Tepee Cupcakes!

Tepee CupcakesThese adorable little tepees are filled with yummy chocolate cake and are sure to make everyone smile at YOUR Thanksgiving feast!

Since I spent 8 months on the Navajo Nation and learned to love their culture and traditions, I thought I’d skip the Pilgrim themes and go straight for the Indians this Thanksgiving. My first trip out to the reservation I wondered if Tepees were even used by the Navajo. They are- but only for special ceremonies. The Navajo traditionally lived in round or multi-sided structures called hogans.

Here is a picture of a ceremonial tepee and of my friend Rod by his family’s hogan.

I had quite a time making these cute little desserts, but I hope that my experimenting will help you make this perfectly the 1st time! They really aren’t difficult once you figure out what the best system is! I will give you my recipe 1st (that’s what you’re here for, right??) But after the recipe I will share my trials and tribulations in the process!

Here’s how to make these cute little treats: (printable recipe)

INGREDIENTS:

  • 24 pointed ice cream cones
  • One boxed cake mix in chocolate (or any flavor you like!), plus water, oil and eggs to make according to box.
  • One bag (12 oz) of Wilton Candy Melts in dark chocolate.
  • Leaf sprinkles (at least one to two cups of them)
  • Straight pretzel sticks
  • DIRECTIONS: 
    Cover the entire top of a large springform pan with aluminum foil, wrapping it around several times.
  • Use a small knife or scissors to make a tiny slit in the center.
  • Push the pointed tip of one ice cream cone through the slit until the tip rests on the inside bottom of the pan.
  • Repeat this with the rest of the cones (depending on the size of your pan you may need to bake these in two batches).

Update 11.17.25!!! New equipment has been created that you can use to bake cones. You can still use the above method to bake these if you don’t wish to purchase anything new, but Wilton has created a cone holder just for this purpose. Find it here

Directions (continued)

  • Preheat oven to 350F degrees.
  • Make cake mix according to box, and spoon or pipe into cones, filling them about 2/3 full.
  • Bake at 350F degrees for about 15-20 minutes.
  • Allow them to cool before removing.

Ice cream cone cupcakes

  • Use a knife to cut the points off of each cone. I scored around the edge with the knife and then just snapped the tip off with my fingers.
  • Trim off tops of cupcakes to make a flat “bottom”
  • Melt candy melts in microwave in 30 second increments, stirring in between, until melted and smooth.
  • Dip the flat end of the cone into the chocolate, coating it completely.
  • Dip chocolate into a bowl filled with leaf sprinkles.
  • Set coated cone on parchment paper to harden up.
  • Place remaining chocolate into a small zip-top bag and clip a corner.
  • Pipe a bit of chocolate on the top of each tepee and then stick 3 pretzel sticks into the top.
  • After chocolate has hardened up, serve and enjoy!!!

Teepee cupcakesThe story behind the cupcakes:

These are the result of much experimenting. I saw a picture of tepee cupcakes on Pinterest and was intrigued by this idea, but I couldn’t imagine how you would bake cake batter into a pointed cup…? So I googled the idea and discovered that nobody really has any very good ideas for this…? I wondered if I could maybe cut the top point off 1st, stick the bottom into something like cookie dough and pipe batter in to bake upside down? I tried this with the following result:

Recipe fail!These really made the most beautiful exploding volcano-type effect in the oven. It was very entertaining, although not what I was hoping for!

Many sites recommended poking the cones into disposable tin foil pans, but they all said to watch them closely because they tip…and to be careful of the hot cake batter when righting them. Oh my. Not my sort of recipe. Sounds like one big mess in my oven!

Eventually I tried the foil and springform pan idea and it was not only easy but very sturdy. Nothing tipped even a tiny bit!

My thoughts: YUM! These are just delicious and fairly easy to make once you know how to get those cupcakes baked. My only advice: make sure you cut enough off the top that all three of those pretzels fit into the opening. A few of mine were too tight, and I had to use the chocolate melts to cement them in place. Creepy Earthworm Cupcakes

Edible Jello Earthworm CupcakesThese fun little cupcakes will entertain your family and friends with slimy (raspberry!) earthworms poking out of the top!

Well, it’s October, and that means it is time for creatively creepy edibles!  Last year I had SO much fun with my Broken Glass Cupcakes and my Toxic Slime Cupcakes!  Oh my goodness, I love both of those recipes so much that it was hard to think of anything that fun and creepy for this year!!!

I loved the idea of worm-filled cupcakes and decided that gummy worms are way too cheery, with all their fun bright colors.  I wanted WORMS- big fat earthworms- in my cupcakes.

I’m not sure why these are not readily available for purchase in the candy aisle of my grocery store, but fortunately I found a TON of recipes for make-your-own gummy earthworms online.  I read about 10 recipes (they were all very similar) and gave it a shot.

Edible gummy earthwormlove them!!!!  I had a hard time biting into one to try out the flavor because they were so realistic!  These are really not very hard to make, and I can think of a TON of desserts these would be fun to serve with.  These are even Father’s Day friendly (I realized this when the men who were eating the cupcakes started talking about fishing with earthworms…) or maybe you could “dress up” my apple cupcakes from last week with a few worms! 🙂

Here’s how to make these fun little desserts: (printable recipe)

INGREDIENTS:

  • 1 boxed chocolate cake mix (plus water, oil and eggs to make according to package)
  • 2 sticks (1 cup) of butter (softened)
  • 1 1/2 cups of powdered sugar
  • 2 tablespoons of vanilla
  • Green sugar crystals
  • About 15 Oreo cookies crushed into crumbs
  • brown and green food color gels
  • 1 (6 oz) packet of raspberry jello
  • 4 (1/2 oz) packets of unflavored gelatin
  • 1/2 cup heavy cream
  • 3 cups boiling water

DIRECTIONS:

WORMS: (make the day before)

  • Take about 40-60 bendable plastic straws and pull them out to full length.
  • Place them each in a tall glass with the bendable part down.
  • Put a rubber band around the top to hold them together and upright.
  • Mix jello and unflavored gelatin together in a mixing bowl and add boiling water.
  • Stir until dissolved and refrigerate for about 20 minutes until cooled.
  • Place cream and a little bit of green food coloring in a separate bowl and mix well.
  • Mix cream with gelatin mixture until well combined.
  • Gently pour the mixture over the tops of the straws until they, and the glass are full.
  • Refrigerate overnight.
  • Place a sheet of parchment paper on a cookie sheet, and lightly spray it with cooking spray.
  • Run warm water over the glass until you can pull the entire jello mold out (straws and all!)
  • Gently pull apart straws and use a rolling pin to roll each little worm out.
  • Place each worm on the parchment paper until all of them have been removed from the straws.
  • Keep covered and refrigerated until use.

CUPCAKES:

  • Make cake mix according to box and divide evenly among 24 cupcake liners placed in tins.
  • Bake according to package, and allow them to cool.
  • Make frosting by placing butter, powdered sugar and vanilla in a large mixing bowl and beating it on high for about 3 minutes, until light and fluffy.
  • Color frosting using a combination of green and brown to make a clay-like color for inside the cupcakes
  • Use a cupcake corer or a small knife to cut a core out of each cupcake.
  • Pour green sugar into a small bowl.
  • Use a knife to spread a thin layer of frosting on the top of each cupcake, around the hole cut out by the corer.
  • Turn the cupcake top down into the green sugar, coating the frosting entirely.
  • Spoon or pipe a small amount of frosting into each cored cupcake.
  • Set a worm into the frosting, letting it “stick” and be held in place.
  • Spoon Oreo crumbs over the worm and frosting, filling up the rest of the hole in the cupcake.
  • Keep refrigerated until serving.
  • Enjoy!!

My thoughts:  These crack me up. Everyone loves them, but kids are SO suspicious that you might have used real worms!  One of my friends gave some to her grandkids and the oldest just sat and stared at hers and finally declared, “I saw one move!”  They are disturbingly life-like.  These are great covered in the fridge for a day, but at room temperature the worms start to dry out after a few hours. Fall Apple Cupcakes

Apple CupcakesCelebrate fall with these cute little apple cupcakes! Filled with a chocolate chip “seed” core, these are sure to make everyone smile!

Well. Fall is here. I just began to notice the changing leaves this week, and of course every morning it’s a little bit darker on my drive to work.

Every fall, our family makes a special trip to a local orchard to sample apples, doughnuts and cider. As the temperatures drop I find myself looking forward to pumpkins and rustling leaves and all the fun flavors that come with this new season! These little cupcakes don’t taste like apples, but they sure do look like them!  I even added a fun seeded core to these, using my trusty cake pop maker.

How fun is that? Surprise chocolate chips are always a plus in my book! You can skip the “core” if you want- just make solid-colored cupcakes instead of using my added steps in the recipe. Either way, these are a lot of fun and easy to make!

Here’s the recipe: (printable recipe)

INGREDIENTS:

  • 1 boxed white cake mix (plus oil, water and eggs to make according to package)
  • Food coloring gels in desired colors.
  • 1/2 cup of mini chocolate chips (if making core)
  • 2 sticks (1 cup) salted butter, softened
  • 2 sticks (1 cups) unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons of vanilla
  • Colored sugar sprinkles (in desired colors)
  • Fondant for stems and leaves (or use pretzel sticks for the stems and spearmint gummy leaves instead!)

DIRECTIONS:

  • Make cake mix according to package
  • Remove one cup of batter and place in a separate bowl.
  • Mix in mini chocolate chips.
  • Bake in cakepop maker (or use a small mini-muffin tin), making 24 cake pops (or mini-muffins)
  • Divide remaining batter into separate bowls and color using color gels. I did green, red and yellow apples, but you can do just one of those colors if you want.
  • Place cupcake liners into tins and spoon just a small amount of batter into each liner.
  • Use a cake pop to spread batter evenly into bottom of liner and then leave the cake pop in the center.
  • Spoon remaining batter evenly over the cake pops, covering each pop completely.

  • Bake at 350F degrees for 15-18 minutes.
  • Cool completely.
  • Make frosting by placing butters, powdered sugar and vanilla in a large mixing bowl and beating on high for 3-4 minutes until very light and fluffy.
  • Use a medium cookie scoop to scoop frosting on each cupcake, and then turn cupcake upside down into a bowl of decorating sugar, pressing until all of frosting is covered in sugar.
  • Decorate with fondant leaves and stems, or use pretzels and spearmint leaves.
  • To use fondant, you can buy it already made in white and color it with gel in green and brown, or you can make it from scratch and color it the same way. 
  • Use a leaf fondant cutter to make leaves and just roll and cut the stems.
  • If you are new to fondant, we did a tutorial on it here.  It is MUCH easier than it seems like it would be, and you can make such cute decorations with it!

My thoughts: These are such a happy fall treat! You can go all- out and make little chocolate chip cores, or just make plain cupcakes in various colors.  Either way, they are a yummy, easy, fall treat that look beautiful on a fall-themed table.  Hope you get a chance to try these!  Enjoy!! ~Ruthanne

Pancake and Bacon Cupcakes!!!

Pancake Cupcakes!!!!These sweet maple pancake flavored cupcakes are topped with syrup-coated bacon and real mini-pancakes.  The only question remaining is, will you eat them for breakfast???

My answer to that question is a resounding YES, I will eat them for breakfast, and any other time of the day too!

Did you know that today is National Pancake Lovers Day???  There is no better way I know of to celebrate pancakes than by making these!  [Plus, Monday is National Coffee Day, and believe me these go GREAT with coffee!]

Pancake cupcakes with coffeeThese cupcakes were a complete experiment, and when they came out of the oven and I tentatively tasted one, I smiled. They taste like pancakes- they really do!  Here’s how we made them: (printable recipe)

INGREDIENTS:

Cupcakes:

  • 2 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup sugar
  • ½ cup butter, melted
  • 1/4 cup whipping cream
  • 2 eggs
  • 3 teaspoons vanilla
  • 1/2 cup maple syrup (I didn’t use the real stuff– too expensive!)

Frosting and toppings:

  • 2 sticks (1 cup) of salted butter, softened
  • 2 sticks (1 cup) of unsalted butter, softened
  • 3 cups powdered sugar
  • 2 teaspoons of vanilla
  • 8 pieces of bacon, cooked until very crisp
  • 1/4 cup of maple syrup
  • Pancake batter- enough for about 50 mini pancakes (I used the add water and shake Bisquick bottle, and it took about 2 cups of batter to make these up.

DIRECTIONS:

Cupcakes:

  • Combine all dry ingredients and mix in medium bowl
  • In large bowl, whisk eggs, whipping cream and vanilla together, add melted butter slowly while whisking.
  • Alternately add dry ingredients and syrup to the egg mixture, whisking until thick and smooth.
  • Scoop evenly into 18-20 cupcake liners placed in muffin tins. Don’t overfill!
  • Bake at 350F degrees for 14-18 minutes, until a toothpick inserted into the center comes out clean.
  • Remove cupcakes from tin and allow them to cool completely.

Frosting and toppings:

  • Crumble bacon into small pieces and toss with maple syrup until completely coated.
  • Make mini pancakes on a hot griddle by using a small spoon and making just a tiny circle of batter.  Let these cool on a piece of parchment paper.
  • Make frosting by placing butters, powdered sugar and vanilla in a mixing bowl and beating on high for 3-4 minutes until very light and fluffy.
  • Place frosting into a large zip top bag that has a decorating tip fitted into one corner.
  • Pipe a circle of icing around the edge of the cupcake.
  • Sprinkle with bacon.
  • Place pancakes on top, using a small amount of frosting to stick them together into a stack.  
  • Add a dollop of frosting on top and add sprinkles or a red “cherry” sixlet, like mine.
  • ENJOY!!!!



Pancake Cupcakes!!!My thoughts:  These are really good.  The sweet cupcake with that salty bacon….yum!  I was a little skeptical about the bacon, but it really adds a wonderful flavor to these!  If you are short on time, skip the mini pancakes on top and just frost these and sprinkle them with bacon.  You could even use a bottle of those real bacon bits, but I suspect that the freshly cooked bacon tastes best.  Happy Pancake Day to YOU!!!  Enjoy!! ~r

Cheesehead Cupcakes!

Cheesehead Cupcakes!!!!!These colorful Green Bay Packer CHEESEHEAD cupcakes are the perfect treat for game day!!!  Make them in YOUR team colors and start the season off with some fun!

Today is the day!!!!  NFL football season starts!!!!  Tonight it’s the Packers vs. Seattle (GO PACK GO!!!!!!!), and I had to add some cheese on these fun little cupcakes to make them just perfect!

Wait— what’s inside?  That’s what makes these so much fun!!!!!

Green Bay Packer Cupcakes!A little splash of team color hidden in the middle.  You can make these in any team colors you want- but if you make them for the Chicago Bears or the Detroit Lions you will need this tutorial here to make your cupcake toppers. 🙂

Here is how we made these: (printable recipe)

INGREDIENTS:

  • One boxed white cake mix (plus water, oil and eggs to make according to box)
  • Green and gold food color gels (or your team colors)
  • 2 sticks (1 cup) of salted butter, softened
  • 2 sticks (1 cup) of unsalted butter, softened
  • 3 cups of powdered sugar
  • 1 teaspoon of vanilla (or any flavoring you’d like to add to your frosting)
  • 1 bag of Wilton’s candy melts in yellow (if you want cheesehead toppers!!)  You will also need little triangle chocolate molds for these.

DIRECTIONS:

  • Make cake mix as directed on box, and take about 1/4 of the batter and mix it with yellow food color gel.
  • Using a cake pop maker or a small mini muffin tin, make 24 small, baked balls of cake in yellow. (click here for pictures of how to make these cake balls)
  • Color remaining batter with green food color gel.
  • Preheat oven to 350F degrees.
  • Spoon a little bit of green batter into 24 cupcake liners placed in muffin tins.
  • Place one cake ball in each cavity in the center of the green batter.

Cheesehead Cupcakes!!!

  • Carefully spoon more green batter over the top of each yellow cake ball, filling each cup only 2/3 to 3/4 full (be careful to not over-fill. That is easy to do when you are focused on covering up that cake ball!)
  • Bake at 350F degrees for 15-18 minutes.
  • Allow cupcakes to cool completely.
  • Make frosting by placing butters, powdered sugar and vanilla in a large bowl and beating on high for 3-4 minutes until light and fluffy.
  • Divide frosting in half and color one half gold and the other half green. Place each color in a zip top bag that has been fitted with a decorating tip.
  • Pipe yellow icing on 1st followed by green and top with a bit of cheese!!!!!

Yes, that is a tire pressure gauge…..

  • Melt yellow candy melts in a microwave-safe bowl, in the microwave, in 30-second increments, stirring in between.
  • Put candy melts into a sturdy zip top bag, clip a corner and pipe into triangle candy molds.
  • Tap on counter to remove bubbles, and place in the freezer for 5 minutes, or until completely hardened.
  • Turn mold upside down and tap on counter to remove chocolate.
  • Repeat this process.
  • Allow the triangle chocolates to return to room temperature, and use whatever you find handy to put “holes” in your cheese.  I used a (cleaned in hot soapy water) tire pressure gauge for mine.  Let’s hear it for problem solving in the kitchen!!!!!!

My thoughts:  These are just plain fun.  I recommend using a cake pop maker for the center circles.  It really does take less time and it makes the most adorably round little cake balls.  Plus you can make a Polka-Dot cake with it too!!!  I hope you get a chance to celebrate your team with these fun and colorful cupcakes!!!  IT’S FOOTBALL SEASON!!!!!!

Piña Colada Cupcakes!

Pina Colada Cupcakes!

 These pineapple cupcakes are full of coconut and rum flavored happiness.  A perfect pool party treat!

Aren’t these just the cutest little things?  I love the flavor combination of coconut and pineapple, it is such a refreshing taste!  The light whipped frosting on these, combined with the crunch of toasted coconut makes them such a delicious summer treat!  I even added a cute little edible coconut drink topper that I found on Party Pinchers.  So. much. fun!!!!

Pina Colada Cupcakes!!

INGREDIENTS: (printable recipe here)

  • 1 boxed pineapple cake mix (I used Duncan Hines), plus water, oil and eggs to make according to box directions.
  • 5 cups of shredded, sweetened coconut
  • 3 teaspoons of rum flavoring (divided)
  • 2 teaspoons of coconut flavoring
  • 2 sticks (1 cup) salted butter (softened to room temperature)
  • 2 sticks (1 cup) of unsalted butter (softened to room temperature)
  • 3 cups of powdered sugar
  • Decorations (as desired)

DIRECTIONS:

  • Preheat oven to 325F degrees
  • Spread 5 cups of coconut out on a large baking sheet that has edges.
  • Toast in 5 minute increments, stirring with a big spoon to evenly toast (It usually takes me about 20 minutes)
  • Allow coconut to cool, then place in a large zip-top bag, and crush into smaller pieces.
  • Make cake mix according to directions on box, and after it is made, add one cup of crushed, toasted coconut and mix completely into batter.
  • Add 2 teaspoons of rum flavoring and stir completely into batter.
  • Divide batter evenly into 24 cupcake liners placed into tins.
  • Bake according to package directions and cool completely.
  • To make frosting, place butters, coconut flavoring, remaining rum flavoring, and powdered sugar into a large mixing bowl and beat on high for 3 or 4 minutes until very light and fluffy.  Add one cup of crushed, toasted coconut and stir until well blended.
  • Use a spoon or a cookie scoop to place a rounded scoop of frosting on the top of each cupcake.  
  • Place the rest of the crushed coconut into a small bowl, and turn each cupcake upside down into it, pressing coconut into the top and sides of each scoop of frosting.
  • Decorate as desired. I found these cute little edible “coconut cups” on a site called Party Pinching, and I couldn’t resist making them for my pina colada cupcakes!  You just cut the tops off of a Whoppers malted milk ball, put a dab of melted white chocolate and add little flower sprinkles and a bit of string licorice.  FUN!

My thoughts: I really thought these captured the flavors of coconut and pineapple in a perfect combination.  I loved the little crunchy bits of coconut in the cake and frosting.  These are such a festive cupcake and make a perfect refreshing summer or vacation dessert for all ages!

Root Beer Float Cupcakes!

Root Beer Float Cupcakes!!!!These cupcakes capture all the summer flavors of a root beer float~ all you need is a frosty mug!

People ask me a lot about if I would ever open a bakery, and I always say no.  I can’t imagine making hundreds of the same thing every day.  My favorite part of baking is the process of creating something new.

I thought about this recipe for a long time.  I wanted root beer in the cupcake and root beer in the frosting, but how to create that “scoop of ice cream” flavor without actually using ice cream?  I sometimes cheat in my photos by using scoops of frozen cool whip instead of ice cream.  It melts slower and keeps a scoop shape longer under the heat of my photography lights.  I decided to try Cool Whip as my scoop of ice cream for these cupcakes.

Oh my.  If I could jump up and down and point giant neon arrows toward this cupcake recipe I would.  These are so, sooooooooooo good. You need to make these!!!  They even use a cake mix, so they aren’t horribly complicated.  That Cool Whip…with the root beer buttercream…. perfect.

Root Beer Float Cupcakes!!!Here’s the recipe: (printable version)

INGREDIENTS: (makes 24-26 cupcakes)

  • One boxed white cake mix, plus water, oil and eggs to make according to package.
  • 1 cup of root beer
  • 5 teaspoons of root beer concentrate (divided)
  • 1 stick (1/2 cup) of salted butter (softened)
  • 1 stick (1/2 cup) of unsalted butter (softened)
  • 1 1/2 cups of powdered sugar
  • 2 tubs of Cool Whip (frozen)
  • Sprinkles and straws (optional)

DIRECTIONS:

  • Make white cake mix as directed on box.
  • After beating cake, add root beer and 3 teaspoons of root beer concentrate. Mix well until combined.
  • Place cupcake liners in muffin tins and fill each one only about 1/2 full (these cupcakes rise a bit higher than just a plain mix)
  • Bake according to package directions, remove from oven and cool completely.
  • Make buttercream by adding both butters, powdered sugar and 2 teaspoons of root beer concentrate to a mixing bowl and beating on high for 4-5 minutes until very light and fluffy.
  • Place frosting into a sturdy zip-top bag that has been fitted with a large round decorating tip in one corner.
  • Assemble cupcakes one at a time.
  • Use a medium cookie scoop and place a ball of frozen Cool Whip in the center of a cupcake.
  • Pipe round “bubbles” around it immediately, by squeezing the frosting out into a circle and then pulling straight out.

  • Only have one container of Cool Whip out at a time, and if it starts to get soft, switch it back into the freezer to harden up.
  • Keep these chilled until you serve them.
  • Just before serving, add some sprinkles and a straw for a root beer float feel!

Root Beer Float Cupcakes!!My thoughts:  Such a fun summer dessert.  It is actually very light and not too sweet because a lot of the topping is just Cool Whip.  I was really happy with how this experiment came out and I can’t wait to make them again!  Enjoy!!!!!

Bomb Pop Cupcakes!!!!!! Does anything scream SUMMER, or FOURTH OF JULY like Bomb Pops?  These adorable cupcakes capture the flavors of an iconic summertime popsicle and make a perfect holiday treat!

You know those memories from childhood that spring up unexpectedly and make you smile?  Bomb Pops have that effect on me.  My brother and I always spent a week or two at my grandparents house each summer.  They had an immaculately clean garage with a huge freezer in it.  Grandma would always keep a box of bomb pops inside for our visits.  I remember so clearly, sitting out on her porch eating these in the evenings, letting the drips of sweet popsicle land on the cement by my bare feet.  Every time I eat one, it’s like traveling back in time to those days.

I wanted to capture the flavors of these summer treats in cupcake form, and I love how these turned out!  The kids in my life who tried them exclaimed, “These taste like popsicles!”

 I consider that a success!

Bomb Pop Cupcakes!!!

These were not hard to make at all- simply add jello to white cake mix and pipe the batter into cupcake liners in layers.

Here’s how we made them:  (printable recipe)

INGREDIENTS:

  • One boxed white cake mix (with oil, water and eggs to make according to package)
  • One small box of blue raspberry Jell-O (Jolly Rancher had this flavor, and Jell-O has a Berry Blue that works)
  • One small box of Cherry Jell-O
  • 2 sticks of salted butter (at room temperature)
  • 2 sticks of unsalted butter (at room temperature)
  • 3 cups of powdered sugar
  • 3 teaspoons of lemon extract or flavoring (technically the flavor in the popsicles is lime…but I couldn’t easily get my hands on lime extract.  The lemon was great- but feel free to use lime instead, if you want!)

DIRECTIONS:

  • Preheat oven to 350F degrees
  • Make cake mix as directed on box, and divide batter equally into two bowls.
  • Add 3 Tablespoons of Blue Raspberry Jell-O to one bowl, and 3 Tablespoons of Cherry Jell-O to the other bowl.
  • Mix each bowl of batter until well combined
  • Place each flavor of batter into a large, sturdy (I use freezer-type) zip top bag.
  • Clip a corner off the bag of Blue Raspberry batter and evenly pipe into 24 cupcake liners placed into muffin tins.
  • Clip a corner off the bag of Cherry batter and evenly pipe over the top of the Blue Raspberry batter.
  • Bake cupcakes as directed on boxed mix, remove from oven, and cool.
  • Make frosting by combining butters, powdered sugar and lemon extract in a large bowl.  Beat on low until combined and then high, until light and fluffy.
  • Put frosting into a large, sturdy zip-top bag that has been fitted with a decorating tip, and pipe frosting on the top of each cupcake.
  • Decorate as desired.  I saw these cute little Mike and Ike “popsicle” toppers on a fun site called Party Pinching. They were fun and easy to make, but they use toothpicks and could be dangerous to serve- especially to kids.  I love how cute they are, but I can’t recommend them.  Use cute sprinkles and maybe a popsicle stick instead!

My thoughts: These were really easy to put together and the fruit flavors are so refreshing!  I love the patriotic colors too!

Just as a note: the blue layer of cupcake rises to the top, just a little bit, so don’t panic! You will still have nice layers of the two flavors.

We have lots of fun news here at Easybaked today!  This is just the beginning!  We have partnered with Trifle Recipe Cards to create these fun note cards.  Trifle Recipe Cards is one of the most popular places on the internet to order personalized recipe cards, and we are thrilled to be a featured product on their site!

Hole in One Cupcakes!!

Hole in One Cupcakes!!What do you get if you cut a hole in a cupcake and fill it with a Lindt white chocolate truffle?   A perfect Father’s Day treat!!!

These are guaranteed to make any golf-loving Father smile on his special day!  This one’s for you dad!  I can’t wait to see you in 2 weeks and go “golfing” (aka losing cute golf balls in ponds).

How is such incredible cuteness created, you ask?  EASY!  Make a chocolate cupcake, cut a hole in the top, and pop a Lindt white chocolate truffle inside!

Golf Cupcakes!!How fun and easy is that?  Here are the details (Printable recipe)

INGREDIENTS:

  • One boxed chocolate cake mix (plus oil, water and eggs to make according to package)
  • One tub of white frosting
  • One container (about 1 cup) of green sugar sprinkles
  • 24 Lindt White chocolate Truffles (I got 2 (5.1oz) bags that each had 12 truffles)

DIRECTIONS:

  • Make cake according to package and divide evenly into 24 cupcake liners placed in muffin tins.
  • Bake according to package.
  • Use a cupcake corer or a small knife (use a corer to get that perfectly round cut!) to cut a hole in the center of each cupcake.
  • Use a knife to carefully frost the top of each cupcake around the hole.
  • Press top of frosted cupcake into green sugar to coat it.
  • Place a truffle into “hole”.

  • Place a flag in each cupcake- you can print these on heavy paper and use double-sided tape to secure them to toothpicks.  Here are 2 files- Happy Father’s Day, and Blank (write your own message) flags.

My thoughts: I’ve used a cupcake corer on so many cupcakes to add fillings, and the last time I did it, this idea popped into my head!  I wasn’t sure how it would turn out, but as soon as I coated my 1st cupcake in that green sugar I knew it would be perfect!  Happy Father’s Day to all the dads out there- especially mine!!!!
