Pancake and Bacon Cupcakes!!!

Pancake Cupcakes!!!!These sweet maple pancake flavored cupcakes are topped with syrup-coated bacon and real mini-pancakes.  The only question remaining is, will you eat them for breakfast???

My answer to that question is a resounding YES, I will eat them for breakfast, and any other time of the day too!

Did you know that today is National Pancake Lovers Day???  There is no better way I know of to celebrate pancakes than by making these!  [Plus, Monday is National Coffee Day, and believe me these go GREAT with coffee!]

Pancake cupcakes with coffeeThese cupcakes were a complete experiment, and when they came out of the oven and I tentatively tasted one, I smiled. They taste like pancakes- they really do!  Here’s how we made them: (printable recipe)

INGREDIENTS:

Cupcakes:

  • 2 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup sugar
  • ½ cup butter, melted
  • 1/4 cup whipping cream
  • 2 eggs
  • 3 teaspoons vanilla
  • 1/2 cup maple syrup (I didn’t use the real stuff– too expensive!)

Frosting and toppings:

  • 2 sticks (1 cup) of salted butter, softened
  • 2 sticks (1 cup) of unsalted butter, softened
  • 3 cups powdered sugar
  • 2 teaspoons of vanilla
  • 8 pieces of bacon, cooked until very crisp
  • 1/4 cup of maple syrup
  • Pancake batter- enough for about 50 mini pancakes (I used the add water and shake Bisquick bottle, and it took about 2 cups of batter to make these up.

DIRECTIONS:

Cupcakes:

  • Combine all dry ingredients and mix in medium bowl
  • In large bowl, whisk eggs, whipping cream and vanilla together, add melted butter slowly while whisking.
  • Alternately add dry ingredients and syrup to the egg mixture, whisking until thick and smooth.
  • Scoop evenly into 18-20 cupcake liners placed in muffin tins. Don’t overfill!
  • Bake at 350F degrees for 14-18 minutes, until a toothpick inserted into the center comes out clean.
  • Remove cupcakes from tin and allow them to cool completely.

Frosting and toppings:

  • Crumble bacon into small pieces and toss with maple syrup until completely coated.
  • Make mini pancakes on a hot griddle by using a small spoon and making just a tiny circle of batter.  Let these cool on a piece of parchment paper.
  • Make frosting by placing butters, powdered sugar and vanilla in a mixing bowl and beating on high for 3-4 minutes until very light and fluffy.
  • Place frosting into a large zip top bag that has a decorating tip fitted into one corner.
  • Pipe a circle of icing around the edge of the cupcake.
  • Sprinkle with bacon.
  • Place pancakes on top, using a small amount of frosting to stick them together into a stack.  
  • Add a dollop of frosting on top and add sprinkles or a red “cherry” sixlet, like mine.
  • ENJOY!!!!



Pancake Cupcakes!!!My thoughts:  These are really good.  The sweet cupcake with that salty bacon….yum!  I was a little skeptical about the bacon, but it really adds a wonderful flavor to these!  If you are short on time, skip the mini pancakes on top and just frost these and sprinkle them with bacon.  You could even use a bottle of those real bacon bits, but I suspect that the freshly cooked bacon tastes best.  Happy Pancake Day to YOU!!!  Enjoy!! ~r

Cheesehead Cupcakes!

Cheesehead Cupcakes!!!!!These colorful Green Bay Packer CHEESEHEAD cupcakes are the perfect treat for game day!!!  Make them in YOUR team colors and start the season off with some fun!

Today is the day!!!!  NFL football season starts!!!!  Tonight it’s the Packers vs. Seattle (GO PACK GO!!!!!!!), and I had to add some cheese on these fun little cupcakes to make them just perfect!

Wait— what’s inside?  That’s what makes these so much fun!!!!!

Green Bay Packer Cupcakes!A little splash of team color hidden in the middle.  You can make these in any team colors you want- but if you make them for the Chicago Bears or the Detroit Lions you will need this tutorial here to make your cupcake toppers. 🙂

Here is how we made these: (printable recipe)

INGREDIENTS:

  • One boxed white cake mix (plus water, oil and eggs to make according to box)
  • Green and gold food color gels (or your team colors)
  • 2 sticks (1 cup) of salted butter, softened
  • 2 sticks (1 cup) of unsalted butter, softened
  • 3 cups of powdered sugar
  • 1 teaspoon of vanilla (or any flavoring you’d like to add to your frosting)
  • 1 bag of Wilton’s candy melts in yellow (if you want cheesehead toppers!!)  You will also need little triangle chocolate molds for these.

DIRECTIONS:

  • Make cake mix as directed on box, and take about 1/4 of the batter and mix it with yellow food color gel.
  • Using a cake pop maker or a small mini muffin tin, make 24 small, baked balls of cake in yellow. (click here for pictures of how to make these cake balls)
  • Color remaining batter with green food color gel.
  • Preheat oven to 350F degrees.
  • Spoon a little bit of green batter into 24 cupcake liners placed in muffin tins.
  • Place one cake ball in each cavity in the center of the green batter.

Cheesehead Cupcakes!!!

  • Carefully spoon more green batter over the top of each yellow cake ball, filling each cup only 2/3 to 3/4 full (be careful to not over-fill. That is easy to do when you are focused on covering up that cake ball!)
  • Bake at 350F degrees for 15-18 minutes.
  • Allow cupcakes to cool completely.
  • Make frosting by placing butters, powdered sugar and vanilla in a large bowl and beating on high for 3-4 minutes until light and fluffy.
  • Divide frosting in half and color one half gold and the other half green. Place each color in a zip top bag that has been fitted with a decorating tip.
  • Pipe yellow icing on 1st followed by green and top with a bit of cheese!!!!!

Yes, that is a tire pressure gauge…..

  • Melt yellow candy melts in a microwave-safe bowl, in the microwave, in 30-second increments, stirring in between.
  • Put candy melts into a sturdy zip top bag, clip a corner and pipe into triangle candy molds.
  • Tap on counter to remove bubbles, and place in the freezer for 5 minutes, or until completely hardened.
  • Turn mold upside down and tap on counter to remove chocolate.
  • Repeat this process.
  • Allow the triangle chocolates to return to room temperature, and use whatever you find handy to put “holes” in your cheese.  I used a (cleaned in hot soapy water) tire pressure gauge for mine.  Let’s hear it for problem solving in the kitchen!!!!!!

My thoughts:  These are just plain fun.  I recommend using a cake pop maker for the center circles.  It really does take less time and it makes the most adorably round little cake balls.  Plus you can make a Polka-Dot cake with it too!!!  I hope you get a chance to celebrate your team with these fun and colorful cupcakes!!!  IT’S FOOTBALL SEASON!!!!!!

Piña Colada Cupcakes!

Pina Colada Cupcakes!

 These pineapple cupcakes are full of coconut and rum flavored happiness.  A perfect pool party treat!

Aren’t these just the cutest little things?  I love the flavor combination of coconut and pineapple, it is such a refreshing taste!  The light whipped frosting on these, combined with the crunch of toasted coconut makes them such a delicious summer treat!  I even added a cute little edible coconut drink topper that I found on Party Pinchers.  So. much. fun!!!!

Pina Colada Cupcakes!!

INGREDIENTS: (printable recipe here)

  • 1 boxed pineapple cake mix (I used Duncan Hines), plus water, oil and eggs to make according to box directions.
  • 5 cups of shredded, sweetened coconut
  • 3 teaspoons of rum flavoring (divided)
  • 2 teaspoons of coconut flavoring
  • 2 sticks (1 cup) salted butter (softened to room temperature)
  • 2 sticks (1 cup) of unsalted butter (softened to room temperature)
  • 3 cups of powdered sugar
  • Decorations (as desired)

DIRECTIONS:

  • Preheat oven to 325F degrees
  • Spread 5 cups of coconut out on a large baking sheet that has edges.
  • Toast in 5 minute increments, stirring with a big spoon to evenly toast (It usually takes me about 20 minutes)
  • Allow coconut to cool, then place in a large zip-top bag, and crush into smaller pieces.
  • Make cake mix according to directions on box, and after it is made, add one cup of crushed, toasted coconut and mix completely into batter.
  • Add 2 teaspoons of rum flavoring and stir completely into batter.
  • Divide batter evenly into 24 cupcake liners placed into tins.
  • Bake according to package directions and cool completely.
  • To make frosting, place butters, coconut flavoring, remaining rum flavoring, and powdered sugar into a large mixing bowl and beat on high for 3 or 4 minutes until very light and fluffy.  Add one cup of crushed, toasted coconut and stir until well blended.
  • Use a spoon or a cookie scoop to place a rounded scoop of frosting on the top of each cupcake.  
  • Place the rest of the crushed coconut into a small bowl, and turn each cupcake upside down into it, pressing coconut into the top and sides of each scoop of frosting.
  • Decorate as desired. I found these cute little edible “coconut cups” on a site called Party Pinching, and I couldn’t resist making them for my pina colada cupcakes!  You just cut the tops off of a Whoppers malted milk ball, put a dab of melted white chocolate and add little flower sprinkles and a bit of string licorice.  FUN!

My thoughts: I really thought these captured the flavors of coconut and pineapple in a perfect combination.  I loved the little crunchy bits of coconut in the cake and frosting.  These are such a festive cupcake and make a perfect refreshing summer or vacation dessert for all ages!

Root Beer Float Cupcakes!

Root Beer Float Cupcakes!!!!These cupcakes capture all the summer flavors of a root beer float~ all you need is a frosty mug!

People ask me a lot about if I would ever open a bakery, and I always say no.  I can’t imagine making hundreds of the same thing every day.  My favorite part of baking is the process of creating something new.

I thought about this recipe for a long time.  I wanted root beer in the cupcake and root beer in the frosting, but how to create that “scoop of ice cream” flavor without actually using ice cream?  I sometimes cheat in my photos by using scoops of frozen cool whip instead of ice cream.  It melts slower and keeps a scoop shape longer under the heat of my photography lights.  I decided to try Cool Whip as my scoop of ice cream for these cupcakes.

Oh my.  If I could jump up and down and point giant neon arrows toward this cupcake recipe I would.  These are so, sooooooooooo good. You need to make these!!!  They even use a cake mix, so they aren’t horribly complicated.  That Cool Whip…with the root beer buttercream…. perfect.

Root Beer Float Cupcakes!!!Here’s the recipe: (printable version)

INGREDIENTS: (makes 24-26 cupcakes)

  • One boxed white cake mix, plus water, oil and eggs to make according to package.
  • 1 cup of root beer
  • 5 teaspoons of root beer concentrate (divided)
  • 1 stick (1/2 cup) of salted butter (softened)
  • 1 stick (1/2 cup) of unsalted butter (softened)
  • 1 1/2 cups of powdered sugar
  • 2 tubs of Cool Whip (frozen)
  • Sprinkles and straws (optional)

DIRECTIONS:

  • Make white cake mix as directed on box.
  • After beating cake, add root beer and 3 teaspoons of root beer concentrate. Mix well until combined.
  • Place cupcake liners in muffin tins and fill each one only about 1/2 full (these cupcakes rise a bit higher than just a plain mix)
  • Bake according to package directions, remove from oven and cool completely.
  • Make buttercream by adding both butters, powdered sugar and 2 teaspoons of root beer concentrate to a mixing bowl and beating on high for 4-5 minutes until very light and fluffy.
  • Place frosting into a sturdy zip-top bag that has been fitted with a large round decorating tip in one corner.
  • Assemble cupcakes one at a time.
  • Use a medium cookie scoop and place a ball of frozen Cool Whip in the center of a cupcake.
  • Pipe round “bubbles” around it immediately, by squeezing the frosting out into a circle and then pulling straight out.

  • Only have one container of Cool Whip out at a time, and if it starts to get soft, switch it back into the freezer to harden up.
  • Keep these chilled until you serve them.
  • Just before serving, add some sprinkles and a straw for a root beer float feel!
  • Enjoy!!

Root Beer Float Cupcakes!!My thoughts:  Such a fun summer dessert.  It is actually very light and not too sweet because a lot of the topping is just Cool Whip.  I was really happy with how this experiment came out and I can’t wait to make them again!  Enjoy!!!!!

Bomb Pop Cupcakes!!!!!! Does anything scream SUMMER, or FOURTH OF JULY like Bomb Pops?  These adorable cupcakes capture the flavors of an iconic summertime popsicle and make a perfect holiday treat!

You know those memories from childhood that spring up unexpectedly and make you smile?  Bomb Pops have that effect on me.  My brother and I always spent a week or two at my grandparents house each summer.  They had an immaculately clean garage with a huge freezer in it.  Grandma would always keep a box of bomb pops inside for our visits.  I remember so clearly, sitting out on her porch eating these in the evenings, letting the drips of sweet popsicle land on the cement by my bare feet.  Every time I eat one, it’s like traveling back in time to those days.

I wanted to capture the flavors of these summer treats in cupcake form, and I love how these turned out!  The kids in my life who tried them exclaimed, “These taste like popsicles!”

 I consider that a success!

Bomb Pop Cupcakes!!!

These were not hard to make at all- simply add jello to white cake mix and pipe the batter into cupcake liners in layers.

Here’s how we made them:  (printable recipe)

INGREDIENTS:

  • One boxed white cake mix (with oil, water and eggs to make according to package)
  • One small box of blue raspberry Jell-O (Jolly Rancher had this flavor, and Jell-O has a Berry Blue that works)
  • One small box of Cherry Jell-O
  • 2 sticks of salted butter (at room temperature)
  • 2 sticks of unsalted butter (at room temperature)
  • 3 cups of powdered sugar
  • 3 teaspoons of lemon extract or flavoring (technically the flavor in the popsicles is lime…but I couldn’t easily get my hands on lime extract.  The lemon was great- but feel free to use lime instead, if you want!)

DIRECTIONS:

  • Preheat oven to 350F degrees
  • Make cake mix as directed on box, and divide batter equally into two bowls.
  • Add 3 Tablespoons of Blue Raspberry Jell-O to one bowl, and 3 Tablespoons of Cherry Jell-O to the other bowl.
  • Mix each bowl of batter until well combined
  • Place each flavor of batter into a large, sturdy (I use freezer-type) zip top bag.
  • Clip a corner off the bag of Blue Raspberry batter and evenly pipe into 24 cupcake liners placed into muffin tins.
  • Clip a corner off the bag of Cherry batter and evenly pipe over the top of the Blue Raspberry batter.
  • Bake cupcakes as directed on boxed mix, remove from oven, and cool.
  • Make frosting by combining butters, powdered sugar and lemon extract in a large bowl.  Beat on low until combined and then high, until light and fluffy.
  • Put frosting into a large, sturdy zip-top bag that has been fitted with a decorating tip, and pipe frosting on the top of each cupcake.
  • Decorate as desired.  I saw these cute little Mike and Ike “popsicle” toppers on a fun site called Party Pinching. They were fun and easy to make, but they use toothpicks and could be dangerous to serve- especially to kids.  I love how cute they are, but I can’t recommend them.  Use cute sprinkles and maybe a popsicle stick instead!

My thoughts: These were really easy to put together and the fruit flavors are so refreshing!  I love the patriotic colors too!

Just as a note: the blue layer of cupcake rises to the top, just a little bit, so don’t panic! You will still have nice layers of the two flavors.

Hole in One Cupcakes!!

Hole in One Cupcakes!!What do you get if you cut a hole in a cupcake and fill it with a Lindt white chocolate truffle?   A perfect Father’s Day treat!!!

These are guaranteed to make any golf-loving Father smile on his special day!  This one’s for you dad!  I can’t wait to see you in 2 weeks and go “golfing” (aka losing cute golf balls in ponds).

How is such incredible cuteness created, you ask?  EASY!  Make a chocolate cupcake, cut a hole in the top, and pop a Lindt white chocolate truffle inside!

Golf Cupcakes!!How fun and easy is that?  Here are the details (Printable recipe)

INGREDIENTS:

  • One boxed chocolate cake mix (plus oil, water and eggs to make according to package)
  • One tub of white frosting
  • One container (about 1 cup) of green sugar sprinkles
  • 24 Lindt White chocolate Truffles (I got 2 (5.1oz) bags that each had 12 truffles)

DIRECTIONS:

  • Make cake according to package and divide evenly into 24 cupcake liners placed in muffin tins.
  • Bake according to package.
  • Use a cupcake corer or a small knife (use a corer to get that perfectly round cut!) to cut a hole in the center of each cupcake.
  • Use a knife to carefully frost the top of each cupcake around the hole.
  • Press top of frosted cupcake into green sugar to coat it.
  • Place a truffle into “hole”.

  • Place a flag in each cupcake- you can print these on heavy paper and use double-sided tape to secure them to toothpicks.  Here are 2 files- Happy Father’s Day, and Blank (write your own message) flags.

My thoughts: I’ve used a cupcake corer on so many cupcakes to add fillings, and the last time I did it, this idea popped into my head!  I wasn’t sure how it would turn out, but as soon as I coated my 1st cupcake in that green sugar I knew it would be perfect!  Happy Father’s Day to all the dads out there- especially mine!!!!

BBQ Grill Cupcakes!!These chocolate cupcakes are topped with all the fixings for a grill out!  A perfect treat for Father’s Day or even a tailgate party (and as a Packer fan, I have lots of experience with those fun events!!!)

My dad is the best at grilling things.  Some of my favorite times are our family cookouts with dad at the grill.  I guess that’s why I smiled when I saw these on Pinterest the other day.  There are a ton of variations on these- they are all over the web.  There are steaks and burgers made out of caramels and candy bars.  There are shish-kabobs made out of Dots candy and Starburst.  I even saw goldfish crackers on the “grill”!  LOVE IT!

I stayed with Hot Tamales as little hot dogs, and they make me smile.  These are easy and fun, fun, FUN!!

BBQ Grill Cupcakes!!!Want to know how to make them?  Here’s the recipe: (printable version)

INGREDIENTS:

  • 1 box of Hot Tamales candies (if you hate cinnamon, you can use Mike&Ikes candy, but you’ll have to pick out the cherry ones).
  • Black gel food coloring
  • 1 cake mix (plus water, oil and eggs needed to make it according to the package)
  • 1 tub of chocolate frosting
  • Red sugar crystals 

DIRECTIONS:

  • Make cake mix according to package and divide into 24 cupcake liners placed in muffin tins.
  • Bake according to package, remove from oven and cool completely.
  • While cake is baking, use a toothpick and black food color gel to draw grill lines on the hot tamales.  I placed them on a paper towel to dry, so they wouldn’t roll.
  • Take about 1/3 of frosting out of tub, place it in a separate bowl, and add black food coloring gel  to make the frosting black.  Place this frosting into a small zip-top bag fitted with a small round decorating tip.
  • Once cupcakes have cooled, use a knife to frost a thin, smooth layer of the chocolate icing onto each cupcake.
  • Sprinkle a little red sugar in the middle of the cupcake frosting.
  • Pipe black frosting on in even lines to make the grill.
  • Set Hot Tamales on the “grill” top.
  • Enjoy!

My thoughts: These are SO easy to put together.  Adding other grill items would increase your time commitment, but with just hotdogs, these went together fast!  Of course, you can use your own favorite cupcake recipe and frosting recipe with these if you don’t want to go pre-made.  I was in a hurry this week, with lots of things on my plate: BIG NEWS coming soon!  So excited to tell you all what I’ve been up to!  In the meantime, make yourself (and your dad!) some little cupcake grills!  Enjoy!!!!  ~r

Flower Pot Cupcakes!!!


These cheery garden cupcakes have delicious raspberry cream filling

and fun flowers made of M& Ms!!!

HAPPY MOTHER’S DAY!!!!  This bit of cheer goes out especially to my mom this week.  I’m so far from home this year, that we will have to celebrate from a distance.

Aren’t these the cutest cupcakes ever?  I cannot take credit for the M&M flower idea, it was an idea I originally saw on a cute blog called Sara’s Shoebox.  She was copying the idea from a cookbook called “What’s New Cupcake“.  I do not own this cook book, but it is a sequel to one of my favorites, “Hello, Cupcake!”, by the same author.  In any case, Sara made hers with mini Oreos and I simply could not get mine to work with those..?  SO, I had seen marshmallows in pink lemonade flavor (who can walk by THAT without picking up a bag?) and I decided to use them instead.  They were a tiny bit too small, so I am going to recommend that you use full-size marshmallows for these.  I had to fiddle around with them awhile to get them to all stick.  I’m positive they will be easier on a full-size marshmallow!!

The cupcakes are an original though- I used a pink velvet cake mix, but you can use any flavor you like!  I filled them with a yummy raspberry cream and topped them with scoops of butter cream and either coconut or Oreos (um…I had a few of those left over from the flower attempt!)  Are you ready for a recipe for these???  Here you go: (printable version)

INGREDIENTS:

  • One boxed cake mix (in any flavor, with oil, water and eggs to make according to box)
  • One packet of Dream Whip
  • 1 cup of heavy whipping cream
  • 1/4 cup of berry jelly or jam
  • 2 sticks of salted butter (at room temp)
  • 2 sticks of unsalted butter (at room temp)
  • 3 cups of powdered sugar
  • 2 teaspoons of vanilla
  • 2 cups of shredded coconut (died green with food coloring) -OR- 2 cups of crushed Oreo Cookies
  • 24 pretzel sticks
  • Pastel M&Ms
  • 12 marshmallows
  • 1/2 cup of white Wilton’s candy melts

DIRECTIONS:

Flowers: I recommend making these ahead and storing them covered until you make your cupcakes.  They aren’t hard to make, but a little time consuming.

  • Take 12 marshmallows and cut them in half with clean kitchen scissors. Lay them on the counter with the cut side up to keep them from sticking to things.
  • Take a pretzel stick and wiggle it up into the side of each marshmallow.  
  • Melt candy melts in the microwave in 30 second increments, stirring between until completely melted and smooth.
  • The technique that worked best for me here was to lay my M&Ms out in a flower pattern (minus the center) on parchment paper, cover the sticky side of the marshmallow with candy melts and lay it (candy melt side down) on the flower until it dries.  Then I used a little of the candy melts to stick my center on.  Here’s some photos.

Just let those cute little flowers dry, and you are all set to make your cupcakes!

Cupcakes:

  • Make cake mix according to box and divide batter among 24 cupcake liners in muffin tins.
  • Bake according to box, remove from oven and cool completely.
  • Make filling by putting Dream whip powder and whipping cream in a bowl.  Mix on high until stiff peaks form.
  • Add jam or jelly and beat until well combined.  Place filling in a large zip top bag and keep refrigerated until use.
  • Core cooled cupcakes with a small knife or a cupcake corer.  I HIGHLY recommend the corer- it is super cheap and will save you time!
  • Cut a corner off the filling bag and squeeze filling into each cupcake.  
  • Place top of “core” that was removed back on top of cupcake.

  • Make buttercream frosting by beating butters, powdered sugar and vanilla together in a large bowl on high until it is light and fluffy and smooth.
  • Use a scoop to place a mound of frosting on each cupcake.
  • Turn cupcake upside down in either coconut or crushed Oreo to coat the frosting.
  • Now pop a cute flower in, and you have an adorable treat for all sorts of occasions!!

My thoughts:  These brought smiles to so many faces!  I often share my blog creations with various families and organizations here on the Navajo Nation.  These went to the Easter party at the Senior Citizen Center here.  I got many hugs and thank yous (Ahéhee’)
 from the recipients.  I also got to watch almost 100 seniors literally running to a huge Easter egg hunt!  So fun!!!

Rocky Road Cupcakes!

Rocky Road Cupcakes!!!!These chocolate cupcakes are filled with creamy marshmallow and topped with a rich ganache frosting, marshmallows and almonds! YUM!!!!!

These are fork-eating cupcakes!  You’ll love that combination of rocky road flavors in these rich and messy-to-eat cupcakes.

Rocky Road Cupcakes4I absolutely love this frosting.  I have used ganache for many recipes, but I’d never taken the time to whip it up into a frosting.  Now that I’ve tried it, I will be back for more- this frosting is so rich and chocolatey!!! Ready for a recipe?

INGREDIENTS:

  • One box of chocolate cake mix (with oil, water and eggs to make according to package)
  • One large jar (13 oz) of Jet-Puffed Marshmallow Creme
  • One bag of semi-sweet chocolate chips *
  • 1/2 cup of whipping cream *

(*double these two ingredients if you want to pile your frosting high like mine is)

  • One bag of mini-marshmallows
  • 1 cup of slivered or sliced almonds
  • a little white chocolate to drizzle on top, if desired

DIRECTIONS:

  • Start your frosting first, as it needs to chill before you beat it, and double the recipe if you want piles of frosting like mine.  I went a little overboard for fun pictures!! 🙂
  • Place 1/2 cup of whipping cream into a medium saucepan and heat it on the stove until the cream starts to bubble just a bit on the edges, stirring as it heats.  Turn off the heat, add the chocolate chips and cover for 5 minutes.
  • Stir melted chocolate and warm cream together until completely smooth (a “ganache”).  Put it in a medium bowl and refrigerate until it is a cool, spoonable consistency (30 minutes to an hour).
  • Make cake mix according to box, and divide equally into 24 cupcake lines placed in a muffin tin.
  • Bake as directed on box, and cool completely.
  • Core cupcakes using a small knife, or a cupcake corer.  I used the Chicago Metallics one, and for $4 there is just no reason to not get one- it makes filling cupcakes SOOOO easy!  Isn’t your birthday coming up???

So easy to core cupcakes!

  • Spoon entire jar of marshmallow fluff into a gallon-size zip-top bag and clip a corner off with scissors.  Squeeze the marshmallow into the middle of each cupcake and then trim a little of the core you removed and place the “lid” back on top of the filling.
  • Remove cooled chocolate ganache from refrigerator and beat on high until light and fluffy.
  • Place icing in a gallon size zip-top bag that has been fitted with a decorating tip in one corner, and pipe icing onto the cupcakes.
  • Decorate with almonds, and mini marshmallows.  I also added some mini chocolate chips (because I had some leftovers from another recipe) and I melted some white chocolate to drizzle on top.  Be creative and make these little marshmallow-y cupcakes irresistible!!!!

My thoughts:  These are FABULOUS cupcakes.  I love the gooey marshmallow creme surprise in the middle!  And that frosting….. oh my.  A few tips:  the frosting does harden up, so get those almonds and marshmallows placed in it as soon as you are done piping the frosting on.  This is good, because it holds all those yummy toppings in place!  Also, store these all sealed up.  You know what happens when you leave the bag of marshmallows open?  Yucky, rubbery, dried up marshmallows!  The same will happen if you just let these set out.
