Fudge cookies for gender reveal party!

So my cousin Erika messaged me this week asking for ideas for a gender-reveal party she’s throwing this spring.  For those of you uninformed folks (as I was a week ago)– a gender reveal party is where you break the “It’s a boy/girl” news to all your friends and family at a fun party.  I say– what better way to deliver good news than in a dessert??!!??  So I went to work and I have several ideas you will likely see here in the coming weeks.

Idea#1— a recycled recipe tweaked for the occasion.  Remember my chocolate bonbons?  Fun little fudge cookies with a hershey kiss inside.   Instead of a kiss, how about colored white chocolate?  Here you go:

INGREDIENTS:

  • 40-50 Wilton candy melt pieces in BLUE or PINK
  • 8 oz. Philadelphia Cream Cheese
  • 1 bag (12 oz) semi-sweet chocolate chips
  • 2 c. all-purpose flour
  • 1 t. vanilla
  • Additional Wilton White Candy Melts
    for decorating as desired.

DIRECTIONS:

  • Soften Philadelphia cream cheese in microwave until completely smooth.
  • Melt chocolate chips in microwave in 30 second increments, stirring well in between.
  • Add cream cheese to melted chocolate and blend well.
  • Add flour and vanilla and stir into a thick dough consistency.
  • Flatten about 1 tbs. of dough in your palm, place 2 candy melts (flat sides together) in the center and gently wrap the dough around the melts until they are completely covered.
  • Flatten dough and shape into an Oreo shaped and sized cookie and place on an un-greased cookie sheet.
  • Bake cookies at 350 degrees for 8-10 minutes.
  • Remove warm cookies from cookie sheet and place on parchment paper (they will be a little greasy on the bottom, the parchment paper helps with this)
  • Decorate as desired- I dipped the entire top of the cookie in melted white candy melts and then piped two small circles on the top.  Dragging the tip of a toothpick through the circles while they are still melted makes them into hearts (aww….)  Easy and fun!

Not expecting a baby?  Make these with pink or red melts inside and pink and red hearts on top for a fun and festive Valentines Day treat!

Cupcakes for Casper :o)

Two years ago- almost to the day- I brought home a puppy destined to be my best friend- his name is Casper.

This past thanksgiving weekend I was sent a picture via facebook by my friend Mimi.  Mimi is spending a year studying in England and I’ve NO idea where she found this picture- but it made me laugh and I KNEW that someday  I would make this dessert:

(I did try to find the original source of this picture and I just couldn’t– so my apologies if it is yours.  I always try to credit a source but just couldn’t find it!)

My biggest concern with these cupcakes was of course the tremendous amount of icing on them—YUCK!  I decided that mini cupcakes turned upside-down on top would bump up the center and reduce the amount of icing needed.  My second concern was the icing itself.  A heavy buttercream would work- but a little of that goes a long way.

After making my last dessert- Chocolate Mousse Cake, I realized that the filling “mousse” layer was the PERFECT consistency for these cupcakes.  A light whipped frosting that is still thick enough to keep its shape.  Once I’d decided on the frosting I created my own:

THAT one looks good!

Yum! I need a bite of that!

 

Here’s how I made them:

INGREDIENTS:

  • One box of white cake mix (I use Duncan Hines) with water, oil and eggs to make according to package.
  • One box (4 packets) of Dream Whip Whip (find it by the pudding boxes- or order multiple boxes online for a better deal)
  • 1 1/2c. cold milk
  • 1 c. powdered sugar
  • mini M&Ms or black/brown icing coloring.

DIRECTIONS:

  • Make cake according to package and make as cupcakes.  Only make about 16-18 cupcakes though and use the rest of the batter in a lightly greased mini-muffin tin to make 16-18 mini cupcakes (with no liners).
  • While cupcakes are baking make frosting.
  • Combine Dream Whip, milk and powdered sugar in a large bowl and beat on high until it is very stiff (whipped frosting consistency).  Refrigerate until use.
  • Cool cupcakes completely and then level the tops with a serrated knife

  • Divide about 2/3 of the frosting off into a zip-top bag that has a corner clipped off and a decorator tip inserted in the opening.  Refrigerate.
  • If you aren’t using mini-M&Ms for eyes and nose, pull about 3T of frosting out and color it black or brown with icing color.  Place this in a zip-top bag as well with a tip inserted.  Refrigerate.
  • Use the rest of the frosting to frost the top of each large cupcake.  Tip the mini cupcake upside-down on top and frost that as well.

  • Using the bag of icing with the decorator tip, pipe icing on making little points coming up from the cupcake.  make a larger dollop of icing for the nose and two off the top and folding over a bit for ears.

  • Take the bag of black icing (or your mini M&Ms) and make eyes and a nose.

  • Keep refrigerated until serving

My thoughts:  You could certainly use a couple of cans of frosting for this if you want.  The light whipped frosting is SO tasty though.  These cupcakes are easy but time-consuming.  I’m no cake-decorator, so I loved that these are so free-form….just have fun!

Chocolate Mousse Cake

This wonderful cake recipe is courtesy of my Uncle John.  He has made this cake for family gatherings for years now and it is one of my favorites.  I think I’d have tried it sooner if I’d known how EASY it is.  There’s nothing better than a really easy dessert that looks this fancy!

INGREDIENTS:

  • 1 boxed chocolate cake mix- I like Duncan Hines!  (with oil/eggs/water to make according to directions)
  • 2 packets of Dream Whip (I’d never heard of this– it comes in a box and was near the jello/pudding boxes at the grocery.  There are 4 packets per box, and if you order them in a 6-pack at Amazon they are much cheaper than in the store.)
  • 3/4 c. milk
  • 1 t. vanilla
  • 3T. cocoa powder
  • 3T. powdered sugar
  • one container of pre-made chocolate frosting.

DIRECTIONS:

  • Make cake mix according to box and bake in 2 – 8 or 9 inch round pans (I cut parchment paper to fit and place it in the bottom of each pan so that it comes out easier).
  • Cool cakes completely on a wire rack and while they are cooling make your mousse.
  • Put Dream Whip, milk, vanilla, cocoa powder and powdered sugar into a mixing bowl and blend together.
  • Using a mixer, beat until stiff peaks form (3-4 minutes)
  • Scoop chocolate frosting into a microwave safe bowl and heat for only about 20-30 seconds in the microwave.  Heat until frosting is melted into a hot fudge consistency.
  • Use a large serrated knife to level your two cakes.
  • Place 1st cake on serving plate, leveled edge up.
  • Pour about 1/4 of melted frosting on top of cake and spread to cover (I put this layer in the fridge for about a minute just to cool the warm frosting down before adding the mousse layer)
  • Spoon all of the mousse on top of the cake and spread it ALMOST to the edges.
  • Top with second cake– put the leveled edge against the mousse…this keeps all the crumbs in the middle and leaves a nice flat surface on the top of your cake. Gently press top layer down to squeeze the mousse all the way to the edges.
  • Pour the rest of the melted frosting over the entire cake and let it drip over the edges.
  • Refrigerate until serving.

My thoughts:  WHO KNEW you could melt frosting and make such a wonderful fudge-like topping?  Learn something new every day.  Uncle John sometimes adds peppermint extract to the mousse– so yummy– and I had the thought while I was making this that a layer of raspberry preserves somewhere in the middle would be amazing.  I think you will just love this mousse.  It is so creamy and flavorful.  

If you live in Africa and cant find Dream Whip PLEASE don’t ask me what to substitute– I have no idea what this stuff is…it’s MAGIC 🙂 and I love it!

Peppermint Chocolate Drops

I love new products in the grocery store. Love them.  Last week, on an end cap there was something intriguing: Jet-puffed Mallow Bits by Kraft.  My store had them in plain and peppermint.  They are exactly like the tiny crunchy marshmallow bits found in hot chocolate packets….but in sprinkle form (and in yummy peppermint!).

I tossed a container in my cart and immediately began to daydream about all the wonderful things I could put them in….these cookies are just the beginning….don’t be surprised if you see these little pieces of crunchy happiness in another post soon.

These little chocolate drops have a rich cocoa flavor.  They are just FULL of mini chocolate chips and gooey peppermint marshmallows….   *love*

INGREDIENTS:

  • 1 c. margarine
  • 1 1/4 c. sugar
  • 2 eggs
  • 1/2c. cocoa
  • 2-3 c. flour
  • 1 t. baking soda
  • 1/4 t. salt
  • 2 c. mini chocolate chips
  • 2 c. Mallow Bits in peppermint

DIRECTIONS:

  • Preheat oven to 350 degrees.
  • Line cookie sheets with parchment paper.
  • Cream together margarine and sugar.
  • Use a mixer to beat margarine and sugar together for 2 minutes on medium until fluffy.
  • Beat in eggs, one at a time.
  • Beat in cocoa.
  • Add flour, salt and baking soda and mix by hand (dough will be very thick).
  • Add chocolate chips and mallow bits.
  • Knead dough together until smooth (add more flour if too sticky to knead)
  • Roll teaspoons of dough into balls and place on parchment paper on a cookie sheet. (I use a Small Cookie Scoop to make my cookies all the same size)
  • Bake at 350 for 8-10 minutes.
  • Cool on parchment paper.

These are the perfect party cookie and just in time for Valentines day!  Enjoy!

Favorites of 2011 and Happy Birthday to me!!!

It’s the last day of 2011.  This year I started a blog (!!) and met all of you– what a fun year!

Easybaked began in March at the urging of many friends…. since then I have become a fan of many of your blogs and marveled at your creative recipes, beautiful photos and funny stories.

It is also my birthday this week, and in pursuit of the perfect birthday dessert I decided to take a trip down memory lane through some of my favorite recipes, photos and blogs this year.

Here we go:  my best from 2012:

Greg from Rufus’ Food and Spirits Guide has encouraged me from almost day one of starting this blog- although we’ve never met, its been fun to share blogs!  Here’s one of his posts that I tried and loved:  Butterfinger Cookies!

Aimee from Clever Muffin  cracks me up!  When I met her she was living in London (so cool) and now she has moved back to Australia (even cooler!) Her yummy muffin recipes are great- but her sense of humor is even better– this is a blog worth following for sure!!  Here’s her Chocolate Chip Yogurt Muffins:

Christine from Angry Cherry is from Canada– and she’s a pastry chef in training (jealous!)  she makes beautiful things with ingredients I’ve never heard of, but I love how adventurous she is in pursuing her dreams.  Red Wine Truffle Cake from her:

Since I’m addicted to photography these days, I am drawn to blogs with jaw-dropping photography.  My favorite is Bravetart (plus, WHAT a fun name!)  The recipes are from Stella, a pastry chef and the photography is done by a variety of friends who are professional food photographers (dream…..!)  I just stare at the photographs and try to understand the angles and lighting….I really need to take a class.  In any case, here is her version of Red Velvet Cake (please come to my house and make this for my birthday….!)

My favorite cake decorators are the Davis sisters (and mom).  They have taken a hobby and turned it into a serious business and FUN blog- Happily Ever After Cakes!!  I am amazed by how many different types of cakes and cupcakes they are willing to try.  Here’s one of my favorites (I want to live on this cake!) a day at the beach (yes…this is a CAKE!)

I’m sneaking a favorite non-food blog into the lineup:  this blog is one of my favorite sources of inspiration and encouragement.  A good friend of mine is a chaplain with the military.  He’s deployed right now and shares his thoughts on a blog called Devos by Chaps….love it!

Last, but certainly not least is the cake I would choose to have on my birthday if someone else would make it…Its from The Art of Dessert and I think the picture speaks for itself…wow.  Let me present: Chocolate Wasted Cake:

I also went through the archive of all the recipes created on easybaked this year.  The one recipe I couldn’t  get out of my head (I think because I wish it was summer out!) was Strawberry Lemonade Layer Cake.  A summer cake for a cold January birthday— perfect!  I tweaked the frosting recipe just a bit to make it thicker so that it would be more of a frosting than just a filling…and I LOVE it!!  Its light, whipped, very spreadable and tart with lemon — perfect!

INGREDIENTS:

  • One box of strawberry cake mix (plus oil, water and eggs as directed on box)
  • 2- 8oz. packages of Philadelphia Cream Cheese (softened to room temp.)
  • 1 packet (0.23oz.) of Kool-Aid Lemonade
  • Yellow food coloring  (as desired for color)
  • 1- 7oz. container Jet-Puffed Marshmallow Creme
  • 1/3 c. powdered sugar
  • 8 oz. Cool Whip Topping
  • Rainbow sugar crystals

DIRECTIONS:

  • Make cake according to box and bake in 2- 9 inch round cake pans as directed.  Turn finished cakes over on cake racks and allow to cool completely.
  • Cream together cream cheese, lemonade and yellow food coloring until smooth.
  • Beat marshmallow creme and powdered sugar in and then fold in Cool Whip until completely smooth.  
  • Cut each cake layer in half.
  • Alternating layers of cake with layers of frosting, assemble cake.  
  • Cover top and sides with frosting.
  • Refrigerate and serve chilled.  Sprinkle with colored sugar just before serving.

A light and refreshing dessert after all the heavy holiday treats– perfect!

Raspberry Confetti Kisses

Happy New Year!!!!

Nothing says New Years Eve like confetti, and these crisp melt-in-your-mouth raspberry cookies will be everyone’s party favorite!!!

INGREDIENTS:

  • 3 egg whites
  • 1/8t. salt
  • 3 1/2 T. raspberry Jell-O
  • 3/4 c. sugar
  • 1T. vinegar
  • Confetti sprinkles

INSTRUCTIONS:

  • Preheat oven to 250 degrees
  • Beat egg whites with salt until foaming.
  • Add Jell-O and sugar as you beat mixture and beat until it stands in peaks.
  • Add vinegar and gently mix.
  • (if you want, you can add a few mini chocolate chips at this point! yum!)
  • Spoon or pipe into small circles on a cookie sheet covered in parchment paper.
  • Sprinkle with confetti sprinkles or jimmies.
  • Bake at 250 degrees for 25 minutes, turn oven off and allow to sit for an additional 20 minutes.
  • Remove from oven and allow cookies to cool completely.

My thoughts: These are great with chocolate chips in them if you like raspberry and chocolate together. I opted for confetti for a fun New Years treat!  These are like cotton candy- light and fluffy sugar that melts in your mouth and is a tiny bit chewy at the end.  A unique and fun “end-of -the-year” party cookie.

Hot Chocolate Pops!

You’ve heard of cake pops, cookie pops, brownie pops, doughnut pops and even pie pops— but have you ever tried a Hot Chocolate Pop?  Creamy chocolate surrounding a marshmallow surprise center- pop it into a cup of hot milk and YUM- a perfect yummy creamy cup of cocoa.  Wrap them up and they make the PERFECT winter gift!

Ingredients:

  • Wilton White Candy Melts and Wilton Dark Candy Cocoa Melts.  You will need about one 12 oz. bag per 8 pops.
  • Marshmallows (one for every pop you intend to make!)
  • Stir sticks (I found these cute dowels at Michaels)
  • Small plastic cups (I used 3 oz. clear plastic cups by Solo)
  • Clear plastic bags I used Wilton Lollipop Bags -they are so easy- perfect size and come with a bow!
  • Cute tags– use mine if you want or make your own!! 🙂

Hot Chocolate Pop Labels

Hot Chocolate Pop Labels- Instructions for use.

Instructions:

  • Melt candy melts in the microwave in 30 second increments, stirring between until smooth.
  • Spoon melted candy into a zip-top bag and seal.
  • Clip a corner off and squeeze about a teaspoon of chocolate into the bottom of each cup.  Tap cup against counter to spread chocolate and remove bubbles.
  • Place cups in the refrigerator for about 5 minutes until chocolate is hard.
  • Press dowels or stir sticks into marshmallows
  • Squeeze about 2 teaspoons of chocolate (I used a contrasting color) into cup and while it is still melted, press marshmallow into cup (this will squeeze the chocolate up along the sides of the cup.) Tap to remove bubbles.
  • Top with chocolate until marshmallow is completely covered -or—
  • (If you are using contrasting chocolates) Refrigerate about 10 minutes until second layer is hard and then add contrasting chocolate over the top, completely covering marshmallow.
  • Place cups in fridge for about 30 minutes to an hour.
  • Clip top of cup with scissors and tear it down the side which will release the pop.
  • Serve or gift wrap!  Enjoy!!!
  • To eat pop: Use a BIG mug (20 oz.) and heat up about 10oz. of milk in it.  Place pop in hot milk and stir until smooth and creamy!

My thoughts:  I love these so much…I love to come up with fun and creative edible gifts each year for giving in bulk (Bible studies, family get-togethers, hair stylist etc…) and these are just FUN!!!  I am wholeheartedly a blonde and my 1st use of these involved a full cup of hot milk plus a pop -resulting in  a huge lake of hot milk on the counter…so learn from me and use a big cup with room in it for the pop- lol!  

Also– I found MINT Wiltons candy melts and that is how I got the mint cocoa flavor.  I just added a little layer of green candy melt before I put lots of white melts and a marshmallow– I like how it turned out!  I wish I’d thought to take pictures as I went for you- I just forgot!  (NOTE: see below!!) Experiment with colors and flavors- these are pretty forgiving projects!

Ok– I had to make a second batch because I ran out.  Since I was making them again I took the time to take some pictures for you of the process:

Clip the top of the cup and tear down the side to release. (I used paper cups too this second time and they worked great– you just have to peel them off a little more.)

Pecan Pie Cookie Cups

Dark chocolate and pecans baked in a soft sugar cookie cup–yum!

INGREDIENTS:

  • One tube of Pillsbury Refrigerated Sugar Cookie Dough
  • About 2 cups of pecan halves
  • 2/3 c. dark chocolate chips (I use the Ghirardelli 60% Cacao Bittersweet Chips)
  • 1 T. corn syrup
  • 1/4 c. heavy whipping cream

DIRECTIONS:

  • Preheat oven to 350 degrees.
  • Spoon about 1 T. of cookie dough into a ball in 24 mini-muffin cups.
  • Press into bottom and sides of cup (I use a Mini Tart Shaper )
  • Place one pecan half in the bottom of each cup.
  • Chop one cup of pecan halves into tiny pieces.
  • Mix together chopped pecans, corn syrup, whipping cream and melted bittersweet chocolate.
  • Use a zip-top bag to pipe pecan mixture into cups (just clip a nice big corner off so that the pecan pieces can fit through!)
  • Top with another pecan half
  • Bake at 350 degrees for about 16-18 minutes.
  • Allow cups to cool completely in pan.
  • Once completely cool, twist each cup a bit to free it from the pan and removeMy thoughts:  I usually love my experiments…but I didn’t really like these (just being honest here…)  My friends and co-workers LOVED them though…  I think I just needed milk chocolate instead of the bittersweet.  I need my sweet!  These were a huge hit though- so the bittersweet apparently works for most people.  ENJOY!!

Chocolate Cut-out Cookies

These easy-to-make chocolate cut-outs can be used to create so many wonderful Christmas treats.  Here, I used Christmas Linzer Cookie Cutters to make fun Christmas sandwich cookies.  These rich, cocoa-flavored cookies just might be your family’s new favorite cookie!

INGREDIENTS:

  • 1/4 c. margarine
  • 1/2 c. brown sugar (packed)
  • 1/4 c. cocoa powder
  • 1 T. milk
  • 1/4 t. baking soda
  • 2/3 to 1 c. flour

DIRECTIONS:

  • Preheat oven to 375 degrees
  • Beat together all ingredients but soda and flour, mixing until smooth and creamy.
  • Add soda and flour.  Add flour until dough can be handled and rolled into a ball.
  • On a lightly floured surface, roll out dough and cut. Place cookies on ungreased cookie sheet.
  • Bake for 5 to 6 minutes.
  • Allow cookies to cool on cookie sheet completely.
  • Gently remove  and decorate. I used Wiltons Candy Melts between my sandwich layers, but you could use frosting as well

My thoughts:  These have such a wonderful cocoa flavor and they are very easy to make.  They roll out nicely and bake without rising too much.  If you are using a Linzer cutter, make sure you don’t roll your dough too thin- the top cookies (the ones with the shapes cut out) may break once they are baked.  Thicker worked better for me.

Also– this is a small batch of cookies.  If you are making sandwich cookies like mine you will only get about 20 cookies.  You can easily double the recipe for more though.  I hope you and your family love these– enjoy!

Spiced Mocha Mix (and how to do a TimTam SLAM!)

This spiced mocha mix is a perfect gift or party treat.  Its also the perfect hot beverage for Tim Tam SLAMS!

INGREDIENTS:

  • 1 cup dry non-dairy creamer
  • 1c. hot cocoa mix
  • 2/3 c. instant coffee
  • 1/2 c. sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

DIRECTIONS:

  • Combine all ingredients together in a big bowl.
  • Add 3-4 heaping tsp. of mix to 8 oz. of hot water to serve.
  • Or…put mix in a fun jar or tin to give as a homemade gift!

You can use Splenda for the sugar, decaffeinated instant coffee and low-fat hot cocoa mix for a guilt-free treat!

 

How to do a Tim Tam Slam.

What are Tim Tams?   They are a chocolate cookie that (I’m told) originated in Australia.  In America they are made by Pepperidge Farm and they are a wafer/mousse cookie covered in chocolate.

To do a Slam:  Bite off the corners on two opposite sides (diagonal from each other).  Place one bitten off corner in a hot chocolate or mocha and drink up some of the hot beverage through the other bitten off corner– pulling the hot beverage up through the cookie like a straw.  Pop the WHOLE cookie in your mouth and it EXPLODES in warm gooey chocolate happiness! 🙂  (If you don’t pop the whole thing in your mouth you will have chocolate running all over you…just FYI).  In our area, Tim Tams are only available near Christmas, so Tim Tam Slams have become a fun Christmas tradition!
