing!  If you don’t want to use the pans (they are a really fun addition to your kitchen though!) you could do a layer cake:  2 round cakes with lemon icing and whipped topping in the middle and lemon icing poured over the top- see my Chocolate Mousse Cake for how to assemble.  These are a must-try recipe!!!  SO easy with that melted frosting– love it!!!

Ruthanne news:  I don’t often post about my personal life here, because my goal is to just get yummy recipes to you without a ton of personal commentary.  When I really want to just see a recipe, I hate scrolling through 3 pages of of kids and dog stories first, so I promised myself that this site would be more about recipes than about me!!!

I have a few really exciting things going on that I wanted to share with you though~

First, Warner Press Publishing contacted me about making a boxed set of greeting cards from my recipes and photos.  These are available now in many Christian bookstores or on their site.  Click here to check them out!

Second, I have a cookbook for kids coming out this summer!  I’m so excited about this project- there’s nothing better than time in the kitchen with your kids!  Details to follow on this!

Third, I lost my job in genetics.  Our hospital can “no longer invest in expensive cutting edge technology due to the affordable care act”.  Thats a quote.  I struggled with what comes next and eventually (after much soul searching and prayer!) decided to move out to Arizona for the next 8 months to work alongside a church in the Navajo Nation.  I’m writing this blog from the comfort of a motel in Tucumcari, New Mexico.  I’ve driven about 1200 miles from home and I’m about 6 hours from my new home in Rough Rock Arizona.  My car is literally packed to the ceiling with things- about half of those things are supplies for baking, blogging and photography!  I’m hoping to continue creating and posting for all of you!

Many thanks to each of you for being a part of the easybaked community!  I’m incredibly glad you are along for this journey!  ~r

Cinnamon Upside Down Cakes

Cinnamon Upside Down Cakes!!
These little mini cinnamon cakes are the perfect make-ahead treat.  Perfect as dessert and such a sweet and yummy breakfast!  Dripping with sweet glaze, these will be a new family favorite, and the best part?  They use a cake mix and they are SO easy!!!

Ready to make these fun little cakes? Click here for the printable recipe.

INGREDIENTS:

  • 2 cups brown sugar (packed)
  • ½ cup butter (melted)
  • 2 tablespoons cinnamon
  • 36 pecan halves (optional)
  • One boxed yellow cake mix
  • Water, oil and eggs to make mix according to box
  • 1 cup of powdered sugar
  • 1 to 2 tablespoons of milk
  • ½ teaspoon of vanilla

DIRECTIONS:

  • Preheat oven to 350F degrees
  • Spray two muffin tins with non-stick cooking spray
  • Place brown sugar, cinnamon and melted butter into a small bowl and mix until well combined.
  • Spoon sugar mixture evenly into all 24 cups of the muffin tins.
  • Use a mini tart shaper or a wooden spoon to press sugar mixture flat into the bottom of each cup.
  • Place 3 pecans on top of sugar.
  • Make cake mix according to box instructions.
  • Scoop batter over the top of sugar and pecans.  Fill each cup about 2/3 full.

  • Bake at 350F degrees for 18-20 minutes.
  • Remove from oven and quickly run a small knife around the edge of each cup.
  • Using oven mitts, place a wire cake rack on top of the muffin tin and flip the pan and rack over so that cakes are upside down on the rack.
  • Gently lift the muffin tin up and allow the cakes to pop out. Some sugar will remain in the bottom of each cup, which is fine.
  • While cakes cool, make a glaze by mixing milk, vanilla and powdered sugar together in a small bowl.  Add extra milk or powdered sugar to make glaze a thick frosting consistency- not very runny.
  • Spoon glaze into a small zip-top bag and seal the top.
  • Clip a corner of the bag and drizzle glaze over the tops of each little cake.
  • ENJOY!

Cinnamon Upside Down Cakes!!
My thoughts: These are really easy little treats and they are gobbled up fast!  I’ve made them twice now and everyone asks for the recipe. I made my second batch without the pecans on half of them.  They were still wonderful and make this recipe yummy for even people who don’t like or can’t have nuts. Keep them covered up and they last a few days- a perfect make-ahead Christmas morning treat!

Key Lime Layer Cake

Key Lime Cake

Moist cake layered with buttercream and tart key lime filling.  A perfect summer treat!

Key lime pie is one of my favorite desserts.  It’s just so refreshing and fun!  Whenever I am pondering the question of what dessert to try in a restaurant I am always caught between chocolate and anything key lime.

I’ve already done a few key lime recipes here on Easybaked, but never a cake.  Until today…..

Key Lime Cake

The key lime filling is tart, but the sweet buttercream layered with it makes each bite a refreshing treat!

Here’s how to make it: (printable recipe)

INGREDIENTS:

  • One boxed yellow cake mix (with eggs, oil and water to make according to package)
  • 1 cup of key lime juice
  • 1 can (14 oz) of sweetened condensed milk
  • 1 egg
  • 2 sticks (8 oz.) of salted butter
  • 2 sticks (8 oz.) of unsalted butter
  • 3 cups of powdered sugar
  • 2 teaspoons of clear vanilla
  • 1/4 cup crushed graham crackers

DIRECTIONS:    (make filling 1st to save time)

Cake:

  • Make cake mix according to package and bake in two 8 or 9 inch round pans.
  • Turn cakes out of pans onto a cooling rack and cool completely.

Filling:

  • In a medium mixing bowl blend together key lime juice, sweetened condensed milk and egg until combined.
  • Pour into a small casserole dish and bake at 325F degrees for 15-20 minutes until center is set.
  • Cool completely (I make this 1st and place it in the fridge while I make the cake and frosting)

Frosting:

  • In a large mixing bowl, add softened butters, powdered sugar and vanilla.
  • Beat on high for several minutes until frosting is light and very fluffy.

Putting the cake together:

  • Trim the tops of cakes to make them flat using a large serrated knife.
  • Cut each cake into 2 layers using the same serrated knife.
  • Place 1st layer on a serving plate and lightly layer with frosting.
  • Spread 1/3 of the cooled key lime filling over layer
  • Place 2nd layer on top and repeat until last layer has been placed on top.
  • Frost entire cake (top and sides) with buttercream frosting.
  • Crush a few graham crackers and gently press the crumbs along the sides of the cake.
  • Decorate as desired.  I used little dollops of extra frosting and little lime green chocolates.

Key Lime Cupcakes!

These cupcakes are filled with a sweet key lime filling and topped with key lime buttercream…what could be better than that?  Oh, how about a graham cracker crust on the bottom of the cupcake?  This dessert is as close to key lime pie as you can get…without it being a pie!  (printer friendly recipe)

INGREDIENTS: (makes 24 cupcakes)

Filling:

  • 1 cup key lime juice (a labor of love….!)
  • 1 can (14 oz.) sweetened condensed milk
  • 1 egg

DSC_0009

Cupcakes:

  • 2 cups of graham crackers (finely crushed)
  • 3 Tablespoons of butter (melted)
  • 1 boxed yellow cake mix (plus water, oil and eggs to make according to package)

Frosting:

  • 2 sticks (8 oz) salted butter (at room temp)
  • 2 sticks (8 oz) unsalted butter (at room temp)
  • 3 cups of powdered sugar
  • 2 teaspoons vanilla
  • 2 Tablespoons of key lime juice

DIRECTIONS:

Filling:

  • Mix together key lime juice, sweetened condensed milk and egg and pour into a small casserole.
  • Bake at 325F degrees for 15-20 minutes (until center is set)
  • Cool completely.

Cupcakes:

  • Mix crushed graham crackers with melted butter.
  • Spoon about 1 teaspoon of this mixture into 24 cupcake liners in muffin tins (you’ll have a little left to garnish with at the end)
  • Press crumbs firmly into bottom of cup (I find my Mini Tart Shaper to be very useful for this)
  • Make cake mix according to box, and divide batter equally between the 24 cupcake liners.
  • Bake according to directions on box
  • Remove from oven and cool completely.
  • Core cupcakes (I love my Cupcake Plunger– it is so quick to use and saves the core to place back on top of the filling- to see a picture of how it works, click here).
  • Spoon cooled  filling into a zip top bag and clip a corner off.

Spoon Key Lime Filling into a zip top bag!

  • Pipe filling evenly into each cupcake, saving about 1/4 of a cup of filling to drizzle on the top at the end.
  • Place top of core back in place (you can trim some of the bottom off to make room for the filling if you need to)

Frosting:

  • Place butter, powdered sugar, vanilla and 2 Tablespoons of key lime juice into a large bowl.
  • Using a mixer, beat on high until light and fluffy.
  • Pipe frosting on top of cupcakes and drizzle remaining filling on top.
  • Sprinkle with remaining graham crust crumbs and ENJOY!!!!

Key Lime Cupcakes!

My thoughts:  I created these for a graduation party.  The challenge was to create a key lime cupcake for someone who LOVES key lime pie.  Key lime pie is one of my favorite desserts, so it was a fun task.  These were a big hit.  I love the balance between the tart center and the sweet cupcake and frosting.

It’s spring~ you NEED a key lime cupcake!!!

My First Attempt at Cake Pops :)

Posted on

It’s Memorial Day.  I have extra down time and I start thinking about cake pops– they are all the rage these days…I look up some info by googling “What are Cake Pops?” and get literally hundreds of recipes for these little treats.  Cake + Frosting= balls of happiness.  Add a stick and cover them in chocolate–CAKE POPS!  So I decided to give them a try…..

INGREDIENTS:

(we went with only things I already had in the house, but these flavors were really yummy!)

  • 1 box of yellow cake mix (and water, oil and eggs to make according to package)
  • 1/2 tub of Wiltons decorating frosting
  • 1 bag of Wilton Dark Candy Cocoa Melts
  • Small amounts of Wilton colored candy melts to decorate with
  • 24 Lollipop sticks

DIRECTIONS:

  • Make cake according to directions and cool.
  • Cut cake into small pieces and scoop into a large mixing bowl.
  • Using a hand mixer, blend cake into crumbs.

Crumbs!!!

  • Add frosting and mix with mixer until combined.
  • Using hands, knead cake and frosting into a dough-like consistency
  • Use a cookie scoop to measure out scoops of dough.  Roll into balls with hands.

Cake and Frosting balls (and Casper watching for crumbs!)

  • Melt dark chocolate candy melts in the microwave in 30 second increments, stirring in between.
  • Dip the end of a sucker stick into the chocolate and press into the top of each ball of dough.  Allow this chocolate to harden.

Pre-dipped sucker sticks.

  • Dip entire ball of dough into remaining chocolate- covering completely.  Set upright by putting end of stick in a block of styrofoam (or I used a shoebox that I poked holes into!)

Dipping....

Creative use of a shoe box....

  • Melt colored candy melts in the same manner as you melted the dark chocolate ones and drizzle over the top .

Drizzle drizzle....

  • Allow chocolate to harden completely and serve!
My thoughts:  What a glorious mess this made. wow.  In almost every answer on “how to make cake pops” I read something along the lines of- these take practice…don’t expect your first batch to be beautiful etc…and I disregarded this thinking that I’ve dipped almost everything I own in chocolate- how hard could this be???
The cake part is easy.  Making crumbs- easy. Mixing in frosting and making balls- easy.  Sticks- easy.  Dipping these?   CRAZY messy!   After my 1st five pops were dipped I decided that I was never doing this again.  By pop #15 I was thinking I might do this again- but not for 20 years.  I dropped pop #22 on the ground and had to eat it (well I couldn’t serve it could I??)
One bite in and  I decide I am making these for EVERYTHING!!!!  I’d never tasted one of these and I am blown away- no wonder everyone is going through the hassle!
    Advice:
    1.  Don’t wear your favorite white shirt while making these. 😦
    2. Eat these over a plate so that when they fall apart you don’t have to wonder how clean the floor is.
    3. These take practice- don’t expect your 1st batch to be beautiful- lol 🙂
    ENJOY!!!!!!!! r-
