White Chocolate Lemonade Cups

Creamy, whipped, lemonade filling spooned into cute little white chocolate cups! A fun, fancy and delicious summer dessert!

Did you know that there are silicone molds for little shot glasses?!? You would think I’d have seen these somewhere along my road of dessert blogging, but I hadn’t. I stumbled on a clearance rack full of them and lightbulbs started going on in my head with ideas for fun ways to use this mold! SUCH a fun idea!

Aren’t they cute?!? I made my cups out of white chocolate and then filled these with a creamy lemonade filling that I use quite a bit here for various desserts. You can eat it straight (I may have sampled a bit as I was filling cups…), pipe it on cupcakes, layer it in cake, ooooorrrr serve it in tasty little chocolate cups! Fun….!!!!!

Here is how we made them (makes 8- 10 filled cups): (printable recipe here)

First of all, you need a Wilton’s shot glass mold (and if you get it from my link on Amazon I will get a small percentage of what you pay, making it possible for me to buy brownie ingredients, which is the next fun project I have in mind for these shot glass molds!)

INGREDIENTS: 

  • 2 bags of Wilton’s Candy Melts in bright white.
  • 1/2 package (4 oz) of Philadelphia Cream Cheese (softened to room temperature)
  • 1/2 packet of Kool Aid drink mix (any flavor~ if you use a lemonade, add it to taste, as it will be more tart than the other flavors)
  • 1 (7 oz) jar of Jet-Puffed Marshmallow Creme
  • 1 tub (8 oz) of Cool Whip (thawed in refrigerator, divided)
  • Fun sprinkles

DIRECTIONS:

  • Melt Candy Melts in microwave in 30 second increments, stirring in between until melted and smooth.
  • If desired, drop a few sprinkles into each cavity of the mold (that is how I got the colors at the rim of the “glass”).
  • Carefully spoon melted white chocolate into molds (I placed the melts in a zip-top bag, zipped it shut tight, clipped a corner and piped it into the molds to make sure I got it all the way to the bottom without bubbles). 
  • Tap on countertop and set (level!) in freezer for 10-15 minutes until hard.
  • Pop cups out of molds and set aside. 
  • While cups are hardening, make filling by creaming together lemonade/other unsweetened drink mix flavor with cream cheese.
  • Fold in marshmallow and then fold in 1/2 of Cool Whip until smooth.
  • You could spoon this into the little cups, but I piped the filling in (again- to make it easy to get all the way to the bottom of each cup). 

  • Spoon remainder of Cool Whip into a zip-top bag that has been fitted with a large decorating tip. Zip it tightly shut and pipe swirls on top of each cup. 
  • Add sprinkles (and I added a little bit of a straw to each one too, because….soooo cute! 🙂
  • Enjoy!

My thoughts: These are such a fun idea for showers and other celebrations that call for something unique and yet yummy! You’ll want to keep these refrigerated (cream cheese and Cool Whip) until you serve them, but pull them out and let them soften up before serving (the chocolate is really yummy to break apart and eat with the cream!!!) Raspberry Lemon Drop Cakes

Raspberry Lemon Drop Cakes!!
Moist yellow cake bowls filled with lemon and topped with whipped raspberry cream.  These are such a unique and flavorful dessert- you are going to love them!

This is recipe #2 in my tribute to melted frosting.  Last week we used a chocolate frosting and this week- lemon frosting.  The plan for this recipe was chocolate cake bowls with chocolate filling and raspberry cream.  I caught myself half-way through making a yellow cake mix before I remembered I wanted to do chocolate though.

I have a lot on my mind these days!

SO, I sat down and thought about what flavors are good with yellow cake mix and I already had a tub of lemon frosting…and here we go! It was a fortunate mistake, because these are delicious.  One of my new favorites!  I even ate one for breakfast, and with a cup of coffee?  Perfection!

Here’s the recipe:  (printable version)

INGREDIENTS:

  • 1 box of yellow cake mix (plus oil, water and eggs to make according to package)
  • 1 tub of lemon frosting
  • 1 packet of Dream Whip
  • 1/3 cup cold milk
  • 1 tablespoon of powdered sugar
  • 1 teaspoon vanilla
  • 1/4 cup of raspberry preserves (more or less, to taste)

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • Make yellow cake mix according to package.
  • Grease 4 Wilton fillable mini cake pans, and fill each one about 2/3 full.  This will use about 1/2 of the batter- so you will fill these pans again once the 1st set is through baking.
  • Bake at 350F degrees for 20-30 minutes, until a toothpick inserted comes out clean.
  • Tip cakes onto a cake rack to cool.  Trim bottoms flat, if needed.
  • Spoon tub of frosting into a microwave safe bowl and heat in microwave for about 30 seconds.  Stir.
  • Spoon melted lemon frosting into each cake “cup”, filling each to the top.

  • Place remaining frosting into a small zip top bag.
  • Place Dream Whip, milk, powered sugar and vanilla into a large mixing bowl and beat on high for about 2 minutes, until a thick, whipped consistency.
  • Fold raspberry preserves in, and place into a zip top bag that has been fitted with a decorator tip.
  • Pipe whipped topping on top of each cake.
  • Clip a small corner off the bag of remaining frosting and drizzle liberally over the top of each cake. 
  • Top with a fresh raspberry if desired.
  • Keep these chilled until serving- and ENJOY!!!

My thoughts: I’m not kidding you– these are amazing!  If you don’t want to use the pans (they are a really fun addition to your kitchen though!) you could do a layer cake:  2 round cakes with lemon icing and whipped topping in the middle and lemon icing poured over the top- see my Chocolate Mousse Cake for how to assemble.  These are a must-try recipe!!!  SO easy with that melted frosting– love it!!!

Ruthanne news:  I don’t often post about my personal life here, because my goal is to just get yummy recipes to you without a ton of personal commentary.  When I really want to just see a recipe, I hate scrolling through 3 pages of of kids and dog stories first, so I promised myself that this site would be more about recipes than about me!!!

I have a few really exciting things going on that I wanted to share with you though~

First, Warner Press Publishing contacted me about making a boxed set of greeting cards from my recipes and photos.  These are available now in many Christian bookstores or on their site.  Click here to check them out!

Second, I have a cookbook for kids coming out this summer!  I’m so excited about this project- there’s nothing better than time in the kitchen with your kids!  Details to follow on this!

Third, I lost my job in genetics.  Our hospital can “no longer invest in expensive cutting edge technology due to the affordable care act”.  Thats a quote.  I struggled with what comes next and eventually (after much soul searching and prayer!) decided to move out to Arizona for the next 8 months to work alongside a church in the Navajo Nation.  I’m writing this blog from the comfort of a motel in Tucumcari, New Mexico.  I’ve driven about 1200 miles from home and I’m about 6 hours from my new home in Rough Rock Arizona.  My car is literally packed to the ceiling with things- about half of those things are supplies for baking, blogging and photography!  I’m hoping to continue creating and posting for all of you!

Strawberry Lemonade Cupcakes!!!!

Two years ago today, I started a blog.  I had no idea it would blossom into what it is today, and no idea I would have so much fun with it!  I’ve made such great new friends, learned so much about photography and design, and loved every second of the process.

In honor of our anniversary, I chose the recipe that is (by far!) the most visited on the site and re-made it in cupcake form.  Strawberry Lemonade Cake is already on the Easybaked site twice:

The Layer Cake is more like a torte, the lemonade mixture is more like a filling than a frosting.

The Birthday Cake has a lemonade frosting, and it is one of my very favorite frostings ever.  It’s soooo creamy and light.

Both recipes top the list of my most popular recipes, together they have been viewed just over 435,000 times (as of today…!)

It seemed fitting that I feature everyone’s favorite recipe to celebrate two years with all of you~ so let me present:  Strawberry Lemonade Cupcakes:

Strawberry Lemonade Cupcakes!!!!!

These are easy to make (much easier than a layer cake, in my opinion) and just the yummiest treat.  I loved the pink wrappers and the paper straws I found for these- I think they would be such a fun shower, picnic or birthday party treat!!

INGREDIENTS:

  • One box of strawberry cake mix (plus oil, water and eggs as directed on box)
  • 2- 8oz. packages of Philadelphia Cream Cheese (softened to room temp.)
  • 1 packet (0.23oz.) of Kool-Aid Lemonade
  • Yellow food coloring  (as desired for color)
  • 1- 7oz. container Jet-Puffed Marshmallow Creme
  • 1/3 c. powdered sugar
  • 8 oz. Cool Whip Topping
  • Confetti sprinkles and paper straws to decorate as desired

DIRECTIONS:

  • Make cake according to box and bake in 24 cupcake liners placed in cupcake tins, as directed.  Cool completely.
  • In a mixing bowl, cream together cream cheese, lemonade and yellow food coloring until smooth.
  • Beat marshmallow creme and powdered sugar into cream cheese mixture and then fold in Cool Whip until completely smooth.  
  • Spoon frosting into a zip top bag that has a piping tip inserted into one corner (I used a Wilton 1M star tip).
  • Pipe frosting on tops of each cupcake- you can be generous, as this recipe makes a lot of frosting and the frosting is so light and fluffy.
  • Decorate as desired.
  • Refrigerate and serve chilled.  
  • Enjoy!!!!!

Peppermint Ice Cream Pie

Creamy ice cream in a rich chocolate crust- a cold, refreshing and easy summer treat!

I love ice cream pie.  My mom has been making these since I was little.  It is less of a recipe and more of an idea because there is absolutely no baking involved.  By far, this is the easiest dessert ever posted on this blog.  Are you ready?

INGREDIENTS:

  • One half gallon of ice cream (any flavor- I used peppermint stick)
  • 2 pre-made chocolate graham cracker crusts.
  • One jar of hot fudge sauce
  • Cool Whip topping (if desired)

DIRECTIONS:

  • Spoon all of ice cream into a large bowl and mix until softened.
  • Divide the ice cream evenly between the 2 pie crusts, spreading it in evenly to fill each crust.

  • Cover and freeze overnight.
  • Top with drizzles of Hot fudge and some Cool Whip topping when you serve it!

My thoughts:  This is such an easy recipe to make ahead and keep in the freezer for a time when you need a dessert but don’t have time to make one.  Quick and easy and so refreshing and  yummy!  Enjoy!!!!!  -r

Mini Boston Cream Pies

These miniature Boston Cream Pies are the CUTEST treat!  Covered in chocolate glaze with a surprise yummy filling in the middle, these are sure to make you and your family smile!

When you are as obsessed with desserts as I am, you get really fun kitchen presents!  For my birthday last year, my friend Angie got me the most adorable Mini Cake Pan ever.  They are made by Wilton and they create cute little layer cakes that have a square of filling on the inside.  I love them and decided to use them with this Boston cream Pie recipe instead of just a plain old regular size cake.  If you want to try the pans out just click on Mini Cake Pan and you can see them on Amazon– if you don’t want another kitchen gadget (I totally understand the dilemma!) just make this recipe in two regular round cake pans- put the filling in the middle and just pour that glaze right over the top.

Ingredients:

  • One white cake mix (with water, oil and eggs to make according to box)
  • One box (3.4 oz) JELL-O instant vanilla pudding
  • 1 c. milk
  • 1 1/2 c. Cool Whip Topping
  • 2 c. semi sweet chocolate chips
  • 1c. unsalted butter
  • 1 T. corn syrup

Directions:

  • Make glaze 1st: Melt together chocolate chips, butter and corn syrup and mix well.  Refrigerate at least one hour.
  • Preheat oven to 350 degrees.
  • Make cake mix (whole egg method) according to box.
  • Spoon about 1/2 c. batter into each well greased Mini Cake Pan.
  • Place pans on a cookie sheet and bake at 350 degrees for 18-20 minutes.
  • Tip pans over onto a cake rack and allow cakes to cool completely.

  • Repeat process (one cake mix makes 4 to 5 full (two piece) cakes).
  • To make filling, combine pudding mix with milk and whisk for 2 minutes.
  • Fold Cool Whip topping in and set aside for at least 5 minutes.
  • Trim bottoms of cakes flat and spoon filling into each cavity.

  • Tip one cake on top of the other, keeping the filling in the center.
  • Remove glaze (it will be pretty thick) from the fridge and frost tops and sides of each cake.
  • Reheat remaining glaze and pour over the top of each cake to make a smooth outer layer (do this on a cake rack over a cookie sheet so excess glaze can drip through).
  • Chill until glaze is hard.




My thoughts:  I just served these last night and they were a huge hit.  Everyone loved how cute they were and the surprise filling in the center.  I loved the creamy filling with the rich glaze…YUM!  The glaze is a little difficult to get right (I thought!)  I was hoping for a smoother finish- but it tasted GREAT!  –Enjoy!!!!!!!  -r

Sweet Lime Tartlets

These tiny squares of graham crust filled with tart lime pie and whipped cream are a refreshing and fun party treat!

Yes, I finally got the Chicago Metallic Lift & Serve Squares Pan and I love it!  This recipe can be made as a plain lime pie in a pre-made graham crust (and it is really, really good)- but its just so CUTE made in these little squares– again, kudos to the creator of this pan- I love how the bottoms pop out and I’ve got so many fun ideas for this pan!

**Note: this recipe makes 24 squares.  Since the pan only makes 12 at a time you will need to use it twice.  I wanted to halve the recipe for you, but 1/2 a can of condensed milk AND 1/2 an egg???  Just easier to use the pan twice and have 24 pieces of yumminess!

INGREDIENTS: (double for a pie in a pre-made graham crust and eliminate crust ingredients)

  • 1 can of sweetened condensed milk
  • 1/2 c. lime juice
  • 1 egg
  • 9 full sheets of graham crackers (one sleeve or about 1 and 1/2 cups)
  • 1/4 c. sugar
  • 1/4 c. melted butter

DIRECTIONS:

  • Preheat oven to 325 degrees.
  • Crush graham crackers into fine crumbs and mix well with sugar and melted butter.
  • Place metal bottoms into each square opening in the pan and lightly spray with non-stick spray.
  • Scoop about 1 to 2 T of crumbs in each square well of the pan.  (You will have half left for your next batch).  Press into bottom and sides of each square using your fingers or a Mini tart shaper.
  • Mix together condensed milk, egg  and lime juice.  Spoon about 1 T of mixture into each crust (you should have half left).

  • Bake at 325 degrees for 15 minutes.  
  • Remove from oven, allow to cool, carefully press up on bottom- popping square dessert out of pan.  Remove metal bottom from crust. 
  • Repeat to make 24 total squares.
  • Chill several hours.  Top with whipped cream, graham crumbs, raspberries or other fruit— be creative!
  • Enjoy!!!

My thoughts:  This lime filling is simply delicious- the perfect blend of tart and sweet.  If you don’t mind the time involved, these squares are really cute– but if you just want a quick and easy dessert, buy a graham crust, double the filling recipe (2 cans of condensed milk, 2 eggs and 1 cup of lime juice).  Bake for 20 minutes instead of 15 and there you have it- yummy lime pie.  However you choose to make it, Enjoy!

 

Creepy Spider Cupcakes!

Make your kids smile with these friendly spiders on a frosting web.  The cupcakes are layered orange and purple- so much FUN!!!!

INGREDIENTS:

DIRECTIONS:

  • Make cake mix according to package.
  • Divide batter into two bowls and add food coloring to make two fun fall colors.  (if you want to make this recipe A LOT easier just make your batter one color.)
  • Layer each color twice in 24 cupcake liners in tins (or just pour it in if you’ve only got one color).
  • Bake according to package and cool.
  • While cupcakes are baking and cooling, spoon frosting into bowl and color.
  • Melt small amount of white candy melts, spoon into ziplock, clip corner and pipe small “eyes” on malted milk balls.  Add a small candy or nonpareil if you want.  Allow these to harden.


  • Frost cupcakes.
  • Melt about a cup of dark chocolate candy melts and spoon them into a ziplock.  Clip the corner and pipe a spiral on the top of each cupcake.  Use a knife or toothpick to pull from the center out through the spiral, making a web design.  If you need some visual aids click here.
  • Set one malted milk ball on the center of each cupcake.
  • Get ready for your guests to smile at these cute little spiders!

My thoughts:  I’m not going to lie…these are adorable, but they are some extra effort.  If you are planing a fun Halloween party and you have time to mess around with piping chocolate eyes you will love this recipe– but if you need something quick I’d hold off on this.  I would do this again in a second- it was fun and relaxing to decorate these and I love how cute they are– can’t wait to serve them!!!  Hope you have fun!!!! r-
