Andes Mint Layer Cake

Andes Mint Layer Cake!

This rich chocolate cake has a huge layer of Andes Mint whipped filling and is drizzled with fudge topping.  The perfect chocolate dessert!

Tah Dah!!!  One last melted frosting recipe…for now…This one has yummy melted chocolate frosting inside and poured all over the top.  YUM!!!!!!

I love making this cake in various forms.  It is SO quick and easy to put together and everyone loves it! This time I added Andes mint candies for a refreshing mint twist to this recipe.  I think you will love it!! Andes Mint Cake!!

Here’s the recipe:  (printable version)

INGREDIENTS:

  • 1 boxed chocolate cake mix (with oil/eggs/water to make according to directions)
  • 2 packets of Dream Whip  (found near the jello/pudding boxes at the grocery)
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 3 tablespoons cocoa powder
  • 3 tablespoons powdered sugar
  • Andes Baking Chips 10 oz
  • One container of pre-made chocolate frosting

DIRECTIONS:

  • Make cake mix according to box and bake in 2 – 8 or 9 inch round pans (I cut parchment paper to fit, spray the pan with non-stick spray, and place it in the bottom of each pan so that the cake comes out easier).
  • Cool cakes completely on a wire rack and while they are cooling make your whipped filling:
  • Put Dream Whip, milk, vanilla, cocoa powder and powdered sugar into a mixing bowl and blend together.
  • Using a mixer, beat until stiff peaks form (3-4 minutes)
  • Fold in Andes mint baking chips, saving aside a few for topping.
  • Scoop chocolate frosting into a microwave safe bowl and heat for only about 20-30 seconds in the microwave.  Heat until frosting is melted into a hot fudge consistency.
  • Use a large serrated knife to level your two cakes.
  • Place 1st cake on serving plate, leveled edge up.
  • Pour about 1/4 of melted frosting on top of cake and spread to cover (I put this layer in the fridge for about a minute just to cool the warm frosting down before adding the mousse layer)
  • Spoon all of the mousse on top of the cake and spread it ALMOST to the edges.
  • Top with second cake– put the leveled edge against the mousse…this keeps all the crumbs in the middle and leaves a nice flat surface on the top of your cake. Gently press top layer down to squeeze the mousse all the way to the edges.
  • Pour the rest of the melted frosting over the entire cake and let it drip over the edges.
  • Sprinkle the remaining Andes Mint bits on top.
  • Refrigerate until serving, this will make the middle layer firm and easy to cut.

Raspberry Lemon Drop Cakes

Raspberry Lemon Drop Cakes!!
Moist yellow cake bowls filled with lemon and topped with whipped raspberry cream.  These are such a unique and flavorful dessert- you are going to love them!

This is recipe #2 in my tribute to melted frosting.  Last week we used a chocolate frosting and this week- lemon frosting.  The plan for this recipe was chocolate cake bowls with chocolate filling and raspberry cream.  I caught myself half-way through making a yellow cake mix before I remembered I wanted to do chocolate though.

I have a lot on my mind these days!

SO, I sat down and thought about what flavors are good with yellow cake mix and I already had a tub of lemon frosting…and here we go! It was a fortunate mistake, because these are delicious.  One of my new favorites!  I even ate one for breakfast, and with a cup of coffee?  Perfection!

Here’s the recipe:  (printable version)

INGREDIENTS:

  • 1 box of yellow cake mix (plus oil, water and eggs to make according to package)
  • 1 tub of lemon frosting
  • 1 packet of Dream Whip
  • 1/3 cup cold milk
  • 1 tablespoon of powdered sugar
  • 1 teaspoon vanilla
  • 1/4 cup of raspberry preserves (more or less, to taste)

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • Make yellow cake mix according to package.
  • Grease 4 Wilton fillable mini cake pans, and fill each one about 2/3 full.  This will use about 1/2 of the batter- so you will fill these pans again once the 1st set is through baking.
  • Bake at 350F degrees for 20-30 minutes, until a toothpick inserted comes out clean.
  • Tip cakes onto a cake rack to cool.  Trim bottoms flat, if needed.
  • Spoon tub of frosting into a microwave safe bowl and heat in microwave for about 30 seconds.  Stir.
  • Spoon melted lemon frosting into each cake “cup”, filling each to the top.

  • Place remaining frosting into a small zip top bag.
  • Place Dream Whip, milk, powered sugar and vanilla into a large mixing bowl and beat on high for about 2 minutes, until a thick, whipped consistency.
  • Fold raspberry preserves in, and place into a zip top bag that has been fitted with a decorator tip.
  • Pipe whipped topping on top of each cake.
  • Clip a small corner off the bag of remaining frosting and drizzle liberally over the top of each cake. 
  • Top with a fresh raspberry if desired.
  • Keep these chilled until serving- and ENJOY!!!

My thoughts: I’m not kidding you– these are amazing!  If you don’t want to use the pans (they are a really fun addition to your kitchen though!) you could do a layer cake:  2 round cakes with lemon icing and whipped topping in the middle and lemon icing poured over the top- see my Chocolate Mousse Cake for how to assemble.  These are a must-try recipe!!!  SO easy with that melted frosting– love it!!!

Ruthanne news:  I don’t often post about my personal life here, because my goal is to just get yummy recipes to you without a ton of personal commentary.  When I really want to just see a recipe, I hate scrolling through 3 pages of of kids and dog stories first, so I promised myself that this site would be more about recipes than about me!!!

I have a few really exciting things going on that I wanted to share with you though~

First, Warner Press Publishing contacted me about making a boxed set of greeting cards from my recipes and photos.  These are available now in many Christian bookstores or on their site.  Click here to check them out!

Second, I have a cookbook for kids coming out this summer!  I’m so excited about this project- there’s nothing better than time in the kitchen with your kids!  Details to follow on this!

Third, I lost my job in genetics.  Our hospital can “no longer invest in expensive cutting edge technology due to the affordable care act”.  Thats a quote.  I struggled with what comes next and eventually (after much soul searching and prayer!) decided to move out to Arizona for the next 8 months to work alongside a church in the Navajo Nation.  I’m writing this blog from the comfort of a motel in Tucumcari, New Mexico.  I’ve driven about 1200 miles from home and I’m about 6 hours from my new home in Rough Rock Arizona.  My car is literally packed to the ceiling with things- about half of those things are supplies for baking, blogging and photography!  I’m hoping to continue creating and posting for all of you!

Malted Milkshake Cupcakes

Malted Milkshake Cupcakes

Dark chocolate cupcakes topped with the creamiest malt frosting ever.  Like a malted milkshake minus the cup!

I have an addiction to chocolate malts.  Not chocolate shakes, just malts.  The creamy, chocolatey kind that you drink through a striped straw at the pool.  My mom makes the best chocolate malts ever.  They are really simple to make, but there’s just something about her leaning out of the patio door and asking, “Anyone want a malt?” that makes me smile.  It’s one of our summer traditions.

Moms Malts!!{Her easy recipe? Ice cream, malt powder, cocoa and milk~ a blender full of ice cream plus cocoa and malt to taste, and milk to desired consistency}

I wanted to make a frosting that tastes like a malt.  It took me a couple of tries, but I finally hit the mark.  It’s wonderfully creamy and smooth.  It is also a very soft whipped icing that must be kept refrigerated because it has milk in it, and because it will not keep a pretty piped finish if it gets warm.

Believe me, the flavor and texture are worth it!

Malted Milk Cupcakes

Here’s how to make these yummy cupcakes! (printable recipe)

INGREDIENTS:

  • One boxed dark chocolate cake mix (plus water, eggs and oil to make according to box)
  • 4 packets of Dream Whip
  • 1 1/2 cups of cold milk
  • 6 Tablespoons of unsweetened cocoa powder
  • 6 Tablespoons of malt powder
  • 1/2 -1 cup of powdered sugar (to desired consistency)

DIRECTIONS

  • Make cake mix according to box and bake in 24 cupcake liners placed in muffin tins.
  • Cool cupcakes completely.
  • Put Dream Whip, milk, cocoa powder, malt powder and powdered sugar into a mixing bowl and blend together.
  • Using a mixer, beat until stiff peaks form (3-4 minutes) 
  • Add extra powdered sugar if needed, to desired consistency.  This is a soft whipped frosting, so it won’t be the consistency of a stiff buttercream~ even with lots of powdered sugar.  (believe me, I tried!)
  • Spoon frosting into a zip-top bag fitted with a decorating tip and pipe frosting on cupcakes.
  • Refrigerate until serving and just before serving add a malted milk ball and sprinkle with cocoa powder if desired for garnish.

My thoughts:  these are *almost* as good as my moms malts.  This frosting is really yummy.  It would be a great filling for a layer cake too~ or even a filling for cupcakes.  You could fill chocolate cupcakes with this and then just spoon some chocolate ganache over the top.  Oh the possibilities!  Hope you get to try these and enjoy them as much as we did!  ~r

Peppermint Hot Chocolate Cupcakes

Rich chocolate cupcakes filled with peppermint cream and topped with a chocolate frosting made with hot chocolate mix ~ a perfect winter treat!

(the hot cocoa frosting is to DIE for…just thought you should know that right up front….!)

I love hot chocolate…. it is one of my favorite parts of winter.  My friend Dawn recently suggested we participate in a Hot Chocolate Run.  If you’ve never heard of this (I hadn’t!) let me show you a little of the amazingness that makes up a Hot Chocolate Run.

Nothing motivates better than chocolate, I always say!  Who needs a medal when you can have a big cup of cocoa and warm chocolate fondue after a race?

In any case, I’ve been moderately addicted to hot cocoa ever since that weekend.  We all know what happens when I get a flavor stuck in my mind right?  Cupcakes happen.  Hot Chocolate Cupcakes in this case– with some peppermint as a bonus.  If you don’t like peppermint you can easily leave it out of this recipe, but I love the combination!  Are you ready to make these?  Here we go.

INGREDIENTS:

  • One boxed dark chocolate cake mix (plus oil, water and eggs needed to make mix according to box)
  • One packet of Dream Whip (what is Dream Whip? Click HERE)
  • 1/2c. cold milk
  • 3 t. vanilla (divided)
  • 3 tablespoons of finely crushed peppermint candies (I used Peppermint Sprinkles )
  • 1 stick (4 oz.) of salted butter at room temp.
  • 1 stick (4 oz.) of unsalted butter at room temp.
  • 1 cup powdered sugar
  • 1/2 cup of hot cocoa mix (I used Nestle)
  • Kraft Mallow Bits  and peppermint candies to decorate as desired.

DIRECTIONS:

  • Make cake mix according to box, and bake in 24 cupcake liners in muffin tins.
  • Cool cupcakes completely.
  • Make cream filling by placing Dream whip, milk and 1 t. vanilla in a mixing bowl and beating on high until light and fluffy.
  • Add finely crushed  peppermint candy and gently fold in until well combined.
  • Hollow a core out of each cupcake (I used a Chicago Metallic Cupcake Plunger that was recommended to me by a friend– LOVED it!)

(If you have baking friends this is SUCH an inexpensive and fun stocking stuffer idea– it only took me about 5 minutes to core all 24 cupcakes– and I stopped to take pictures!)

  • Pipe filling into each cupcake core.
  • Make frosting by combining butters, powdered sugar, cocoa mix and 2 t. vanilla in a large bowl and beating on high until fluffy.
  • Pipe frosting over cupcakes and decorate as desired.  (The mallow bits were really yummy with this frosting!


Peppermint Hot Chocolate Cupcakes!!!

My thoughts:  Fun and yummy winter treat!!  Not a fan of peppermint?  Just leave the crushed peppermint out of the filling and you have a yummy whipped cream taste with your hot chocolate frosting instead!  

One note:  Put the peppermints on just before serving as the frosting eventually makes them a little sticky.  I hope you and your family love these little treats!  Enjoy!!!  ~r

Old fashioned Red Velvet Cake

Every recipe has a story.  I’m learning this truth as I create in my kitchen and write recipes.  Even a brand-new recipe has a story to tell…the things that didn’t work, the layers that fell apart before you could assemble them, the smiles when you served it, the 1st taste of an experiment.

This recipe has a story.  My manager at work, Joe, grew up in a small town in southern Indiana and his Aunt Doris was known as the best baker in town.  His Aunt Alice found this recipe and when she gave it to Aunt Doris to make it, the result was the BEST Red Velvet Cake anyone had ever tasted.  In fact, at a local event called the Chelsea Jubilee two women got in a fight over this very cake at a dessert auction. Aunt Doris stepped in and said she was going home that instant to make a second cake.

When I heard this story, the 1st words out of my mouth were— “I simply MUST have that recipe Joe!”  So he spoke with his Aunt Alice and they dug it out of the archives of their family recipes for me.  It didn’t come with a frosting recipe (which is at least half the flavor of a cake) so I aimed for a whipped cream cheese frosting.  It is a REALLY good cake.  It is the very 1st “homemade” cake I’ve made that is VERY moist.  It is SO flavorful and it cuts beautifully.

I would consider getting in a fight for this cake.

The original recipe is called “Waldorf Astoria Cake” and here is how you make it:

INGREDIENTS:

  • 2 c. flour
  • 1/2 c. shortening
  • 1 1/2 c. granulated sugar
  • 2 eggs
  • 1 oz. red food coloring ( I didn’t add enough– your cake should be REALLY red- it is a lot of food coloring!!!!)
  • 1 t. salt
  • 2 t. cocoa
  • 1 c. buttermilk
  • 1 t. vanilla
  • 1 t. baking soda
  • 1 t. vinegar

DIRECTIONS:

  • Preheat oven to 350 degrees
  • Spray 2- 8″ round cake pans with non-stick spray and cut a round piece of parchment paper to fit in the bottom of each one.  Spray top of parchment paper with non-stick spray as well.
  • Cream shortening and sugar together.
  • Add eggs, vanilla and food coloring and blend well.
  • Sift together flour, salt and cocoa
  • Alternately add flour mixture and buttermilk, beating together on medium speed until well mixed.
  • Mix vinegar and soda together in a small bowl.
  • Drizzle vinegar/soda mixture over cake batter and blend in on low speed.
  • Pour batter evenly into the two round cake pans.
  • Bake 25-30 minutes at 350 until a tooth pick inserted in the center of the cake comes out clean.
  • Cool in pan for about 10 minutes, run a small knife around the edge of each cake to loosen it and gently tip each cake over onto a cake rack to cool completely.
  • Frost between layers and on top and sides with whatever frosting you want.  I created a whipped cream cheese frosting for this and the recipe is below.

WHIPPED CREAM CHEESE FROSTING

INGREDIENTS:

  • 2 packets of Dream Whip (4 come in one box)
  • 3/4 c. milk
  • 1/2 t. vanilla
  • 4 oz. (1/2 brick) of softened Philadelphia Cream Cheese
  • 1/3 c. powdered sugar (divided)

DIRECTIONS:

  • Cream together softened cream cheese and about half of the powdered sugar.  Set aside.
  • Add remaining ingredients together in a large mixing bowl and stir until all powder is combined.
  • Mix with an electric mixer (beaters are ok, but I like to use my whisk attachment if you have one) on high until very stiff peaks form.
  • Add cream cheese mixture and continue beating on high until stiff and thick.
  • You can frost the cake immediately with this or refrigerate it covered.
  • Frost between the layers and on the top and sides.  Keep cake refrigerated until serving (it is oh-so-good served cold!!!)

Note: I made twice as much frosting as the recipe above (I wasn’t sure how much I’d need!) and that is why the layers on the pictured cake have PILES of frosting!  If you LOVE frosting, just double the recipe given above.  If you do, you will probably have some left over–but is that ever REALLY a problem???

Chocolate Mousse Cake

This wonderful cake recipe is courtesy of my Uncle John.  He has made this cake for family gatherings for years now and it is one of my favorites.  I think I’d have tried it sooner if I’d known how EASY it is.  There’s nothing better than a really easy dessert that looks this fancy!

INGREDIENTS:

  • 1 boxed chocolate cake mix- I like Duncan Hines!  (with oil/eggs/water to make according to directions)
  • 2 packets of Dream Whip (I’d never heard of this– it comes in a box and was near the jello/pudding boxes at the grocery.  There are 4 packets per box, and if you order them in a 6-pack at Amazon they are much cheaper than in the store.)
  • 3/4 c. milk
  • 1 t. vanilla
  • 3T. cocoa powder
  • 3T. powdered sugar
  • one container of pre-made chocolate frosting.

DIRECTIONS:

My thoughts:  WHO KNEW you could melt frosting and make such a wonderful fudge-like topping?  Learn something new every day.  Uncle John sometimes adds peppermint extract to the mousse– so yummy– and I had the thought while I was making this that a layer of raspberry preserves somewhere in the middle would be amazing.  I think you will just love this mousse.  It is so creamy and flavorful.  

If you live in Africa and cant find Dream Whip PLEASE don’t ask me what to substitute– I have no idea what this stuff is…it’s MAGIC 🙂 and I love it!
