Hamburger Cookies!

Hamburger Cookie!These cute little burgers are a fun April Fools treat.  They look like a little burger, but they taste like a yummy peppermint cookie!

I’ve been making these since I was a little girl.  They are so easy to put together and so fun to share with people!  Both kids and adults will smile when they see these on the table or tucked into a lunch box!

Hamburger Cookies!!Want to know how to make these cute little treats?  Here’s the recipe: (printable version)

INGREDIENTS:

  • 1 box of Nilla Wafers
  • 1 bag of York Peppermint Patties
  • 1/3 cup each of red, green and yellow Wilton’s candy melts.

DIRECTIONS:

  • Preheat the oven to 350F degrees
  • Unwrap all of your peppermint patties. (Usually there are 24-26 of them per bag)
  • Count out twice that many Nilla Wafers (choose the pretty and unbroken ones!)
  • Place half of the Nilla Wafers, flat side up, on a cookie sheet.
  • Set one peppermint patty on each Nilla wafer.
  • Carefully place the cookie sheet in the oven for 1 to 2 minutes, just long enough to melt the chocolate coating on the peppermint patty. (This will melt the bottom of the peppermint to the Nilla wafer).
  • In 3 small bowls, melt the Candy Melts in the microwave in 30 second increments, stirring between until completely melted and smooth.
  • Place each of the 3 melted colors in separate zip-top bags.
  • Clip one corner and drizzle one color across tops of each peppermint.  Repeat this with other two colors.

  • Gently press a Nilla wafer, flat side down, on top of the drizzled candy melts. Press to gently squeeze the “ketchup, lettuce and cheese” colors out at the edge of the cookie “bun”.
  • Allow cookies to harden completely.

I like to serve them with those little mini potato sticks.  I wanted to take some pictures with some, but I couldn’t find any at the grocery store here.  Trust me, the salty and sweet is a yummy combination.

Caramel Oreo Brownie Bars

Caramel Oreo Brownie BarRich and gooey, these brownies are filled with soft caramel and Oreo cookies.  Does dessert get any better than this?!?

Wow…this was an experiment, and I’m almost speechless about how good these are.  It is hard to describe the yumminess…You need to try these.  I need to make these again, because they are already gone.

Caramel Oreo Brownie Bars!I’ve shared this recipe before on Easybaked, a very long time ago.  It is a wonderful recipe I called caramel chip bars.  This was one of my very first recipes on this blog, and if you click on the link you can see the recipe AND my awful beginning photography!!!  Lol.

These are very versatile brownie bars.  I make them all the time with a variety of cake mix flavors and chips.  It is a perfect way to use up half-empty bags of chips.

Caramel Oreo Brownie Bars!!!This time….I added Oreos, and the result was too incredibly yummy to not share with you all.  So here you go: (printable recipe)

INGREDIENTS:

  • 1 box of chocolate cake mix
  • 1/3c. oil
  • 2 eggs
  • 1 bag of semi sweet chocolate chips
  • 1 bag of white chocolate chips
  • 1 box of Double Stuf Oreos
  • 1/2 cup of butter
  • 32 unwrapped Kraft caramels
  • 1 (14oz.) can of sweetened condensed milk

DIRECTIONS:

  • Preheat oven to 350 degrees.  
  • Line a 9×13″ cake pan with foil.  
  • Combine cake mix, oil and eggs.  
  • Blend well and stir in all of the chips (mixture will be very thick).  
  • Press a little less than half of the mixture into bottom of pan (it will press into a very thin layer and you might be able to see the bottom of the pan, but when it bakes it will fill in).  
  • Bake for 10 minutes.
  • While this is baking, in a medium saucepan, combine butter, caramels and condensed milk.  
  • Cook over low/medium heat until melted and smooth (stir constantly!)
  • When cake has baked for 10 minutes, remove from oven and place 24 Oreo cookies over the top of the partially baked cake.

  • Spread caramel over Oreos.  
  • Top with remaining cake/chip mixture.
  • There is a technique to this- you cant just spoon the batter on top or it will just mix in with the melted caramel.  Instead, take a small ball of dough/chips and press it very flat between your hands. Lay this on top of the caramel and repeat the process, like a patchwork quilt, until the entire top is covered.  It is ok to have a few gaps.

  • Bake an additional 25 to 30 minutes.  
  • Remove from oven and cool 20 minutes.  
  • Gently lift from pan and peel foil from edges.  
  • Cool completely before cutting. Makes about 24 bars.

Rainbow Oreo Pops~ and a celebration of all things OREO!!!

Rainbow Oreo Pops!!!!You’ll feel like you’ve struck gold when you bite into one of these fun rainbow Oreos.  A perfect way to celebrate St. Patrick’s day and SO easy to make!

Prepare yourself.

National Oreo Day is just two days away.  This year, the momentous occasion falls on Thursday, March 6th.  There isn’t a store-bought cookie that I like better than an Oreo. All the fun flavors (cookie dough, peanut butter, birthday cake, mint, marshmallow…) are great- but I like mine just plain double stuf (I just realized they left an “f” off of stuf last week!)  I’m not alone in my passion for this little cookie- over 362 billion cookies have been sold since it was first introduce in 1912!

This week I created these little rainbow Oreo pops in honor of the day (and to give you a head start on your St. Patrick’s Day ideas!)

Rainbow Oreo Pops!!!!They are incredibly easy to make.  Once your Oreo has been dipped, those rainbow stripes are just painted on with gel food coloring.

INGREDIENTS:

  • One package of Double Stuf Oreos
  • 2 (12oz.) bags of Wilton White Candy Melts
  • 24 Lollipop sticks
  • Food color gels in purple, blue, green, yellow, orange and red -I used these

DIRECTIONS:

  • Carefully twist apart all of the Oreo cookies
  • Using one of the pop sticks, make an indentation in the white filling of each cookie.
  • Melt the Candy Melts in the microwave in 30 second increments, stirring until completely melted and smooth.
  • Dip the end of one stick into the melted white chocolate, drizzle a little in the center of the white cookie filling and then gently press it into the indentation made.
  • Place the top of the cookie back on and allow white chocolate to harden (10 minutes or so), cementing the cookie back together with a stick inside.
  • Holding the stick, lower the entire Oreo into the bowl of melted white chocolate, spooning it over the top and sides to cover it completely.
  • Allow the excess white chocolate to drain off and gently place covered Oreo on a piece of parchment paper to harden.
  • Allow white chocolate to harden and cool completely.
  • Using a small paint brush (you can get one specifically made for food that won’t shed bristles- like a Wilton 7-Piece Decorating Brush Set), start in the middle of the cookie using the yellow, and paint a stripe across. Paint a yellow stripe on all cookies.
  • Wash and dry your brush and paint the other colors, working from lightest colors to darkest.
  • Allow the “paint” to dry for several hours.
  • Eat and enjoy!!!

Rainbow Oreo Pops!!!

My thoughts: You can see that I sprinkled a little bit of edible glitter on top when I was done.  You have to do this before the paint completely dries.  It makes them very fun and sparkly- more fun and sparkly than you can see in the pictures!  Just an option, if you want to add it.  You can also see that I didn’t agonize over painting perfect lines and not going over the edges.  I really liked the messy paintbrush look of these. Put on your artist hat and have some fun!!!

Frog Prince Oreos

Frog Oreos!!

These adorable edible frogs are made with Oreo cookies and pretzels- cute and soooo yummy!

“You have to kiss a lot of frogs before you meet your prince…..!”

Someone posted a picture of frogs made with Oreos on Facebook last week and I came across it just after spending time on the phone with a friend who’s just been “dumped” by her boyfriend.  When I saw the picture I immediately thought of all the “frogs” I’ve dated and knew I had to make us some frogs for Valentine’s Day!

I’ve only occasionally been in love on Valentine’s Day, and usually I watch horror movies with my other single friends to celebrate the day. Can you relate?  If so, these frogs are for you!!

Frog Oreos!

I am 2 1/2 hours from a Hobby Lobby.  It is (as far as I know) the only place I can get candy melts and other fun decorative things for food blogging.  When I packed up my car to move here for 8 months I remember packing the candy eyes.  I can see myself thinking, “Well, I’m sure the Navajo will not have a store that sells candy eyes…I better bring those!”

I didn’t bring them.  Or I lost them….?

So today I found myself standing in the kitchen with every ingredient I needed for these…except eyes.

I melted white and black candy melts and piped little eyes.  Don’t do that.  Go and buy the Candy Eyes.  They are super cheap and really cute.  My eyes are a little crazy looking….but then again, they remind me a little of some guys I’ve dated, so I guess it all worked out in the long run for me.

Frog Oreos!!

Ready for this recipe?  Here you go! (Printable Recipe)

INGREDIENTS:

  • One package of Oreo cookies
  • One bag of small pretzels
  • Two bags of Wilton candy melts in green
  •  Candy Eyes
  • Mini M&Ms (you’ll only need the red, so you can eat the rest!!)
  • Green jimmies (for the warts!)
  • Candy hearts (I piped mine with red candy melts, but I’d have used candy hearts if I’d had them!)

DIRECTIONS:

  • Melt the green candy melts in a microwave safe bowl in 30 second increments, stirring in between until completely melted and smooth.
  • Spread a sheet of parchment paper over the counter you will be working on.
  • Dip Oreos, one at a time, in the green candy melts, spooning the candy over the top and sides and then lifting with a fork and tapping excess away.  
  • Gently slide the covered Oreo against the edge of the bowl to remove excess candy melt from the bottom, and then slide off fork on to parchment paper.
  • Place two eyes on the top, an M&M in the front for a tongue, sprinkle with jimmies and place a heart candy on top.
  • Allow Oreos to completely harden.
  • Reheat candy melts if needed (they might harden up while the Oreos cool).
  • Dip pretzels into candy melts, using the same technique as the Oreos.  
  • Place two pretzels bottom to bottom on a clean sheet of parchment paper and while they are still melted, set a decorated Oreo on top and allow this to harden together.

My thoughts:  If you’ve never dipped things in chocolate or candy melts before, it will take you a little while to get the technique down.  The biggest tip I have is to tap off as much as you can before you set it on the parchment paper.  If you leave too much of the candy melts on the Oreo or pretzel it will drain off into a big puddle around it when you set it on the parchment paper.  It is also nice to have a clean set of tweezers handy to place the eyes and M&M with.  I had so much fun decorating mine…I think they got more cross-eyed and dumb looking the longer I thought about some of the guys my friends and I have dated.  I actually laughed out loud a few times.  I’m easily entertained!! 🙂

Ladybug Cake!!
It’s my Birthday today!  Yay!  Birthdays were always a huge celebration as I was growing up.  My mom had a big yellow box of recipe cards from Betty Crocker that had tons of fun ideas.  One of the categories was “Children’s Parties” and it was full of card-after-card of fun cakes.

Every year, mom would tell my brother and I that we could pick ANY cake out and she would make it for our birthday party (this, I believe, is where my great love of beautiful desserts began!)  I had all sorts of cakes- a Panda bear, an Igloo….and one year, a giant ladybug.  I loved it!

So, this year we are taking a trip down memory lane, back to the mid-70’s, for this retro recipe that made me smile then and now.

Betty Crocker 70's recipe card- Lady Bug Cake!

The Original Betty Crocker Recipe Card

INGREDIENTS: (original Betty Crocker recipe can be found here)

  • 1 box of cake mix, any flavor, plus water, oil and eggs to make according to package.
  • 2 sticks (1 cup) of salted butter
  • 2 sticks (1 cup) of unsalted butter
  • 3 cups of powdered sugar
  • 2 teaspoons of clear vanilla flavoring
  • Red food coloring gel
  • York Peppermint Patties
  • Wilton candy melts in red and dark chocolate (just a few!)
  • Mini M&MS

DIRECTIONS:

  • Preheat oven to 350F degrees
  • Generously grease and flour a 2 quart oven-proof bowl.
  • Make cake mix according to package, and pour into prepared bowl.
  • Bake at 350F degrees for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow cake to cool for a few minutes and then run a knife around edges and tip upside down on a cake rack to cool completely.
  • Make icing by combining butters, powdered sugar and vanilla and beating on high until light and fluffy, about 2-3 minutes.
  • Place cake on serving plate and spread a smooth layer of frosting over entire dome of cake.
  • Refrigerate about 10-15 minutes to harden 1st layer of frosting.
  • Use red food coloring gel to color about 2/3 of remaining frosting.
  • Frost over 1st layer with white over the front 1/3 of cake and red over the back 1/3.
  • Decorate with peppermint patties, icing and M&Ms.  You can use licorice for the antennae, nose and mouth, but I just piped colored candy melts into the shapes I wanted.
  • Enjoy!!

My thoughts:You really can use any items you want to decorate this cake.  You can see that Betty Crocker used gummy candies and black string licorice.  Making this cake brought back great memories of being a kid.  Many thanks to my wonderful mom for making childhood so much fun!

Peanut Brittle

Peanut Brittle!!
This thick and crunchy peanut brittle just melts in your mouth, and it’s one of our family’s favorite Christmas treats!

This is the best peanut brittle I’ve ever had.  My wonderful Aunt Beth has brought it to our family Christmas celebrations since I was just a tiny girl.  I remember being SO full after dinner and no matter how full I got,  I always had to have a piece of Aunt Beth’s peanut brittle.  I have vivid memories of opening presents one-handed because I had peanut brittle in the other hand.  It is THAT GOOD.

I think what makes it perfect is that it isn’t really hard to bite into or a “teeth-stuck-together” kind of candy.  It just kind of melts in your mouth…and oh my….

I’d never made it, because there has always been this aura of “impossibly difficult recipe” surrounding it.  First of all, you need a candy thermometer and I think that discourages many a would-be peanut brittle maker.  Second, it takes some stirring time over a hot stove.  This isn’t a quick recipe- but it is so sooooooo worth it!

Aunt Beth issued two warnings to me when I embarked on the mission to try her recipe:

1.  Once you add the peanuts you have to stir constantly or the brittle will burn.

2. Be incredibly careful handling the pans and especially the candy, as it is SO hot and sticky and you could easily burn yourself.  Use caution stirring and pouring.

RuthanneIt wasn’t nearly as scary as I thought it would be.  It was actually really fun, and it turned out GREAT!

Ready for the recipe?  Here you go:  (printable recipe)

INGREDIENTS:

  • 1 cup water
  • 1 cup Light Karo Corn Syrup
  • 2 cups granulated sugar
  • 1 lb. raw peanuts (be sure to use raw- I found mine in the produce section of my grocery)
  • 1/4 teaspoon salt
  • 2 Tablespoons butter (plus enough to coat a large jelly roll pan)
  • 2 heaping teaspoons baking soda

DIRECTIONS:

  • Liberally butter a large jellyroll pan (this is just a cookie sheet with sides- the bigger, the better!) and set it on a towel or potholders (it will get very hot when you pour the brittle in).
  • In a large saucepan (I used a dutch oven pan) place water, Karo syrup and sugar.
  • Place a candy thermometer in the pan (I clipped mine to the side)
  • Heat on high and boil until soft ball stage (238F degrees), stirring occasionally.
  • While this is boiling, measure out the remaining ingredients and have them ready to add.
  • At 238F degrees, add the peanuts, salt and butter and carefully STIR continually until mixture reaches brittle stage (310F degrees).  This took me about 15-20 minutes.

  • Add baking soda and stir until it disappears.  The mixture will foam up and double in size (that’s why you need a big pan!). Give it  few seconds to get nice and foamy.
  • CAREFULLY, using oven mitts, pour mixture onto your buttered jelly roll pan.  Do not spread it out, just let it spread it out on its own.  Allow brittle to cool for several hours (don’t rush this part– it is worth the wait!)

  • Once it is completely cool, break it up into chunks and enjoy!!!!!!

My thoughts: This isn’t a difficult recipe- it is just hot and time consuming.  Now that I’ve made it, I will make it again though- it is SO worth the effort!  I know there are much simpler recipes (even ones in the microwave!) for peanut brittle, and I’m all about simple.  But this is an exception to the rule of keeping things simple.  I really think you will love it!  Thanks so much for sharing your wonderful recipe Aunt Beth!  Love you!  ~R

Creepy Broken Glass Cupcakes!

Broken glass Cupcakes!!!
These delicious Red Velvet cupcakes with smooth cream cheese icing are topped with all the makings of a horror movie (or, according to my friend Ricky, a Stephen King novel!).  These are just in time for your creepy October festivities!!

[and if you aren’t a fan of the decorations, they are an amazing cupcake all by themselves!]

Ok.  These were really fun to make.  I’d seen SO many examples of these online– this is not an original idea.  However, I made it my goal to create these in the easiest possible way, with the fewest steps and NO candy thermometers!  Not original, but EASY!!!

Note:  I did a cake mix fix by swapping out the water and oil for milk and butter and adding one extra egg.  It was SO good!  (Thanks for the idea Rex!) Heavy and moist cupcakes with exceptional flavor.  I highly recommend it, but you can certainly make the mix as directed for these cupcakes.

Here’s how they are made: (printable recipe)

INGREDIENTS:

The cupcakes:

  • One boxed Red Velvet cake mix
  • Milk (in the same amount as the water required by the mix)
  • Eggs (in the same amount as required by the mix PLUS one extra egg)
  • Butter (twice the amount of oil required by mix- for example if the box calls for 1/2 cup of oil you would use 1 cup of butter).  Measure and then melt before adding to mix.

The icing:

  • 1 package (8 oz) cream cheese (softened)
  • 1/2 cup of butter (softened)
  • 1 teaspoon vanilla
  • dash of salt
  • 4 cups powdered sugar
  • 1 cup white chocolate chips (melted)

The glass candy:

  • 1 cup of granulated sugar
  • 1/2 cup of light corn syrup
  • 1 teaspoon of clear flavoring (I used raspberry)

The edible blood:

  • 1 (14 oz.) can of sweetened condensed milk
  • Red gel food coloring
  • Black gel food coloring
  • 1 teaspoon of clear flavoring (I used raspberry)

DIRECTIONS:

I recommend making the decorations 1st (the glass and “blood”) and keeping them until just before your party to decorate with.  They will both keep for several days, so you can make them ahead of time.

Candy Glass:

  • Cover a cookie sheet with wax paper and spray the wax paper liberally with non-stick spray.
  • Place granulated sugar and corn syrup into a microwave safe bowl and mix them together.
  • Cover bowl with plastic wrap.
  • Microwave on high for 3 minutes.
  • Remove from Microwave and CAREFULLY remove plastic  wrap (beware of hot steam!)
  • Stir well and re-cover with fresh plastic wrap.
  • Microwave on high for another 3 minutes, but watch mixture after about 2 minutes. Because microwaves vary, you need to watch it to make sure it doesn’t start to turn color.  If you cook it too long it will be an amber color instead of the nice clear glass you want.  My microwave was perfect at 2 and 1/2 minutes.
  • CAREFULLY remove from microwave and CAREFULLY remove plastic wrap.
  • This is soooo hot and sticky– using caution to not touch any of the hot candy, pour it out over the greased wax paper and allow it to sit and harden completely (at least a couple of hours)

Candy Glass How-To Pics

  • When candy glass is hard, tap a knife tip into glass to break it into sharp pieces.  
  • Carefully (the pieces are actually sharp!) push pieces up off of wax paper and onto a plate.
  • Candy glass can be kept in a zip top bag or an air tight container for about a week. Moisture (including the moisture from the frosting on the cupcakes) will eventually start to break the glass down.

Edible Blood:

  • Place sweetened condensed milk into a small bowl and mix in red food color gel and flavoring until you get a brilliant red color.  Add a TINY bit of black (use a toothpick- black goes a long way!).
  • Mix and adjust until you get a nice dark red color.
  • Spoon “blood” into a zip-top bag and seal TIGHTLY.  Keep refrigerated until use.

Edible Blood!Cupcakes:

  • Make cake mix according to box (swapping in cake mix “fix” ingredients if desired)
  • Divide equally into 24 cupcake liners in cupcake tins.
  • Bake at 350F degrees according to times on box.
  • Remove cupcakes from oven and cool completely.

Frosting:

  • On medium speed, beat together cream cheese, butter, vanilla, and salt until creamy.
  • Gradually add powdered sugar, beating until smooth.
  • Melt white chocolate chips in the microwave in 30 second increments, stirring between, until smooth.
  • Add melted white chocolate to icing and beat on low until completely combined.
  • Place in a zip-top bag fitted with a decorating tip and pipe frosting on top of cooled cupcakes.

Decorating:

  • Put parchment paper on a counter to protect it from all that red food coloring. 
  • [or- use a large platter or tray that you will serve the cupcakes on- blood splatter and all!]
  • Place frosted cupcakes on protected surface and press 2 to3 pieces of glass into the top of each.
  • Clip the corner on the bag of edible blood and drizzle over the top of the glass and the cupcakes, allowing it to drip down the sides of both.
  • Serve the same day after decorating.
  • Use care transporting and serve with plates and forks, or you will all have red fingers!!

My thoughts: These are such yummy cupcakes all by themselves.  But the decorating was SO much fun!  My friend Amber helped and we both were a little in awe of how realistic they looked…and how yummy they tasted!  I wasn’t sure how the sweetened condensed milk would taste on the cupcakes, but I added a little raspberry flavor and oh my…so good!

Setting up for photos was fun too…splattering fake blood everywhere and letting it drip off my cupcake stand was interesting…not my typical cupcake photo shoot!

Candy Corn Peanut Bars!!
A chewy cookie crust topped with peanuts and sweet candy corn.  So many fun fall flavors in one  little bar cookie!

I confess.  I hate candy corn.  Everyone I know loved these cookie bars, but I had to make a little section of no-candy-corn just for me.  This recipe is easily made with or without the candy corn.  The candy makes it pretty though…and that counts for a lot!

INGREDIENTS: (makes about 24 bar cookies)

Crust:

  • 1 boxed yellow cake mix
  • 1/3 cup butter (melted)
  • 1 egg

Topping:

  • 3 cups mini marshmallows
  • 1 (10 oz) package of peanut butter chips
  • 2/3 cup light corn syrup
  • 2 teaspoons vanilla
  • 1/4 c. butter
  • 2 cups Rice Krispies
  • 2 cups salted, roasted peanuts
  • One bag of candy corn

DIRECTIONS:

  • Preheat oven to 350F degrees
  • In a mixing bowl, combine cake mix, 1/3 cup of melted butter and one egg.  Mix well, kneading with clean hands at the end.
  • Carefully press crust into the bottom of a greased 9×13 pan. (I line mine with parchment paper)
  • Bake at 350F degrees for 12-14 minutes.
  • Carefully pour mini marshmallows over top of hot crust and place in oven for about 5 minutes (until marshmallows puff up)
  • Cool.
  • In a large saucepan, heat peanut butter chips, corn syrup, vanilla and 1/4 cup of butter until all chips are melted and smooth.
  • Add Rice Krispies and peanuts and combine well.
  • Working quickly, spoon topping over marshmallows and then press candy corn on top.
  • Chill before cutting and ENJOY!

Lady Bug Oreo Pops!!

Ladybug Oreo Pops!
What could be better than a cute ladybug cookie on a stick?  Biting in and finding an OREO!!!!!

These cookies are such a fun treat!  Perfect as favors and prizes at parties- they just make you smile.

We’ve done lots of Oreo Pops here at Easybaked.  The technique is the same for these as for our Original Oreo pops.  To see the how-to photos and technique, click here.

Here’s what you will need for about 24 Oreo Pops.

INGREDIENTS:

  • One box of Double Stuff Oreos
  • One 12 oz. bag of Wiltons candy melts in yellow
  • One 12 oz. bag of Wiltons candy melts in red
  • One 12 oz. bag of Wiltons candy melts in dark chocolate.
  • One bag of mini M&Ms.
  • 24 lollipop sticks
  • Candy Eyes (if desired)

Oreo Pops!

DIRECTIONS:

  • Carefully twist apart all of the Oreo cookies.
  • Using one of the pop sticks, make an indentation in the white filling of each cookie.
  • Melt the red Candy Melts in the microwave in 30 second increments, stirring until completely melted and smooth.
  • Dip the end of one stick into the melted candy melts, drizzle a little in the center of the white cookie filling and then gently press it into the indentation made.
  • Place the top of the cookie back on and allow white chocolate to harden (5 minutes or so), cementing the cookie back together with a stick inside.
  • Holding the stick, lower the entire Oreo into the bowl of melted red chocolate, spooning it over the top and sides to cover it completely.
  • Allow the excess chocolate to drain off and gently place covered Oreo on a piece of parchment paper to harden.  
  • Add two brown mini M&Ms to each half of the pop (use the photos as a guide– leave room for the top to be dipped in chocolate and for a line to be drawn down the middle.)
  • Dip half of the pops in the red chocolate and then melt the yellow chocolate and repeat the process with the 2nd half of the pops.
  • When candy melts have completely hardened, melt a the dark chocolate melts.  
  • Use a spoon to gently scoop chocolate over the top tip of the cookie, making a head on your ladybug.
  • Set each pop on parchment paper and add candy eyes (if desired) before chocolate hardens.  
  • After dipping the tops of all pops, and placing eyes, spoon remaining chocolate into a small ziptop bag and clip a corner.
  • Pipe a line from the head of the ladybug across the top toward the stick.  (use photos as a guide).
  • Allow pops to harden completely.
  • Enjoy!!!

My thoughts:  I’m addicted to Oreos.  I keep making Oreos into pops because it gives me an excuse to eat the extra Oreos that break.  

True confession.  

The other reason: they make people smile.  It never fails, you hand one of these crazy fun pops to anyone and they smile.  Even if they can’t or won’t eat dessert….they smile.  These pops are like puppies.  They make people happy!  Every few months I feel an overwhelming urge to make a different variety to share with you….so I hope that you enjoy them– and that you smile 🙂  ~r

S’mores Cookie Cups

S'more Cookie Cups!!

These mini graham cracker cookie cups are overflowing with soft marshmallow and chocolate~ a perfect replica of the summertime favorite~ in cookie form!!

These little cookie cups were eaten up faster than any dessert I can remember.  You simply can’t stop at one!  I guess that’s because they are made with all the ingredients used in S’mores!  The marshmallow stays soft, and the  soft chocolate layer on the inside….?  Oh my.

Here’s how to make them: (printable recipe)

INGREDIENTS: (makes 48 mini cups)

  • One tube of refrigerated sugar cookie dough
  • 1 cup of finely crushed graham crackers
  • 1/4 cup of heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • 1  (13oz) jar of Jet-Puffed Marshmallow fluff
  • 48 Hershey Kisses (unwrapped!)

DIRECTIONS:

  • Preheat oven to 350F degrees.
  • Place cookie dough and crushed grahams (save 2 to 3 tablespoons of crumbs to sprinkle over cups at end) in a mixing bowl and using hands, combine crushed grahams with cookie dough until completely incorporated.
  • Evenly divide dough into mini muffin tins (I used a medium cookie scoop to do this and got about 48 cookies)
  • Bake at 350F degrees for 7 to 9 minutes, until turning a light brown at edges.
  • Remove from oven and immediately press centers in using a mini tart shaper (or a wooden spoon~ although I highly recommend the tart shaper as it is a small and inexpensive tool that I love and use all the time!)
  • Allow cups to cool for 2-3 minutes and then gently run a small knife around the edges and pop the cup out of the tin.  Allow cup to completely cool on counter.
  • Place all cups on a cookie sheet (preferably one with raised edges)
  • In a small sauce pan, heat up heavy cream until just bubbling at the edges (20 seconds or so).
  • Add chocolate chips, cover and allow them to sit for 5 minutes.
  • Stir melted chips with cream until smooth (turn heat back on if needed)
  • Place chocolate sauce in a zip-top bag, clip a corner and pipe chocolate evenly into each cup.

  • Fill a mug or small bowl with HOT water, and place a medium cookie scoop into it.  Shake off excess water and scoop one scoop of marshmallow fluff into each cookie cup.  Place scoop back in hot water as soon as the fluff starts to stick to the scoop.

  • Turn broiler on high and place entire cookiesheet full of cookies in the oven under the broiler.  WATCH the cookies– in about 30 seconds the marshmallows will start to brown.  Take the cookie cups out and immediately place a Hershey kiss on the top of each hot marshmallow top.  Sprinkle with graham crumbs (and drizzle with a little white chocolate if you like).
  • Let these sit for about an hour.  The bottom of the kiss will melt and attach to the marshmallow.
  • You can serve these warm, or at room temp.
  • Once they are cooled, you can store them in an airtight container for about a week.

S'mores cookie cups!

My thoughts~ These cookie cups were a big hit.  They really capture the flavor of a s’more and they aren’t very difficult to make.  The marshmallow fluff was a little fussy, just because it is so sticky.  I highly recommend it though- it was perfect biting into the gooey soft cream rather than an actual marshmallow.  It captured that melted marshmallow feel.  I *highly* recommend you use a cookie scoop for these.  You can get a scoop almost anywhere these days, but if you can’t find one, try ordering one at Amazon.  I hope you really enjoy making (and eating!) these yummy little treats!!! ~r
